16 uncooked lasagna noodles
1/2 pound bulk Italian sausage
1/2 pound sliced baby portobello mushrooms
1/4 cup chopped sweet onion
1 jar (24 ounces) tomato basil pasta sauce
1-1/2 teaspoons brown sugar
1-1/2 teaspoons fennel seed, crushed
1/2 teaspoon dried tarragon
1-1/8 teaspoons salt, divided
1/8 teaspoon crushed red pepper flakes, optional
1 package (3-1/2 ounces) sliced pepperoni
2-1/2 cups shredded part-skim mozzarella cheese
2-1/2 cups part-skim ricotta cheese
2 cups grated Parmesan cheese, divided
2 large eggs, lightly beaten
6 tablespoons minced fresh parsley, divided
3 tablespoons minced fresh basil or 1 tablespoon dried basil
1/2 teaspoon pepper

Steps:

  • Cook noodles according to package directions. , Meanwhile, in a Dutch oven, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain and transfer to a large bowl. Stir in the pasta sauce, brown sugar, fennel seed, tarragon, 1/8 teaspoon salt and pepper flakes if desired., In the same pan, cook pepperoni for 4-5 minutes or until lightly browned; remove to paper towels to drain., In another large bowl, combine the mozzarella, ricotta, 1 cup Parmesan, eggs, 4 tablespoons parsley, basil, pepper and remaining salt. , Drain noodles. Spread 1 cup meat sauce in a greased 13x9-in. baking dish. Spread 1/4 cup cheese mixture over each noodle; top with 3 or 4 pepperoni slices. Carefully roll up; place seam side down in prepared dish. Top with remaining meat sauce; sprinkle with remaining Parmesan., Cover and bake at 350° for 55-60 minutes or until bubbly. Sprinkle with remaining parsley before serving.

4 boneless skinless chicken breast halves (4 ounces each)
12 pepperoni slices
8 slices part-skim mozzarella cheese
1 can (15 ounces) pizza sauce

Steps:

  • Flatten chicken to 1/4-in. thickness. Place three slices of pepperoni and one slice of cheese on each. Roll up tightly; secure with toothpicks. Place in a greased 11x7-in. baking dish. Spoon pizza sauce over top. , Cover and bake at 350° for 35-40 minutes or until chicken is no longer pink. Uncover; top with the remaining cheese. Bake 5 minutes longer or until cheese is melted. If desired, broil a minute or two to brown cheese slightly.

1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Remove from the heat. Add the tomato sauce, mozzarella cheese and oregano. , Separate crescent dough into 8 rectangles, pinching seams together. 1/2 pound ground beef or turkey
1 small onion, chopped
3/4 teaspoon garlic salt

2 cups shredded mozzarella cheese, divided

Steps:

  • Cook noodles according to package directions; drain and rinse in cold water. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. 1/4 cup prepared pizza or 1/4 cup pasta sauce
1/2 cup shredded mozzarella cheese, divided
2 tablespoons finely chopped pepperoni
1 tablespoon olive oil
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450 degrees.
  • Generously coat a rimmed baking sheet with cooking spray.

4 slices sandwich bread
4 mozzarella cheese sticks or 1/2 cup shredded mozzarella cheese
12 small slices pepperoni (optional)
1 tablespoon unsalted butter
1/2 cup marinara sauce, warmed

Steps:

  • Cut the crusts off the bread. Using a rolling pin, roll out the pieces of bread until flat.
  • Place a cheese stick or 2 tablespoons of cheese on the edge of the bread closest to you. Place 3 slices of pepperoni, if using, on the bread above the cheese. Tightly roll up the bread, pressing the seam end to adhere.
  • Melt the butter in a sauté pan over medium heat. Cook the roll-ups seam-side down until golden, 1 to 2 minutes. Flip and cook until golden all over, 1 to 2 more minutes.
  • Cut each roll-up into pieces and serve with the sauce for dipping.

1 loaf italian bread dough or 1 loaf all purpose bread dough
1 lb lean ground beef or 1 lb turkey
1 teaspoon salt
1/2 teaspoon pepper
2 cups grated part-skim mozzarella cheese
1 teaspoon Italian herb seasoning
1 tablespoon fresh parsley, chopped
4 cups italian tomato sauce

Steps:

  • Thaw dough; roll it into 14 x 24-inch rectangle about 1/4 inch thick.
  • Brown ground beef or turkey; stir in remaining ingredients except Italian tomato xauce.
  • Spoon filling evenly onto dough, slightly pressing filling into dough.
  • Roll dough lengthwise like a jelly roll, and cut into 24 1-inch slices.
  • Treat 2 rimmed cookie sheets with nonstick spray; lay slices on sheets about 1 inch apart.
  • Preheat oven to 400°F.
  • Let roll-ups sit for 10 minutes.
  • Bake for 20-25 minutes or until golden.
  • Cool roll-ups and freeze in 4 1 gallon bags, 6 per bag.
  • Slip a 1 quart bag with 1 cup sauce into each bag of pizza roll ups.
  • To prepare, thaw roll-ups and warm them in a preheated 400°F oven for 10 minutes or put them frozen in the microwave; heat on high for about 2 minutes.
  • Serve with warmed Italian tomato sauce.

32 slices pepperoni
4 pieces mozzarella string cheese, cut in 1/2
garlic salt

Steps:

  • Unroll crescent rolls into individual triangles - should be 8 of them.
  • Sprinkle each triangle with garlic salt and Italian seasoning.
  • Lay 4 slices of pepperoni on each triangle.

All-purpose flour, for dusting
One 1-pound ball refrigerated pizza dough, at room temperature
2 packed cups baby spinach, roughly chopped
2 cups shredded mozzarella
3 cloves garlic, finely minced or grated
1/2 cup whole-milk ricotta cheese
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
Warmed marinara sauce, for dipping

Steps:

  • Preheat the oven to 400 degrees F. Lightly dust a baking sheet and work surface with flour.
  • Roll the dough into a rectangle about the size of the baking sheet (13 by 18 inches).
  • In a large bowl, combine the spinach, mozzarella and garlic. Toss to combine. Evenly sprinkle over the dough, leaving about a 1-inch border all the way around. Dot the mixture with the ricotta cheese and sprinkle with salt and pepper.
  • Roll the dough into a log, starting at a short end. Tuck any filling that may have fallen out back into the roll. Transfer the log seam-side down to the prepared baking sheet. Drizzle with olive oil and bake until golden brown and puffed, 25 to 30 minutes.
