PRINCESS COOKIES

This recipe gets its name from a story that I read to my son about a princess whose only wish is to find a prince that can make a cookie that is as tiny and delicate as she is. This is a delicious little lemon cookie that will not disappoint! They can either be drizzled with a lemon glaze made of confectioners sugar and fresh lemon juice, or rolled in sugar before baking for a more subtle lemon flavor.

3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
1 ½ cups white sugar
2 eggs
¼ cup lemon juice
1 lemon, zested
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk together the flour, baking soda, and salt in a bowl until thoroughly combined. In a mixing bowl, beat the butter and sugar with an electric mixer until creamy, about 5 minutes, then beat in eggs, one at a time, incorporating each before adding the next. Beat in the lemon juice, lemon zest, and vanilla extract. Gently mix in the flour mixture until just incorporated. Chill the dough about 30 minutes.
  • Scoop up about 1 1/2 teaspoon of dough per cookie, gently form into a ball, and place the balls onto baking sheets about 2 inches apart.
  • Bake in the preheated oven until the cookies are set and just beginning to brown at the edges, about 8 minutes; cool on baking sheets for 1 minute before removing to finish cooling on racks.

1/2 cup soft flour
1/2 cup sugar
1 small egg
7 tablespoons butter

Steps:

  • Soften the butter at room temperature and crush it in a bowl with a wooden spoon. Add sugar and stir more.
  • Add the egg and mix.
  • Sieve the flour into the mix and stir. It is ready when the white flour chunks are gone.
  • Wrap the mix in saran wrap and put it in the refrigerator for over 30 to 35 minutes.
  • Pour some flour on a cutting board and put the mix from step 4 onto it and flatten the mix with a rolling pin.
  • Cut out pieces using cookie cutters.
  • Lay out on cookie sheet covered with wax paper and bake in the oven at 350 degrees Fahrenheit for 12 to 13 minutes. After it is baked, let the cookies cool.

COOKIE DOUGH
1 batch of your favorite gingerbread or sugar cookie dough
1 batch royal icing

food coloring: brown, black
optional food colorings: pink, lavendar, green

Steps:

  • 1. Preheat oven according to your cookie recipe directions. Line baking sheets with parchment paper.
  • 2. Make your cookie dough. Cut our doors with bottom and both sides cut straight... and the top of the door rounded. Cut them about 2 x 3 inches. Make uneven sides and a crooked top that comes to a point. Make a castle, with a fun looking door. Make different shaped doors. Place doors on baking sheet. And bake as directed in your recipe. Remove from oven and let cool completely.
  • 3. Make your icing. Make light brown frosting, black frosting. (you need a lot of the light brown... very little black) (or just buy chocolate frosting and add black food coloring to a little of it) *** You can make up as many colors as you like and get as fancy as you like.
  • 4. Spread the brown frosting to cover the cookie front, Using a knife Make verticle lines on the frosting to create "panels of wood" on the doors. Using the black frosting, make the door enhancements like door handles, hinges and door knockers.
  • 5. These are perfect to serve at a little girl's birthday party with a fairy theme or princess theme.
  • 6. *** With the optional colors, you can make more enhancements to the doors, like tiny flowers and green leaves and vines.

1/2 cup (1 stick) butter, room temperature
1/2 cup vegetable oil
1/2 cup sugar
1/2 cup powdered sugar
1 egg
1 teaspoon vanilla extract
2 1/4 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/4 cup raisins
36 mini marshmellows

Steps:

  • Using electric mixer, beat butter, oil, 1/2 cup sugar and 1/2 cup powdered sugar in large bowl until well blended. Mix in egg and vanilla. Sift flour, baking soda, cream of tartar and salt over and mix in. Gently fold in raisins. Cover mixture and chill until firm, about 30 minutes or up to 1 day. Preheat oven to 350°F. Butter 2 heavy large baking sheets. Take one mini marshmellow, and roll 1 tablespoon dough into ball around the marshmellow. Place on prepared sheet. Repeat with remaining marshmellows and dough, spacing balls evenly on sheets. Bake cookies until light brown, about 15 minutes. Transfer cookies to racks and cool completely.
