HONEY CITRUS SOUTHERN ICED TEA

7 bags black tea, such as Luzianne or Lipton
1/2 cup honey
4 kumquats, sliced into rounds, optional
2 key limes or 1 regular lime, sliced into rounds
1 lemon, sliced into rounds
Fresh mint leaves, for garnish

Steps:

  • Bring 4 cups water to a simmer in a saucepan. Remove from the heat, add the tea bags and let steep for 8 minutes. Remove the tea bags and stir in the honey. Let cool.
  • Add the sweetened tea to a pitcher along with 2 cups ice and another 4 cups water; stir. Add the sliced kumquats (if using), key limes and lemon. Pour into glasses over ice and garnish with mint.

SPARKLING JASMINE ICED TEA



Sparkling Jasmine Iced Tea image

A sparkling iced tea, a change from the ordinary, with a sweet and floral flavour. Prep time includes cooling time.

Number Of Ingredients 5

4 cups water, boiling
3 tablespoons loose jasmine tea
1/2 cup sugar (or to personal taste)
1 1/4 cups sparkling water
cinnamon sticks, lemon slices or mint sprig

Steps:

  • Dissolve sugar in 3/4 cup of water, and boil gently until a syrup has formed. Set aside and let cool.
  • Steep the jasmine tea in the remaining 3 1/4 cups of hot water for around 6 minutes.
  • Strain out tea, and let cool.
  • In a pitcher, combine syrup and tea.
  • Stir or whisk until fully blended.
  • Add sparkling water and cool thoroughly.
  • Serve over ice at once.
  • Can be served with cinnamon sticks, lemon slices or mint sprigs.
  • Makes 1 quart of iced tea.

JASMINE FANCY LIMEADE ICED TEA

I got this from a wonderful friend. It's tea with a floral kick and lime. The first time I had it, I thought it was OK. The second time I thought, yum. The third time, I had to have the recipe. I guess it's an acquired taste. Here it is, enjoy!

7 cups boiling water
2 -3 cups limeade (Odwalla)

Steps:

  • Boil water and let tea steep at least 15 minutes.
  • Mix with 2-3 cups limeade.
  • Pour into pitcher with ice.

Rather than using hot water then throwing a bunch of ice over it, I prefer to make iced tea using the easy and effective method of cold brewing.

1 ounce loose leaf jasmine green tea (I get mine from www.teadojo.com)
3 liters filtered room temperature water
1 -2 tablespoon raw sugar or 1 -2 tablespoon honey
1 lemon

Steps:

  • In a large pitcher combine the tea and water. Mix the sugar or honey with about a cup of hot water so that it dissolves and will mix with the room temperature water. Add the sugar/ hot water mixture to the pitcher. Put the pitcher in the refrigerator (preferably before you go to sleep) and let the tea leaves soak until morning (9-12 hours). Add lemon to taste and then pour the tea through a strainer so as to catch the tea leaves before serving.
