Homemade & Better than Store bought relish. Use on hot dogs Hamburgers or in Salads just as you would any other sweet relish. Making this relish is easier than you might think. Even for a beginner. You will need a food chopper, Makes this recipe so easy. This recipe is also a Clipping found in a Newspaper long ago,I am guessing possibly in the 70's as some of the recipes in the box were from the 70's, I have no idea for sure. I have made this in the past and its too good not to share. The red peppers gives it more Color. The one in the picture was made with the green bells and only a few red bells as my garden was plentiful in the green peppers last year, than the red ones.

Steps:
- Peel Cucumber & Halve Lengthwise, Scoop out seeds. Wash Peppers & remove Seeds and stems. Peel Onion and Cut in 1/2.
- Put Cucumber, Pepper and onions thru a food chopper using the Coarse Blade. ( see the pretty colors)
- PLace in big bowl. Add Salt & let stand overnight. Next Morning Drain thoroughly.
- Add remaining ingredients, Cook 30 min stirring occasionally.
- Pack into Hot Jars and seal. You have Just made a delightful batch of Sweet relish. Makes about 8-10 1/2 pint jars
