PERFECT PINTO BEANS

Steps:
- Put the beans in a large bowl, cover with cold water and let soak overnight.
- Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

Gammy (as my mom, Barbara Galloway, is known around here) loves to cook and be creative. It's a trait that was passed down from her father. Pinto Bean Pie is one of her favorite recipes to make, especially when she's planning special holiday meals. - In a large bowl, combine the beans, butter and vanilla. Stir in the sugar and coconut. Add eggs; stir well. Pour into crust. Bake at 350° for 30 minutes. , Sprinkle with pecans; bake 15-20 minutes longer or until a knife inserted in the center comes out clean but moist. Cool on a wire rack. Serve with whipped topping if desired. Refrigerate leftovers.

You won't believe how delicious this is. I often prepare this for friends for "shock" effect. They always forgive me after the first bite. (then they ask for the recipe when their plate is clean...)

- Beat eggs with sugar, then blend in the milk, vanilla and butter.
- Combine the flour, salt and baking powder and stir into the egg mixture till well blended.
- Blend in the beans and turn into pieshell.
- Bake at 350 degrees till firm.
MY MOTHER'S SOUTHERN PINTO BEAN PIE
This was my Mother's recipe. I have made it, and really liked it.

Steps:
- 1. Cook 1/2 cup dried pinto beans in 3 cups of water 1 1/2 hrs. or til tender. Add 1/2 tsp. salt. I don't use any oil or shortening when cooking the beans.
- 2. Cream butter & sugar. Mix all ingredients together in a large bowl. Pour into 2 large pie shells. Bake @ 300 degrees for one hour.
PINTO BEANS WITH MEXICAN-STYLE SEASONINGS
Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

Steps:
- Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.
- Drain beans, return to pot, and pour in fresh water to cover; add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, reduce heat to low, and simmer for 3 hours.
- Stir cilantro and salt into bean mixture; simmer until beans are soft, about 1 more hour.
