This has been used as a Thanksgiving favorite in my family for years. We haven't figured out yet if it's a fruit salad or a dessert! It is rich and good.

QUICK CRANBERRY GELATIN SALAD
Since this tangy salad keeps well, I make it a day ahead for my Christmas menu. It's also a great choice to take to a holiday potluck - even people who aren't fond of cranberries think it's yummy. - Bring 1 cup water, cherry jello, sugar and cranberries to a boil. Simmer 10 minutes or until cranberries pop and soften.
- Add 1 cup cold water.
- Mix in apples and pineapple.
- Put in frig and chill overnight.
CRANBERRY SALAD (A.K.A. THANKSGIVING PINK STUFF)
My mother got this recipe from a dear family friend in the 1950's. No matter who in our family is making Thanksgiving dinner, you can bet this dish will be served. Note: the times indicated do not include refrigeration time. Cranberries from Wisconsin make this a Midwest U.S. regional recipe. (Also, I first enjoyed it in Missour - another fine Midwestern state).

- The day before serving, cook cranberries in water over low heat until soft.
- Add sugar and mash.
- Add chopped nuts.
- Stir, cover and refrigerate overnight.
- About 4 hours before serving, add the fruit cocktail.
- Just before serving, whip cream, add sugar and vanilla and whip until soft peaks form.
- Add bananas to fruit mixture.
- Gently fold whipped cream into fruit mixture until well blended.
- Serve immediately.
- Note: You can use Cool Whip instead of whipping the cream, but the flavor is so much better with the real thing!
THE PINK STUFF (CREAMY CRANBERRY SALAD)
My Aunt made up this recipe and my mom adapted it to have with our holiday family dinners. When my youngest nephew had it for the first time, he talked for weeks about "the pink stuff." So now that's the only name that it goes by.

- 1. Empty the cranberries and pineapple into a sieve and strain out the liquid. You may have to stir up the fruit and press on it to get all the liquid.
- 2. Put the liquid into a measuring cup and fill to 2 cups with water. Boil the liquid. and mix it with the two packages of Jello.
- 3. Allow the jello to partially set for about 45 minutes. It should not be hard, if you stick a finger in the jello it should come out coating you finger with no lumps.
- 4. About 15 minutes prior to taking the jello out of the fridge, mix the left over cranberries and pineapple with the apple chunks and walnuts.
- 5. In a separate bowl whip the cream cheese until it is easily stirred and them add the cool whip. Dump in the partially set jello and mix well. It's ok if there are cheese chunks it adds to the overall presentation.
- 6. Fold in the fruit and walnut mixture and transfer to a presentation bowl. (We put it in a beautiful blue pie plate.) Refrigerate for at least 3 hours until set, but it always tastes better if you make it the day before.
CRANBERRY SAUCE SALAD
I always make this frozen salad for Thanksgiving dinner. I don't care for plain cranberry sauce and this recipe is a change from that. It looks as if it would be a sweet salad or dessert, but the mayonnaise adds a tangy taste and cuts the sweetness. Cooking time is freezing time.

- Soften cream cheese.
- Blend in mayonnaise and sugar.
- Add fruit and fold in whipped cream.
- Pour into 8X8 inch pan, cover and freeze about 6 hours.
- Let stand at room temperature for about 30 minutes before serving, or until it can be cut or scooped.

CRAN/RASPBERRY JELLO SALAD
Forget that pale pink stuff with canned fruit cocktail suspended in it. This is grownup jello. I usually make it at Christmas time, but it would be fine any time with chicken or turkey, or even with ham.

- Be sure that raspberries and pineapple are well drained. If too much liquid is left in them, the jello will not set up.
- Mix the jello according to package directions, using the juices from the drained fruits as part of the cold liquid.
- Stir in the remaining ingredients, breaking up the cranberry sauce well.
- Put into a 9x13 pan and chill until set (Because of the amount of fruit, this takes awhile to set. Leaving it overnight is best).
