This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

1 large sweet orange pepper, sliced

  • Preheat oven to 400°. Place the potatoes, sweet peppers, shallot and garlic in a greased 15x10x1-in. baking pan. Drizzle with oil. Sprinkle with seasonings; toss to coat. Spread evenly over pan, leaving room for the sausage. Add sausage to pan., Bake, uncovered, until a thermometer inserted in sausage reads 160° and vegetables are tender, 30-35 minutes. 3 large sweet potatoes
2 lbs sausage (any is fine but Emeril's Chicken and apple is what I use)
1 onion
1 apple
1/4 cup olive oil
1 tablespoon sugar
1 teaspoon cinnamon
1 teaspoon garlic powder
1/2 teaspoon chili powder
salt and pepper

Steps:

  • Preheat oven to 375.
  • Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
  • Place potatoes, onions and apples into ziploc bag.
  • Pour in olive oil and all seasoning (more or less of these taste.).
  • Shake bag until everything is coated well.
  • Pour into 13x9 in pan and toss with sausage.
  • Bake uncovered in 375 degree oven for 1-1 1/2 hours until sausage is browned and potatoes are tender.

¾ cup milk
¼ cup flour

¾ cup shredded Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square baking dish with Reynolds Wrap® Aluminum Foil. Grease the foil and set aside.
  • Heat the olive oil in a large pan over high heat. Add the sweet potatoes and Italian sausage. Stir to coat. Cook for a few minutes until starting to brown and then move everything around. Repeat until the sweet potatoes and sausage both have golden brown exteriors.
  • In a bowl, combine the sweet potato and sausage mixture with the kale. Transfer to the lined baking dish.
  • Bring a 1/2 cup milk to a low boil and then lower the heat to simmer. Whisk in the flour and remaining 1/4 cup milk to form a thick paste. Add the broth, whisking to keep the sauce smooth. Add 1/4 cup Gruyere and stir until melted.

3 large potatoes, washed and cut in to bite size cubes
1 large carrot, peeled and sliced (or use a couple handfuls of petite carrots)
1/2 onion, chopped
4-5 whole italian sausage links
1 Tbsp olive oil
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp black pepper
1 tsp italian seasoning
1 Tbsp butter
3/4 c shredded sharp cheddar cheese

Steps:

  • 1. Place the potatoes, carrot and onion in a 2.5 quart lightly greased casserole dish. Add the oil and all the seasonings. Toss to coat well then dot the potatoes with the butter. Lay the sausages across the top. Cover with tinfoil and place in a 425 degree oven for 30 minutes. Remove and uncover, return to the oven for 20 minutes (check the potatoes for tenderness). Remove and top with the cheese and place back in the oven for 10 minutes.

CRESCENT SAUSAGE AND POTATO BRUNCH BAKE

This makes a wonderful weekend brunch! Although I have 4 cups listed for the hash browns, you can really use any amount you wish, just make certain that it covers the bottom of the baking dish, when I make this dish, 4 cups seems to be the right amount, but you can increase it to 5 or 6 six cups, and also you can use as much sausage meat as you want, for this casserole the exact amounts do not really matter, but do use only one can crescent rolls for a 13x9-inch dish. If you are using Italian sausages in place of breakfast sausages, remove the meat from the casings first before browning.

1 lb small pork sausage (you can use more if desired, and Italian sausages can be replaced for the breakfast sausages)
4 cups frozen hash browns (can use more)
5 green onions, chopped (can use more)
1 small green bell pepper, seeded and chopped
1 small red bell pepper, seeded and chopped
3 cups grated cheddar cheese (or to taste)
1/2 teaspoon paprika (or to taste)
grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a skillet brown the pork sausages breaking up with a fork until browned and cooked; drain any fat and set aside.
  • In the same skillet add in some butter and fry the hashbrowns with green onions and both bell peppers until tender.
  • In a bowl whisk the eggs with 1/3 cup half and half, salt and pepper.
  • Unroll the crescent rolls (do not separate at the perforations).
  • Line the bottom of the baking dish with the crescent rolls stretching to fit at corners if necessary.
  • Sprinkle with about 1/4 cup Parmesan cheese on top of the dough.
  • Layer the cooked sausage over the dough.
  • Sprinkle the potato/green onion mixture on top of the sausage meat.
  • Then sprinkle the cheese over the potato/onion mixture.
  • Pour the eggs over top.
  • Lightly sprinkle paprika over the eggs.
  • Then sprinkle Parmesan cheese over the top.
  • Bake for about 45 minutes.
  • Delicious!

This is a recipe that my Dad has made for years. He usually cooks this in a large skillet, which you can do, but i like to use the oven sometimes because it can be easier. This is a very versatile dish so you can mix any different kinds of vegetables! I prefer potatoes, carrots, zucchini,and yellow squash. I will sometimes add broccoli if I have it on hand, so use your own imagination in choosing which vegetables that you prefer. You could also use any kind of kielbasa sausage. I personally don't care for too much spice, but the spicy sausage can be used also. The best thing about this dish is that the only time consuming part of making it is chopping the vegetables! If you cook it in a skillet, it should take about 30 minutes, in the oven about 45 minutes.

2 -3 zucchini
2 yellow squash
4 scallions
1/2 lb kielbasa

  • Turn oven onto 400 degrees. Start by preparing the different vegetables.
  • Peel and chop the Potatoes into thick slices. For the potatoes I like to cut in half, cut in half again, and then cut in half again. Peel and carrots and slice into good thick pieces. Chop the scallions, white and green parts.
  • Wash the zucchini and yellow squash well and slice. Try to keep the vegetables around the same size for even cooking.
  • Cut the sausage down the middle and then slice into good sized pieces.
  • Place all the vegetables in a large baking pan. Pour the olive oil well over all the vegtetables. Add the seasonings well, you may need adjust the seasonings to your taste.
  • Bake for about 40-50 minutes or until the potatoes are tender and browned.

20 ounces Simply Potatoes® Shredded Hash Browns
1 lb jimmy dean maple sausage
2 tablespoons flour
3 cups milk, I used whole milk
4 eggs

Steps:

  • Preheat oven to 400°.
  • Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
  • Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
  • Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
  • Add flour and cook, stirring often, for 2 minutes.
  • Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
  • Pour 3/4 cup gravy into each ramekin over the potatoes.
  • Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
  • Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

2 onions, sliced
1 lb carrots, cut into 3" chunks, or large coins, as appropriate to being bite-sized
2 Tbsp butter, melted
2 tsp mama's meatball mix (or other favorite italian mix herbs)
1 tsp salt
1 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp black pepper
1 lb favorite brats, polish sausage, or other favorite product
garlic mist nonstick cooking spray

Steps:

  • 1. Preheat oven to 400°F. Spray 9 x 13 baking dish with garlic mist nonstick cooking spray.
  • 2. Combine potatoes, onion, carrots, butter, salt, Mama's Meatball seasoning, salt, garlic powder, thyme, and pepper in prepared baking dish; toss to coat. Bake 30 minutes.

3 tablespoons olive oil, divided
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
1-1/2 teaspoons Lawry's Seasoning Salt (or other all-purpose seasoning mix), divided
Fresh ground pepper, to taste
1 cup shredded Monterey jack cheese

Steps:

  • Preheat oven to 375 degrees. Coat a large rimmed baking sheet with non-stick cooking spray. Place the quartered potatoes in a large mixing bowl and toss with 2 tablespoons of olive oil. Add rosemary, thyme, 1 teaspoon Lawry's Seasoning Salt, and fresh ground pepper to taste. Toss again to distribute the seasonings. Pour out the seasoned potatoes on to the prepared rimmed baking sheet. Roast in the preheated oven for 20 minutes. Meanwhile, add the remaining vegetables and chopped sausage to the same large mixing bowl. Toss with remaining 1 tablespoon of olive oil. This dish is just wonderful and you could use any kind of sausages, whether that is bangers, bratwurst, frankfurters, kielbasa, pepperoni or even chorizo. I have used some French saucisses which we bought from France last time we were there. This recipe will go very well with any type of meat, bacon, gammon or simply with no meat at all making a nice vegetarian dish. The parmesan cheese can also be substituted for any cheddar or mozarella cheese or any one you fancy or have. Enjoy this wonderful and tasty recipe.

- 1/2 tsp salt

Steps:

  • Place a saucepan with a litre of water on fire. Add salt and bring to boil.
  • Meanwhile, wash thoroughly the potatoes and cut into halves or quarters depending on how big they are.
  • Put the potatoes in the water and boil for 5-6 minutes.
  • Shallow fry the sausages for a few minutes until they release most of the fat. To make this easier make sure your crust open their skin so their fat world gets released a lot easier.
  • In a bowl mix the crème fraîche or double cream with the garlic and freshly ground pepper as well as half of the parsley.
  • When the potatoes are ready, mix them with the double cream mix. Put them into the baking tray/dish.
  • When this is all finished, mix the potatoes with sausages and put in the oven for about 20 minutes.
  • On the last five minutes of baking sprinkle some cheese preferably would be Parmesan but truthfully, any cheese would do.
  • Take out of the oven, sprinkle the remaining parsley and serve while hot.

Ingredients
1 pkg. Hillshire Farm® Turkey Smoked Sausage
6 cups red new potatoes, cut into 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
1 red bell pepper, cut into 1 inch-chunks
1 large onion, sliced
2 garlic cloves, minced
1/4 cup reduced sodium chicken broth
1 tablespoon olive oil
1 teaspoon dried rosemary leaves, crushed
1 teaspoon dried thyme leaves, crushed
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 400° F. Cut sausage in 1/4" slices; set aside.
  • Place potatoes in medium saucepan; cover with water. Bring to a boil; reduce heat. Simmer 10 minutes or until crisp-tender. Drain potatoes.
  • Combine sausage, potatoes, bell peppers, onion, garlic and seasonings in a 12x8-inch baking dish; mix lightly.
  • Bake for 40-45 minutes or until potatoes are lightly browned and vegetables are tender.
