1 package (24 ounces) frozen O'Brien potatoes
2 cups cubed fully cooked ham
3/4 cup shredded cheddar cheese, divided
1 small onion, chopped
2 cups sour cream
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine potatoes, ham, 1/2 cup cheese and onion. In another bowl, combine sour cream, soups and pepper; add to potato mixture and mix well. , Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 60-65 minutes or until bubbly and potatoes are tender. Let stand for 10 minutes before serving.

The best one-dish meal I've ever made! If you love ham, potatoes, spinach and cheese, you'll love this!

12 ounces ham, cubed (or sliced)
1 (32 ounce) bag frozen hash brown potatoes
1 (24 ounce) bag cheddar cheese
1 (10 ounce) package frozen creamed spinach
1 tablespoon spicy mustard
1 small onion
2 cups milk
3 tablespoons butter
3 tablespoons all-purpose flour
2 eggs, beaten
salt
pepper

Steps:

  • Using a skillet, melt your butter. Add the flour and the milk.
  • Cook until sauce thickens; remove from heat.
  • Add eggs, cheese, mustard, salt and pepper.
  • In another skillet, sauté the onion in some butter (I use about 1 tsp).
  • When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
  • In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
  • Repeat until all is used.
  • Cover and bake at 350°F for about 46 minutes.
  • Sprinkle some parmesan cheese on top before serving.

11 cups ORE-IDA Shredded Hash Brown Potatoes, thawed
2 Tbsp. butter, melted
6 slices OSCAR MAYER Smoked Ham, finely chopped
1 pkg. (8 oz.) KRAFT Shredded Cheddar & Monterey Jack Cheeses
4 eggs
1 cup milk

Steps:

  • Heat oven to 400°F.
  • Pat hash browns dry with paper towels; mix with butter. Press onto bottom and 1 inch up sides of 13x9-inch baking dish sprayed with cooking spray. Bake 20 to 25 min. or until lightly browned.
  • Reduce oven temperature to 350°F. Sprinkle ham, then cheese onto bottom of crust. Whisk eggs and milk until blended; pour over cheese.
  • Bake 20 to 25 min. or until knife inserted in center comes out clean.

2 tablespoons butter
1 teaspoon seasoning salt
2 cups hash brown potatoes, thawed
1 cup half-and-half cream
4 eggs
1/4 teaspoon pepper
1 cup ham, cooked and cubed
1/4 cup green onion, sliced
1/4 cup red bell pepper, chopped
4 ounces cheddar cheese, shredded (1 cup)

Steps:

  • Heat oven to 375°F.
  • Melt butter in 10 inch, oven safe, skillet over medium heat and then add hash browns. Sprinkle potatoes with seasoned salt and stir to blend and continuing heating the potatoes for 5 minutes. Take off heat and press potatoes onto bottom and up sides of the pan.
  • Combine half & half, eggs and pepper in medium bowl; beat until well mixed. Stir in ham, 2 tablespoons green onions and bell pepper. Sprinkle half of cheese over potatoes. Pour egg mixture over cheese.
  • Bake for 35 to 40 minutes or until knife inserted in center comes out clean. Top with remaining cheese and green onions. Let stand 10 minutes before serving.

Leftover ham at the holidays? I share your pain, so I dug this recipe out of a Swedish cookbook. It's wonderful comfort food. You can use from 3 to 6 ham slices.

4 slices ham
dry dill weed
3 large potatoes or 8 small potatoes, cooked, peeled, sliced potatoes
2 cups milk
1 cup half-and-half or 1 cup light cream
4 eggs
1/3 cup grated parmesan cheese
pepper
1 -2 dash nutmeg
2 -3 dashes Worcestershire sauce

Steps:

  • In a 2-quart baking dish (or a rectangular if using 6 ham slices), arrange a single layer of ham (you may have to cut up the slices to fit them). Sprinkle with dill weed. Top with a layer of potatoes, then another layer of ham, sprinkling each with dill weed.
  • Combine milk, half-and-half, eggs, cheese, pepper, nutmeg and Worcestershire sauce and mix well. Pour over the ham and potatoes.
  • Bake at 375°F for 1 hour 15 minutes or until firm. Cool at least 30 minutes, or long enough that the mixture holds together when sliced. Cut into slices and serve.

2 cups frozen shredded hash brown potatoes, thawed 1 cup land o lakes™ half & half 4 land o lakes™ all-natural farm-fresh eggs 1/4 teaspoon pepper 1 cup cubed cooked ham 1/4 cup sliced green onions 1/4 cup chopped red bell pepper
4 ounces (1 cup) land o lakes® cheddar cheese, shredded*

Steps:

  • 1. Heat oven to 375°F. Press potatoes onto bottom and up sides of greased 9-inch pie plate. Bake for 10 minutes. Combine half & half, eggs and pepper in medium bowl; beat until well mixed. Stir in ham, 2 tablespoons green onions and 2 tablespoons bell pepper. Sprinkle half of cheese over potatoes. Pour egg mixture over cheese.
