I came up with this potato-and-egg recipe one summer when relatives came to visit. It was a well received by everyone! To save time, you can use frozen hash browns. -Lori Pierce, Cottage Grove, Minnesota

Number Of Ingredients 11

3/4 cup chopped onion
3/4 cup each chopped green, sweet red and yellow pepper
2 tablespoons butter
2 pounds red potatoes, cooked, peeled and cubed (1/4-inch cubes)
1 can (4 ounces) chopped green chilies, drained
5 large eggs, lightly beaten
1 cup evaporated milk
1 cup shredded Monterey Jack cheese
3/4 teaspoon salt
1/4 teaspoon pepper
Salsa and sour cream, optional

Steps:

  • In a large skillet, saute onion and peppers in butter until tender. Add potatoes and chilies; toss to combine. , Transfer to a greased 2-qt. baking dish. In a large bowl, whisk the eggs, milk, cheese, salt and pepper; pour over the potato mixture., Bake, uncovered, at 400° for 35-40 minutes or until a thermometer reads 160°. Serve with salsa and sour cream if desired.

8 large potatoes, peeled
1/4 c mayonnaise
1/4 c milk
1 stick butter
salt and pepper to taste

Steps:

  • 1. Peel, wash your potatoes.
  • 2. Boil potatoes until done. Drain water from potatoes and put in your mixer.
  • 3. Add mayonnaise, milk, butter, salt and pepper. Add more milk and butter if you want to get a right consistency.
  • 4. Put in serving dish and enjoy!!!!

Baked potatoes are not my favorite. I like them with lots of stuff on them. Otherwise, forget it. But this is simple enough, and it's good.

1 lb ground beef
1 tablespoon chili powder
1 cup salsa
4 hot baked potatoes, split
1/2 cup shredded cheddar cheese

Steps:

  • In medium skillet over medium-high heat, cook beef and chili powder until beef is browned, stirring to separate meat. Pour off fat.
  • Add salsa. Reduce heat to low and heat through. Serve over potatoes. Top with cheese.

Sassy potatoes can be made simply with the addition of salsa and a few other flavorful ingredients.

2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
4 cups water
1 1/2 cups milk
6 tablespoons butter or margarine
1 1/2 cups Cheddar French-fried onions
3/4 cup shredded Cheddar cheese (3 ounces)
3/4 cup Old El Paso™ salsa (any variety)
3 tablespoons sliced ripe olives or Old El Paso™ chopped green chiles, if desired
Sour cream, if desired
Chopped fresh cilantro, if desired

Steps:

  • Heat oven to 425°F. In 4-quart saucepan, heat water, milk and butter to boiling. Stir in 2 pouches potatoes; beat with fork until smooth. Stir in 3/4 cup of the onions.
  • Spread mixture in ungreased 2-quart baking dish. Sprinkle with cheese. Spread salsa over cheese. Top with olives and remaining onions.
  • Bake uncovered 3 to 5 minutes or until onions are golden. Serve with sour cream and cilantro.

"OLE BLUE EYES ITALIAN CHICKEN AND POTATOES"



This is one of my favorite dishes. The roasted red peppers add a sweetness to it that makes the whole dish stand out.

2 whole chickens, split in half about 2 pounds each
8 good sized potatoes, peeled and quartered
2 medium onions, thinly sliced
1 jar marinated roasted red peppers, save the juice, and thinly sliced
1 tsp cavender's greek seasoning, it's in the spice section
salt and black pepper to taste
2 Tbsp extra virgin olive oil
water

Steps:

  • 1. Wash and dry chickens and place in a foil lined roasting pan 9x13. Spray it with Pam nonstick cooking spray. Sprinkle onions around the chicken.
  • 2. Place potatoes in a medium sized sauce pan and cover with water. Bring to a boil and cook for at least 15 mins. Take off the heat, drain and place in the roasting pan around the chicken.
  • 3. Open the jar of roasted red peppers and pour the juice over all the ingredients in the pan. Place roasted red peppers over everything in the pan. Sprinkle the Cavenders' Greek Seasoning and salt and pepper over everything to taste. Add the 2 tablespoons of extra virgin olive oil. Mix it up good with your hands. Rub it all in and under the skin, too.
  • 4. Place in a preheated oven at 350 degrees, and bake for 1 hour or until juices run clear. Take out and let the entire dish rest for at least 15 mins. Serve and enjoy!

But those pictures look soooo good that I'm sure I'll make it someday. I can't swear to the publication but the date is Oct. 2004 & the page looks like those BHG prize tested cut-outs.

3 ears fresh corn or 1 cup frozen corn
1 lb yellow potato, peeled and cut in 1 inch cubes
1 lb red potatoes, peeled and cut in 1 inch cubes
3 medium carrots, peeled and sliced in 1 inch sections
2 medium jalapeno peppers, seeded & sliced
4 garlic cloves, minced
1/4 cup butter
1/4 cup sour cream
1 cup sharp cheddar cheese, shredded
salt
pepper

Steps:

  • Cut corn kernels from cobs if using fresh.
  • In a large saucepan, cook corn, potatoes, carrots, jalapeño peppers and garlic in enough boiling water to just cover for 15-20 minutes until all vegetables are tender. Drain off water.
  • Add butter to vegetables & coarsely mash with a potato masher. Stir in sour cream & 3/4 cup cheese.
  • Season to taste with salt & pepper.
  • Top with remaining cheese.
  • Microwave 30 seconds to 1 minute or until cheese topping melts.
  • Serve immediately.
