3 packages (3 ounces each) soft ladyfingers, split
FILLING:
1 package (8 ounces) fat-free cream cheese
3 ounces cream cheese, softened
1/3 cup sugar
2 teaspoons vanilla extract
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
TOPPING:
1/3 cup sugar
3 tablespoons cornstarch
1 can (20 ounces) unsweetened crushed pineapple, undrained

Steps:

  • Line bottom and sides of an ungreased 9-in. springform pan with ladyfinger halves; reserve remaining ladyfingers for layering., Beat cream cheeses, sugar and vanilla until smooth; fold in whipped topping. Spread half of the mixture over bottom ladyfingers. Layer with remaining ladyfingers, overlapping as needed. Spread with remaining filling. Refrigerate, covered, while preparing topping., In a small saucepan, mix sugar and cornstarch; stir in pineapple. Bring to a boil over medium heat, stirring constantly; cook and stir until thickened, 1-2 minutes. Cool completely., Spread topping gently over torte. Refrigerate, covered, until set, at least 4 hours. Remove rim from pan.

1 c sugar
1 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 beaten egg
1 # 2 can crushed pineapple
1/3 c brown sugar for topping

Steps:

  • 1. Sift together all dry ingredients.
  • 2. Add 1 beaten egg.
  • 3. Add #2 can crushed pineapple (alternative is fruit cocktail. Include the juice of the crushed pineapple.
  • 4. Pour on 8x8 greased pan. Sprinkle with 1/3 cup brown sugar.
  • 5. Bake 350 degrees Fahrenheit for 40 minutes.
  • 6. For 9x10 pan, just double the recipe and bake for 15 minutes more or until cake tester comes out clean.

1 cup all-purpose flour
1 cup self-rising flour
10 tablespoons butter
1 egg, beaten
2 tablespoons cold water
1 pinch salt
2 cups fresh pineapple - peeled, cored and shredded
1 ½ cups white sugar
4 whole cloves
1 egg, beaten

Steps:

  • In a large bowl, combine all-purpose, self-rising flour and salt. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of the mixture. Pour in 1 beaten egg and water. Bind the ingredients together gently. Do not knead too much. Shape dough into a ball, wrap in plastic and refrigerate for 4 hours or overnight.
  • In a saucepan over medium heat, combine pineapple and sugar. Bring to a boil. Reduce heat and simmer, stirring frequently, for 30 minutes, or until mixture thickens. Remove from heat and allow to cool.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut 24 rounds, using a 2 inch round fluted cutter. Place on cookie sheet. Put a spoonful of pineapple jam in the center of each piece. Decorate with criss-cross strips of pastry over jam, extending slightly onto pastry shell.
  • Cut 24 more 2 inch rounds, then, using a smaller cutter, cut out the centers, creating a ring shape. Moisten the edges of each pastry, and place the rings on top of each pastry shell. Brush the top of the pastry with beaten egg.
  • Bake for 20 to 25 minutes in the preheated oven. Allow to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

½ cup butter or margarine, softened
1 cup sugar, divided
3 large eggs eggs, separated
1 (20 ounce) can crushed pineapple
1 teaspoon vanilla extract
2 ½ cups cake flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups whipping cream
¼ cup confectioners' sugar
½ teaspoon almond extract
2 tablespoons slivered almonds, toasted

Steps:

  • In a large mixing bowl, cream butter and 3/4 cup sugar. Beat in egg yolks. Drain pineapple, reserving 2/3 cup juice (discard remaining juice or save for another use). In a bowl, combine juice, 3/4 cup pineapple and vanilla (set remaining pineapple aside for the filling).
  • Combine dry ingredients; add to the creamed mixture alternately with pineapple mixture. In a small mixing bowl, beat egg whites until soft peaks form. Add remaining sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold a fourth of the egg whites into batter; fold in remaining whites. Spoon into two greased and floured 9-in. round cake pans. Bake at 350 degrees F for 28-32 minutes or until cake springs back when lightly touched. Cool for 10 minutes; remove from pans to wire racks to cool completely.
  • For filling, beat the cream, sugar and extract in a mixing bowl until stiff peaks form. Fold in reserved pineapple. Split each cake layer in half horizontally. Spread about 3/4 cup filling between each layer; spread remaining filling over the top. Sprinkle with almonds.

Such a quick and easy sheet cake dessert. Our family and guests swore the taste and texture was that of a carrot cake, and yet carrots are not included in the ingredients. This dessert can be thrown together in about 5 minutes and it is so very good, which is surprising due to the few ingredients, and has such basic mixing and baking techniques. A simply perfect dessert to be enjoyed by both the experienced and inexperienced baker.

3 ounces lemon gelatin
1 cup boiling water
2 cups graham cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted
1/4 cup chopped nuts (optional)
1/2 cup sugar
8 ounces cream cheese, room temperature
12 ounces evaporated milk, chilled
20 ounces crushed pineapple, drained
1 teaspoon vanilla

Steps:

  • Dissolve lemon gelatin in 1 cup boiling water.
  • Mix graham cracker crumbs, butter, and nuts. Press into a 13"x9"x2" pan to make a firm bottom layer. Bake crust at 350 for 20 minutes. Set aside and let cool.
  • Add sugar to cream cheese and mix well. Add this mixture to the gelatin mixture. Beat 2 minutes together. Whip evaporated milk, which has been throughly chilled. Fold gelatin/cheese mixture, plus pineapple and vanilla, into whipped milk. Pour into graham cracker crust. Chill overnight.

1 cup pine nuts, lightly toasted
1/3 cup cake flour, sifted
1/2 cup sugar
6 eggs, separated, plus 4 yolks
CANDIED PINE NUTS:
1 cup pine nuts
1/3 cup granulated sugar
1 egg white, lightly beaten
BUTTERCREAM:
11 tablespoons unsalted butter, softened
1 tablespoons Zirbenz (Austrian stone pine liqueur)
1 cup plus 1 teaspoon granulated sugar
3 egg whites
WHITE CHOCOLATE GANACHE:
14 ounces white chocolate (at least 20% cocoa butter), finely chopped
1/2 cup heavy cream
1/2 cup minced dehydrated pineapple
Pinch Maldon flake sea salt, to taste
CARAMELIZED PINEAPPLE AND SYRUP:

  • Make the pine nut sponge cake: Heat oven to 350°. Grease a 12" x 16 ½" baking sheet with butter and line with parchment paper. Melt butter in a 10" skillet over medium; cook until color is a deep golden brown, 6-8 minutes, and let cool. Pulse pine nuts and cake flour in a food processor until finely ground. Using an electric hand mixer, beat sugar and egg yolks in a bowl until pale yellow and thick, about 4 minutes. In a separate bowl and using clean beaters, beat whites until stiff peaks form. 1 box white cake mix
3 eggs
1/4 cup vegetable oil
3/4 cup milk
1 cup sugar
4 tablespoons flour
1 (20 ounce) can crushed pineapple with juice (reserve 1/2 cup and set aside)
2 eggs, beaten
2 tablespoons fresh lemon juice
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon vanilla
1 1/2 cups sugar
5 tablespoons water
2 egg whites
1 tablespoon light corn syrup
1 pinch salt
1 teaspoon vanilla

Steps:

  • Preheat oven to 350F.
  • In large bowl, combine cake mix, 1/2 cup reserved pineapple juice, eggs, oil and milk.
  • Beat with mixer on low speed, then on medium speed for 3 minutes.
  • Divided batter evenly between 2 greased and floured round cake pans, and bake for 25 minutes to 30 minutes, or untiol cake tests done.
  • Cool cakes and cut each layer in half.
  • Filling: Combine sugar and flour and place in medium saucepan.
  • Add remaining filling ingredients, and cook over medium heat, stirring constantly until mixture thickens (about 3-4 minutes).
  • Remove from heat and let cool.
  • 7 Minute Frosting: Combine sugar, water, egg whites, corn syrup, and salt in top of double boiler; beat constantly on high speed of mixer over boiling water for 7 minutes.
  • Remove from heat and add vanilla.
  • Continue beating until stiff peaks form (about more minutes) and frosting reaches spreading consistency.
  • Assemble cake by filling first layer with half of the pineapple filling, placing second layer on top and filling with about with about 1 cup of 7 minute frosting.
  • Place third layer on top and fill with remaining pineapple filling.
  • Top fourth layer and frost cake top and sides with remaining frosting.
