LEMON CHICKEN SKEWERS WITH CREAMY FETA SAUCE



Lemon Chicken Skewers with Creamy Feta Sauce image

It doesn't get more delicious...simple, healthy, extra colorful, super flavorful, and so delicious!

Number Of Ingredients 22

3 tablespoons, plus 1/4 cup extra virgin olive oil
1 tablespoon smoked paprika
1 teaspoon ground cumin
1/4-1/2 teaspoon cayenne pepper
1/8-1/4 teaspoon ground cinnamon
4 cloves garlic, finely chopped or grated
1 inch fresh ginger, grated
1/4 cup fresh cilantro and or parsley, chopped
crushed red pepper flakes
kosher salt and black pepper
2 pounds boneless skinless chicken breasts, cut into bite-size chunks
juice of 1 a lemon ((about 2 tablespoons))
2 tablespoons red wine vinegar
2 tablespoons honey
2 tablespoons chopped sun-dried tomatoes
1 (12 ounce) jar marinated artichokes
1 bunch asparagus, cut into thirds
6 ounces feta cheese
1/4 cup plain Greek yogurt
juice from 1 lemon
1/4 cup chopped fresh tender herbs such as dill basil or parsley
1/4 teaspoon smoked paprika

Steps:

  • 1. In a bowl, combine 3 tablespoons olive oil, the paprika, cumin, cayenne, cinnamon, 3 cloves garlic, ginger, cilantro, parsley, and a pinch each of chili flakes and salt. Add the chicken and toss to coat. Marinate for 15 minutes or up to overnight in the fridge.2. Meanwhile, make the vinaigrette. In a jar, combine 1/4 cup olive oil, the lemon juice, red wine vinegar, honey, sun-dried tomatoes, 1 clove garlic, and a pinch each of chili flakes, salt, and pepper. 3. To make the feta. Combine the feta, yogurt, and lemon juice in a blender or food processor. Blend until creamy. Stir in the herbs, paprika, and a pinch of red pepper flakes. 4. Set your grill, grill pan, or skillet to medium-high heat. Take skewers and thread the chicken, artichokes, and asparagus pieces on. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total. Alternately, you can roast the chicken at 400 degrees for 20-30 minutes.6. Serve the chicken with the vinaigrette and feta sauce spooned over top. Top with fresh herbs and serve with naan and additional feta on the side.

6 skinless and boneless chicken thighs, trimmed of excess fat
1 preserved lemon , pith finely chopped
½ small bunch lemon thyme , leaves picked, plus extra to serve
2 large garlic cloves , finely grated
2 tbsp rapeseed oil
2 tbsp rapeseed oil
1 lemon , juiced
½ small bunch parsley , finely chopped
1 small garlic clove , finely grated
500g mixed tomatoes , sliced
70g pitted black olives
1 tbsp pine nuts , toasted

Steps:

  • Cut the chicken into 3cm pieces, then mix in a bowl with the lemon, thyme, garlic, oil and ¼ tsp black pepper. Leave covered in the fridge for at least 3 hrs or ideally, overnight.
  • Just before you're ready to cook the chicken, make the salad dressing by whisking together the oil, lemon juice, parsley and garlic.
  • Thread the chicken onto four skewers, put on the barbecue and cook for 15-20 mins, turning halfway. They should be nicely charred and cooked through. Alternatively, heat a griddle pan over a high heat until very hot. Lay the skewers in the pan and cook for 15-20 mins, turning halfway.
  • Arrange the tomatoes and olives on a sharing platter. Drizzle over the dressing, scatter over the pine nuts and extra thyme, then serve with the chicken skewers.

1/4 cup olive oil
3 tablespoons lemon juice
1 tablespoon white wine vinegar
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1-1/2 pounds boneless skinless chicken breasts, cut into 1-1/2-in. pieces
3 medium zucchini, halved lengthwise and cut into 1-1/2-inch slices
3 medium onions, cut into wedges
12 cherry tomatoes

Steps:

  • In a large bowl, combine the first nine ingredients; set aside 1/4 cup for basting. Pour half into a large bowl. Add chicken; turn to coat. Pour the remaining marinade into another large bowl. Add the zucchini, onions and tomatoes; turn to coat. Cover and refrigerate chicken and vegetables for up to 4 hours or overnight., Drain and discard marinade. 1/4 cup lemon juice
4 tablespoons olive oil, divided
3 tablespoons white wine
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
2 medium lemons, halved
Minced chives

Steps:

  • In a large shallow dish, combine lemon juice, 3 tablespoons oil, wine, pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours., Drain chicken, discarding marinade.
