If you are searching for a winning stuffing recipe, I know that I am always looking for a great one....well, here's one that I believe to be a real winner, wow, does it have a wonderful flavor, I think that the addition of pineapple just gives it the right amound of tanginess...a great combo of flavours in this stuffing recipe....the ultimate side dish along side a turkey or ham dinner.

1 (12 ounce) package pork sausage
1 cup butter or 1 cup margarine
1 1/2 cups finely chopped celery
1 cup chopped onion
3 -4 cloves fresh minced garlic (optional)
8 cups fresh white bread, torn into small pieces
1 1/2 cups finely chopped pineapple (I use fresh pineapple, but chunks or rings can be used, just drain well)
1 cup dried cranberries
1 1/4 cups chopped toasted pecans
1/3 cup chopped fresh parsley
1 teaspoon dried oregano, crushed
1 teaspoon sage
salt and pepper

Steps:

  • Set oven to 350 degrees.
  • In a large skillet, over med-high heat, cook pork until browned; drain, set aside.
  • In another skillet, melt butter.
  • Stir in celery, onion and garlic (if using).
  • Cook about 10 minutes, or until veggies are tender.
  • In a bowl, stir together the bread, cooked sausage, celery, onion, pineapple, cranberries, pecans, parsley, oregano, sage, salt and pepper.
  • Pour into a lightly-greased 3-quart casserole dish; cover the casserole.
  • Bake for 30-35 minutes, or until heated through.

Got this from a friend about 40 years ago. We use it quite often for guest breakfasts, brunches and even camping. It is a hit with children.

1 lb sausage
1 (20 ounce) can pineapple chunks
1/4 cup brown sugar
1 (7 1/2 ounce) box cornbread mix or 1 (7 1/2 ounce) box corn muffin mix
1/3 cup 2% low-fat milk
1 large egg
honey or molasses

Steps:

  • Pan fry sausage to desired doneness.
  • Drain grease.
  • Use a small amount of the grease to grease the bottom of a 9x13 baking dish.
  • Spoon sausage over bottom to the dish and arrange the drained pineapple over it.
  • Sprinkle brown sugar over all.
  • Prepare corn bread or muffin mix as directed on box and spread over ingredients in dish.
  • Bake at 400°F for 25 to 30 minutes.
  • Let stand for 5 minutes.
  • Cut into serving pieces and drench with syrup.

1/3 cup all-purpose flour
2 cups shredded cheddar cheese
1 can (20 ounces) unsweetened crushed pineapple, drained
1 can (20 ounces) unsweetened pineapple chunks, drained
TOPPING:
2-1/2 cups crushed Ritz crackers (about 60 crackers)
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, mix sugar and flour; stir in cheese. Stir in both cans of drained pineapple., Transfer to a greased 1-1/2-qt. baking dish. In a small bowl, mix crackers and butter. Sprinkle over top. Bake, uncovered, 30-40 minutes or until topping is brown and cheese is melted. Let stand 10 minutes.
