PINEAPPLE-BASIL SMOOTHIE

Pineapple-Basil Smoothie image

I'm not sure that I would order this just based on the name. But believe me, you'll be pleased by this herbal concoction. Pineapple has so much sweetness and flavor on its own, and it marries well with the peppery, anisy basil. Very little else is required (no banana in this smoothie). I like to use kefir, but yogurt will work too. Pistachios and chia seeds bulk up the drink nicely, and the pistachios contribute to the pale green color.

GRILLED PINEAPPLE WITH BASIL AND MINT

Grilled Pineapple With Basil and Mint image

My favorite thing thing to make on the grill is pineapple. Grilling fresh pineapple brings out the sweetness of it. This recipe really takes it up to another level in flavors. It is fancy enough for guest and easy enough to make anytime. I like it with spiced rum too.

Yield 2 serving(s)

Number Of Ingredients 7

1 medium pineapple
2 tablespoons brown sugar
2 tablespoons unsalted butter, softened
1 tablespoon dark rum
5 fresh mint leaves, finely sliced
10 fresh basil leaves, finely sliced
vanilla ice cream, to serve

Steps:

  • Cut the tops off the pineapples and set aside some of the leaves for garnishing later. Carefully peel of the skin with a serrated knife and cut off the bottoms. Slice into 4, 1 inch thick circles, then with an apple corer, remove the core of each round of pineapple.
  • Together place the brown sugar, butter, mint, basil into a small saucepan and melt together. Bring to the boil for 1-3 minutes or until syrupy then set aside.

PINEAPPLE AND BASIL SORBET

Pineapple and Basil Sorbet image

I had an ice pop with this combination at the Pecan Street Festival in Austin, Texas, and thought it was the most amazing flavor! I recreated the recipe at home--who knew basil paired so well with pineapple?! An alternative is after blending everything, pour into ice pop molds and enjoy!

Yield Makes 4 servings

Number Of Ingredients 15

2 (1 1/4-lb) live lobsters
1/2 teaspoon salt
1/4 teaspoon black pepper
2 firm-ripe baby pineapples with leaves, halved lengthwise
1/4 cup peanut or vegetable oil
1 garlic clove, smashed
2 tablespoons fresh lime juice
1 tablespoon Asian fish sauce
1 tablespoon sugar
1 small shallot, thinly sliced
1 red bell pepper, cut into 1/4-inch dice
1 teaspoon minced fresh serrano chile, including seeds
3 tablespoons chopped fresh mint
2 tablespoons chopped fresh basil
Special equipment: a serrated grapefruit knife

Steps:

  • Plunge lobsters headfirst into an 8-quart pot of boiling salted water . Loosely cover pot and cook lobsters over moderately high heat 9 minutes from the time they enter water, then transfer with tongs to sink to cool.
  • Remove meat from claws, joints, and tails. Discard (or save for another use) tomalley, any roe, and shells. Cut meat into 1/2-inch pieces and sprinkle with salt and pepper.
  • While lobsters are cooling, cut pulp in 1 or 2 large pieces out of each pineapple half with grapefruit knife, then discard core and cut pulp into 1/2-inch pieces. Scrape juice and any remaining pulp from pineapple shells with a spoon (to form 1/4-inch-thick shells) into a fine sieve set over a bowl and drain until you have 2 to 3 tablespoons juice, about 2 minutes. Discard solids.
  • Cook oil and garlic in a small saucepan over moderately low heat, stirring, until garlic is golden, 2 to 3 minutes, then discard garlic. Add garlic oil to pineapple juice along with lime juice, fish sauce, and sugar, whisking until sugar is dissolved. Add shallot, bell pepper, pineapple pieces, chile, and herbs. Toss lobster with pineapple mixture and serve mounded in pineapple shells.

PINEAPPLE-RHUBARB 'SALAD' WITH BASIL CREAM

Pineapple-Rhubarb 'Salad' With Basil Cream image

This dish is more like a compote than a soup, but unlike most compotes, the fruit is cooked as little as possible so the flavors and textures remain distinct. The rhubarb must be cut very small to retain some of the crunch, but cook all the way through. Don't be tempted to cook the pineapple at all as the dessert would lose its fresh flavor if you did.

Provided by Michel Richard

Categories     dessert

Time 20m

Yield 4 servings

Number Of Ingredients 5

5 tablespoons packed brown sugar
2 cups finely diced (1/4 inch) peeled rhubarb (about 3 stalks, 10 inches long)
1 rounded cup finely diced (1/4 inch) ripe fresh pineapple
20 large basil leaves
About 3/4 cup good quality vanilla ice cream, slightly softened

Steps:

  • Place a medium sauté pan over high heat. Melt sugar, and add rhubarb. Sauté rhubarb for about 30 seconds, then reduce heat to low. Cover, and cook until rhubarb is softened but still firm, 2 to 3 more minutes. Transfer rhubarb to a mixing bowl, and add pineapple. Set aside, or cover and refrigerate for up to 24 hours; bring to room temperature before serving.
  • Set aside a bowl of ice water. Bring a small pan of water to a boil, and add basil leaves. Blanch leaves for 30 seconds, then transfer leaves to ice water to stop the cooking. In a blender, combine ice cream and basil leaves. Purée until mixture is smoothly blended. If necessary, freeze until mixture is thick but can still be poured from a spoon.
  • To serve, divide fruit mixture equally among four 1/2-cup serving dishes. Top each with a spoonful of basil-ice cream mixture, and serve immediately.
