3T olive oil
1t fresh ginger grated to a pulp
1t garlic crushed to a pulp
1t ground cumin
1t ground coriander
11/2 t curry powder
1/8-1/4 t cayenne pepper
7oz skinned boned chicken thighs
6oz red split lentils washed and drained
1.2 litres chicken stock
1t salt
1T lemon juice
1T finely chopped fresh coriander

Steps:

  • saute and simmer for 45 minutes..add lemon juice at the end
