3 cups mashed potatoes
1-1/2 cups shredded sharp cheddar cheese
3/4 cup crumbled cooked bacon
1/2 cup chopped green onions
2 ounces Colby-Monterey Jack cheese, cut into eighteen 1/2-inch cubes
1/2 cup panko bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 large egg, beaten
Oil for deep-fat frying

Steps:

  • In a large bowl, combine potatoes, shredded cheese, bacon and green onions. Divide into eighteen 1/4-cup portions. Shape each portion around a cheese cube to cover completely, forming a ball. Refrigerate, covered, at least 30 minutes., In a shallow bowl, mix bread crumbs, Parmesan cheese, salt and pepper. Place egg in a separate shallow bowl. Dip potato balls in egg, then in crumb mixture, patting to help coating adhere., In an electric skillet or a deep-fat fryer, heat oil to 375°. Fry potato balls, a few at a time, until golden brown, about 2 minutes. Drain on paper towels.

Steps:

  • Preheat oven to 350°. In a large bowl, mix butter and seasonings. Add sweet potatoes and toss to coat., Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick. These wonderful sour cream, bacon and chive-stuffed red potatoes are a perfect appetizer for any occasion. Easy to prepare ahead of time, top off with Cheddar cheese, and broil as your guests arrive. A friend forwarded me this recipe and I cherish it.

1 ½ pounds small round red potatoes
4 slices bacon
1 cup sour cream
½ teaspoon seasoned salt
¼ teaspoon black pepper
1 tablespoon chopped fresh chives
½ cup shredded Cheddar cheese
parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place potatoes in a saucepan, and add enough water to cover. Bring to boil, and cook until tender but still firm, about 10 minutes. Drain, and cool in a bowl of cold water.
  • Cook bacon in a skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
  • Remove cooled potatoes from water. Pat dry with a paper towel, and cut in half. Using a small spoon, carefully remove a small amount from center, leaving approximately 1/4 inch rim around each potato. Set reserved potato aside.
  • In a bowl, mix together reserved potato, sour cream, bacon, seasoned salt, pepper, and chives. Spoon a small amount of mixture into each potato half and place on a baking sheet. Top each potato off with some shredded cheese.
  • Bake for 10 minutes in the preheated oven, or until cheese is melted and potatoes are warmed through. Garnish with parsley, and serve.

Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
1 container (16 ounces) sour cream
6 ounces cheddar cheese, shredded (2 cups)
6 scallions, finely chopped (1 cup), plus more for garnish
12 ounces bacon, cooked and crumbled (1 1/2 cups)

Steps:

  • Preheat oven to 425 degrees with racks in upper and lower thirds. Place potatoes in a saucepan; cover with 2 inches of cold water. Season generously with salt and bring to a boil, then reduce heat to a simmer and cook until a knife pierces potatoes easily, 10 to 12 minutes. Drain; let cool 10 minutes.
  • Drizzle each of 2 rimmed baking sheets with 2 tablespoons oil. Arrange potatoes on sheets, tossing to coat; lightly crush each with the heel of your hand or back of a spatula to about 1/2 inch thick.   • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
  • Wrap each sweet potato cube with a bacon slice, holding in place with a toothpick. Place on the prepared baking sheet, toothpicks facing up.

24 cubes (about 2 3/4 oz.) VELVEETA™ Original Cheese (from 8 oz. box)
1 egg
1 tablespoon water
1 cup plain mashed potato mix (dry)
Butter-flavor nonstick cooking spray

Steps:

  • In medium saucepan, bring 1 cup water, butter and salt to a boil. Add 1 1/3 cups mashed potato mix, 1 egg and chives; mix well. Let stand 30 seconds. Stir. Cool 10 minutes.
  • Meanwhile, heat oven to 400°F. Spoon mashed potatoes into 24 mounds, about 1 tablespoon each, onto ungreased cookie sheet. Flatten into disks. Place 1 cheese cube in center of each potato disk. With pancake turner, remove each disk from cookie sheet; pinch potatoes around cheese cube to form ball.
  • In small bowl, beat 1 egg and 1 tablespoon water until well blended. Place 1 cup mashed potato mix in another shallow dish or bowl. Roll balls in potato mix, then in egg mixture and again in potato mix. Place on ungreased cookie sheet.
  • Just before baking, spray coated potato balls with nonstick cooking spray. Bake at 400°F. for 10 to 12 minutes or until potato coating just begins to brown. Serve immediately.

1 tablespoon olive oil
coarse salt and ground pepper
3/4 cup reduced-fat sour cream
1/4 cup snipped fresh chives, plus more for garnish

Steps:

  • Preheat oven to 450 degrees. Cut a thin slice off the bottom of each potato half so they rest flat. On a rimmed baking sheet, toss with oil; season with salt and pepper, and arrange bottom side down. Bake until tender, 30 to 35 minutes. Let cool on sheet.
  • When cool enough, scoop out about a teaspoon from the center of each potato into a medium bowl. Add sour cream and chives, and mash; season with salt and pepper. Stuff potatoes with filling. (To store, refrigerate stuffed potatoes on a rimmed baking sheet, up to 1 day.)

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Lightly oil a 13- by 9-inch baking pan or dish.
  • Finely chop white and green parts of scallions and reserve separately.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook onions, garlic, white parts of scallions, 3/4 teaspoon salt, and 1/4 teaspoon pepper, stirring occasionally, until onions are golden, about 6 minutes. salt, to taste
pepper, to taste
paprika, to taste

Steps:

  • Chop 10-15 small yellow potatoes in half, and place on a baking sheet.
  • Sprinkle with salt, and spray with cooking oil.
  • Bake at 400˚F (200˚C) for 40 minutes, or until soft.

2 tablespoons olive oil
Kosher salt and freshly ground black pepper
3/4 cup milk
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
One 8-ounce bag shredded processed cheese (or 8 ounces processed cheese, cut into small cubes)
6 slices crisp-cooked bacon, crumbled
2 tablespoons sliced chives

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, combine the potatoes, oil and salt and pepper to taste and toss to coat. Transfer to a baking sheet and roast until tender and easily pierced with a fork, 20 to 25 minutes.

Kielbasa Bites with Grainy-Mustard Potato Salad image

Links of Polish sausage are grilled to highlight their garlicky flavor. Sliced into small pieces, they contrast nicely with buttery Yukon gold potatoes with a light coating of grainy-mustard vinaigrette.

1 pound baby Yukon gold or new potatoes, peeled and sliced 1/2 inch thick
Coarse salt and freshly ground pepper
1/4 cup safflower oil, plus more for brushing
2 tablespoons white-wine vinegar
1 tablespoon plus 1 teaspoon grainy mustard
3 tablespoons chopped fresh chives
2 pounds kielbasa, halved lengthwise

Steps:

  • Bring a large pot of water to a boil. Add potatoes and 1 tablespoon salt. Return to a boil; cook until tender, about 8 minutes. Drain; immediately toss with oil, vinegar, mustard, and 1 1/2 teaspoons salt; season with pepper. Refrigerate until cool, about 30 minutes. Stir in chives.
  • Meanwhile, heat grill to high. Brush grates with oil. Grill kielbasa until heated through and charred, about 3 minutes per side. Cut crosswise on the bias into 2-inch pieces. Serve with potato salad.

1 (24 ounce) package Simply Potatoes Red Potato Wedges
6 slices bacon
3 tablespoons sour cream
3 teaspoons hot sauce
2 tablespoons flat leaf parsley

Steps:

  • Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
  • Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
  • Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.
  • Add the bacon wrapped potatoes back in the oven for 30 minutes. Turn them over after the first 15 minutes.
  • Mean while, in a small serving dish spoon in the sour cream, hot sauce and minced parsley. Remove the bacon wrapped potato bites and serve.

12 potatoes
6 pieces of bacon cut in half
12 pieces yellow onion
4 Tbsp sweet chili sauce
1/2 c brown sugar
1/4 c chopped fresh cilantro

Steps:

  • 1. Wash potatoes. Cut onion piece to wrap around each potato.
  • 2. Wrap bacon to cover onion. Pierce with tooth piece to seal.
  • 3. Roll in brown sugar. Bake 20-25 minutes.
  • 4. Drizzle sweet chili sauce and fresh cilantro on top. Serve!

12 small red potatoes (1 to 1 1/4 inch diameter)
1 bag (12 oz) frozen broccoli & cheese sauce
1 cup ranch dressing
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup chopped plum (Roma) tomato
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F. Place potatoes in ungreased 15x10x1-inch pan. Bake 40 to 45 minutes or until tender. Cool until cool enough to handle, about 10 minutes.
  • Meanwhile, cook broccoli as directed on bag.
  • Cut potatoes in half. With melon baller, scoop out insides of potatoes into medium bowl, leaving 1/4 inch lining of potato in skins. To potatoes in bowl, add broccoli, 1/4 cup of the ranch dressing, the salt and pepper. Mix well, breaking up potatoes. Stir in tomato.
  • Fill each potato shell with about 2 tablespoons potato mixture. Place on ungreased 15x10x1-inch pan. Sprinkle with Cheddar cheese.
  • Bake 15 to 20 minutes or until cheese is melted. Serve with remaining 3/4 cup ranch dressing.

½ cup almond meal
¼ cup hemp seeds
¼ cup almond butter
1 tablespoon honey, or more to taste

⅛ teaspoon sea salt

Steps:

  • Place mashed sweet potato, oats, almond meal, hemp seeds, almond butter, honey, cinnamon, vanilla, and sea salt into a bowl and stir until all ingredients are well combined.
