PROVENçAL GARLIC SOUP WITH POACHED EGG

Steps:
- Peel and slice or roughly chop the garlic cloves. Warm the oil in a heavy soup pot over medium heat. Add the garlic and sage and let them sizzle a bit without browning, about 2 minutes. Season with about a teaspoon of salt and a few grinds of pepper.
- Add 6 cups of water and bring to a boil over high heat, then lower to a brisk simmer. Cook for 10 to 15 minutes. Taste for seasoning and adjust.
- Ladle about an inch of soup into a skillet. Over medium heat, bring to a brisk simmer and, for each serving, poach an egg for about 3 minutes.
- For each serving, place a slice of toast in a soup bowl. With a slotted spoon lift a poached egg onto each piece. Ladle the soup over it. Sprinkle with a little parsley, scallion, or chive.

- Soup:.
- heat chicken stock to a simmer and keep on low heat covered untill ready.
- Eggs:.
- in 10 inch Skillet melt butter over low heat.
- in it cook bread, turning often, for 4-5 minutes, untill golden brown on each side (you could use toaster if you have one that can handle the thicker bread).
- Place 1 slice of bread each into four bowls.
- bring 2 inches of water to a simmer in skillet (If you opted to use toaster first melt one tbsp of butter in pan).
- Break one egg into a saucer.
- hold saucer as close to the water as you can and slide it carefully into the skillet.
- Gently lift the white over the yolk with a wodden spoon.
- break and cook other three eggs in this fashion - trying to keep them apart.
- cook 3-5 minutes depending on firmness desired.
- remove with slotted spoon and place one egg on top of each slice of bread in bowl.
- sprinkle eggs with cheese and remove soup from heat and pour around it.
- serve at once.

- Cook onion and garlic with 1/2 teaspoon salt in oil in a large heavy saucepan over medium heat, stirring occasionally, until pale golden, about 10 minutes.
- Meanwhile, discard stems from mushrooms. Halve caps, then thinly slice crosswise. Add mushrooms and thyme to onion and cook, stirring occasionally, until mushrooms are softened, about 5 minutes. Stir in tomatoes with their juice, stock, barley, and 1/2 teaspoon each of salt and pepper and simmer briskly, covered, stirring occasionally, until barley is tender, 10 to 15 minutes. Stir in spinach and cook 1 minute, then season with salt.
- Meanwhile (if using eggs), bring 2 quarts water to a simmer with vinegar and 1 tablespoon salt in a wide medium saucepan.
- Break 1 egg into a cup and slide into water. Repeat with remaining eggs, spacing evenly. Poach at a bare simmer until whites are firm and yolks are still runny, 2 to 3 minutes. Transfer to paper towels using a slotted spoon.
- Serve soup in bowls, topped with eggs.
ENGLISH PEA SOUP WITH POACHED DUCK EGG
The success of this deceptively simple soup depends on the use of perfectly fresh English peas and careful, brief cooking to preserve their delicate flavor. The unctuous duck egg gilds the lily, highlighting the vibrant sweetness and color of the peas. If you wish to make the soup in advance of serving, chill it quickly in an ice bath after straining and blending in the cream. When ready to serve, reheat the soup while you poach the eggs.

- Heat the butter in a sauté pan over medium heat and add the onion, garlic, and a pinch of salt. Sauté until the vegetables are soft and clear. Add the peas and water, along with another pinch of salt to set the color of the peas. Increase the heat to high and bring to a boil. Decrease the heat to low and simmer just until the peas are tender, 4 to 5 minutes.
- Purée the soup in batches in a blender, taking care not to fill the blender more than half full and covering the top with a kitchen towel to avoid splatters. When all the soup is puréed, strain through a chinois or fine-mesh sieve into a medium-size bowl. Stir in the cream and season to taste with salt and pepper. If not serving the soup immediately, place the bowl in an ice-water bath and chill until cold, then refrigerate.
- Fill a medium-size saucepan with water to a depth of at least 3 inches and add the vinegar. Place the pan over low heat and bring to just below a simmer. Crack 1 egg and drain off most of the white, then tip the yolk into a ramekin or teacup. To avoid sticking, dip the ramekin or cup just below the surface of the water until the whites set, then slip the egg out of the cup and into the water. Repeat with the remaining 3 eggs. Poach the eggs to medium, 3 to 4 minutes, taking out the eggs in the reverse order they were placed in the pan. Retrieve each with a slotted spoon and place on paper towels to drain.
- To serve, reheat the soup until hot. Divide the chives among 4 shallow bowls, sprinkling them on the bottom to provide a bed for the egg. Gently place a drained egg on top of the chives in each bowl. Carefully spoon or pour the soup around the egg. Gloss the egg with a bit of extra-virgin olive oil and sprinkle with kosher salt and cracked pepper. Serve immediately.

- Crack two eggs into a microwave safe bowl. Fill with water to cover eggs (important step, both eggs must be covered with at least 1/2" of water, no poking the eggs with a toothpick or other cover is necessary). Cook in large microwave for 2 minutes, or small microwave about 4. (The colder your water is, the longer you'll want to cook. Test times for your preferred done-ness and microwave settings. When done, you will have two perfectly poached eggs, which, if you don't want the soup, can be removed from the water and used for other purposes.) Add in 1/2 teaspoon of chicken bouillon base (I like to use Better-Than-Bouillon), and top with red pepper flakes and garlic powder to taste. Stir water to mix. Chop eggs and enjoy!
