This is Ore-Ida's amazing recipe found on their website. One of my best friend's mothers always brought this to tailgate parties. It was perfect for those cold football mornings!

Number Of Ingredients 9

1 (87 g) bag ore-ida country style hash browns, thawed
1 (10 1/2 ounce) can cream of chicken soup
2 cups sour cream
1/2 teaspoon salt
2 cups cheddar cheese, shredded
1/3 cup green onion, sliced
1/4 teaspoon ground black pepper
2 cups corn flakes, crushed
1/4 cup butter, melted

Steps:

  • Preheat oven to 350 degrees F. Coat 13x9 baking dish with nonstick cooking spray.
  • In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and Hash Browns until well mixed. Spoon evenly into baking dish.
  • In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of Hash Brown mixture.
  • Bake uncovered for about 50 minutes, or until hot and bubbly.
  • Allow to rest for 5 minutes before serving. Garnish with additional sliced green onion if desired.
  • If desired, you may substitute the cream of chicken soup with cream of turkey soup.

4 cups tater tots, frozen
1 (16 ounce) can diced tomatoes
1/4 teaspoon oregano, crumbled
1 cup sour cream
2 tablespoons milk
1 (4 ounce) can green chilies, chopped and drained
1/2 teaspoon salt
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 375°F.
  • Put frozen Tater Tots into a 1 1/2-quart shallow baking dish.
  • Mix with tomatoes with oregano, spoon over the potatoes.
  • In a small bowl, stir sour cream, milk, chiles and salt together.
  • Spoon over top over the tomatoes.
  • Sprinkle with cheese and bake 25 minutes.

The spices here are inspired by the taters served up at Taco John's mexican joint - this is a lower fat version of their Potato Oles.

2 teaspoons paprika
2 teaspoons ground coriander
1 tablespoon granulated sugar
2 tablespoons seasoning salt
1/8 teaspoon garlic salt
1/8 teaspoon hot salt (spicy seasoning salt)
3 large baking potatoes
olive oil flavored cooking spray

Steps:

  • Preheat oven to 475°F
  • Mix seasoning, sugar and spices together.
  • Slice scrubbed, unpeeled potatoes into rounds.
  • Place 1/2 of the potatoes into a plastic bag.
  • Spray with olive oil.
  • Sprinkle half of spice mix into bag.
  • Close bag and shake until potatoes are coated.
  • Repeat process with other half of potatoes and spices.
  • Spray 2 baking sheets with olive oil.
  • Spread potato rounds out on baking sheets into a single layer.
  • Bake until crisp, 30-40 minutes.

I came up with this idea from a Taco place we just love to eat at. With the cost of living on the rise I wanted to have this delicious treat but didn't want to spend all that money, SO, I improvised and made just one attempt to making this small fast food meal into a now :Family Favorite". This dish tastes exactly like the potato Olè bravos from Taco Johns at nearly half the cost for one person at the fast food restaurant. I can guarantee your family will love this too!

2 bag(s) potato crisps/flat rounds
1/2 pound(s) ground beef
2 package(s) taco seasoning mix
31 ounce(s) refried beans traditional
1 1/2 cup(s) shredded cheese
2 1/4 ounce(s) sliced ripe olives
1 1/2 cup(s) roma tomatoes (diced)
4-6 tablespoon(s) sour cream
1 1/2 cup(s) shredded lettuce
4-6 tablespoon(s) guacamole
4 cup(s) shortening

Steps:

  • Deep fry in shortening potato crisps until golden crispy brown. Remove place in container lined with paper towels and sprinkle lightly with seasoned salt. Place crisps in lightly greased Casserole dish and set aside.
  • Cook ground beef thoroughly. Add in 2 packages Taco seasoning and mix well. Then add 1 large 31 ounce can refried beans and mix well. Let sit on low heat until you're ready.
  • Spread meat and bean mixture coveringredients potato crisps. Cover with shredded cheese and sliced black olives.
  • Bake in oven for approximately 10-15 minutes then remove from oven and let stand for 5 minutes.
  • Add shredded lettuce, tomatoes, sour cream and guacamole and serve. (Add your own delicious toppings)
