PINEAPPLE STUFFING
A scrumptious pineapple and bread cube stuffing that is great as a side dish with ham. I often make this dish for the holidays.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch baking pan.
- In a mixing bowl, cream margarine and sugar. Beat in the eggs one at a time, then add the pineapple and bread cubes.
- Bake in a 350 degree oven for one hour. Let sit a few minutes to firm up before serving

- Preheat oven to 350 degrees F (175 degrees C). Grease a medium-sized casserole dish.
- In a mixing bowl, cream together butter and sugar. Beat in eggs one at a time. Stir in cinnamon and nutmeg. Add bread and crushed pineapple into the mixture. Transfer mixture to the prepared baking dish.
- Bake in the preheated oven until bubbly and lightly browned, about 60 minutes.

PINEAPPLE GLAZED EASTER FRUIT SALAD
This is delicious! Love the dressing, and so, so easy...I always double the recipe and sometimes I add coconut as well..enjoy!

- Combine the egg, sugar, flour and pineapple juice in a small saucepan; bring to a boil, stirring constantly until thick. Cool completely. Mix together the pineapple chunks, oranges, sliced banana and marshmallows in a medium bowl.
- Pour cooled dressing over fruit mixture and stir to coat evenly. Chill for at least 1 hour before serving.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in pineapple. Gently fold in bread cubes. , Spoon into a greased 2-qt. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until a thermometer reads 160°. Serve warm.
