These pickled peppers are great in salads or to serve alongside a meat dish. These can be made less spicy by removing the seeds from the peppers.

- Place the banana peppers, jalapeno peppers, and serrano peppers into a large pot. Add the vinegar, water, garlic, and onion. Bring to a boil, then reduce heat to medium-low, and simmer for 5 minutes.
- Ladle peppers into sterile jars, and fill to the top with the liquid, leaving 1/4 inch headspace. Tap jars on the counter to remove air bubbles. Place two piece lids on the jars.
- Place jars in the rack of a large, canning pan, and fill with enough water to cover the jars completely. Bring to a boil, and boil for 10 to 15 minutes. Refrigerate jars after opening.

PICKLED HOT CHERRY PEPPERS
Quart-size jars work best for packing a lot of peppers. Use the pint-size jar to put up a small batch to serve over cheese.

- Trim cherry pepper stems. Divide peppers, garlic, bay leaves, and peppercorns among 2 quart-size and 1 pint-size sterilized glass jars.
- Bring vinegar, water, sugar, and salt to a simmer in a medium saucepan over medium heat. Cook until sugar dissolves. Pour hot pickling liquid over peppers, leaving 1/4-inch headspace at tops. Can in water bath for 15 minutes.
PICKLED STUFFED CHERRY HOT PEPPERS
One day my hubby and I were at one of our local grocery stores which has a lot of nice things on their salad bar. I saw these and tried them and wow they were amazing but so expensive. So I took one home and took it a part and this is what I came up with. We grew Cherry Hot Peppers this year so that even made them cheaper!

- 1. Combine the oil, garlic, vinegars, oregano and salt in a small sauce pan. Bring to just a simmer and simmer for 2 minutes and turn off the heat. This will help the flavors marry. Set aside to cool.
- 2. In the meantime take a small knife, cut the top off as you would a pumpkin. Remove the seeds by either using your knife or a small measuring spoon.
- 3. Now cut a cube of provolone and a piece of the prosciutto to the size of your hot cherry pepper. This will most likely change for each pepper depending on their size and shape.
- 4. Wrap the prosciutto around your cubed cheese and place inside the cherry pepper. Continue with all the remaining peppers.
- 5. Place your stuffed peppers in a container which has a secrued lid. Pour the cooled vinegar and oil mixture over your peppers. If you do not have enough liquid you can always add additional olive oil. My peppers were a little small so I didn't have to add any liquid.
- 6. Put the lid on and gently tip your container upside down af few times. Place in the frig for at least 24 hours the longer the better as the flavors will improve!

- Wash hot peppers; drain.
- Pack peppers into hot, sterilized pint jars, leaving 1/2" headspace.
- If desired, place 1 head fresh dill or 1 1/2 tsp. dill seed in each jar.
- In saucepan, combine water, vinegar, salt, sugar, garlic, and dried pepper. bring to boiling.
- Pour hot pickling liquid over peppers, leaving 1/2 inch headspace.

PORK AND FENNEL SAUSAGE SANDWICH WITH PICKLED HOT PEPPERS, BROCCOLI RABE AND PROVOLONE

- Preheat the oven to 400 degrees F. Chill a large metal bowl and all the grinder parts until very cold.
- For the sausage: Assemble the grinder with the chilled parts using the large-holed grinding plate. Combine the pork, garlic, fennel pollen, salt, crushed red pepper flakes, fennel seeds and Parmesan in the chilled metal bowl. Pass the meat through the grinder back into the chilled metal bowl. Switch to the medium-size plate and pass the ground meat through again. Add 1/4 cup ice water and quickly knead the meat mixture together with your hands.
- Fit the horn (stuffing attachment) onto the grinder. Grease the horn with oil and gently slide the hog casing onto the attachment, leaving about 2 inches at the end. Add meat to the hopper and turn the grinder on. Let the air run through the casing until the meat starts to come out. Once you see the meat, turn the machine off and knot the casing end. Turn the machine back on and keep feeding the meat mixture into the machine. Using your other hand, guide the casing off the horn as it fills. Continue until you run out of casing, leaving a short tail on the end.
- Form the filled casing into links by gently pinching and then twisting it. The sausage links should be equal in size, 3 to 4 inches each. Tie each twist with twine and puncture the links all over with a teasing needle or sausage pricker. You should have 8 to 10 links total.
- For the toppings and assembly: Bring a large pot of lightly salted water to a boil. Blanch the broccoli rabe until bright green, about 30 seconds then use a slotted spoon or spider to transfer to a bowl. Leave the water on the heat for the sausages. When cool enough to handle, Squeeze out the excess moisture in the broccoli rabe and roughly chop. Set aside.
- Reduce the blanching water to low heat so it is hot, but not bubbling. Carefully drop the sausages into the hot water and poach for 10 to 12 minutes, flipping halfway through, or until they reach an internal temperature of 150 to 156 degrees F. Remove from the poaching liquid and place on a baking sheet.
- Heat 2 tablespoons olive oil in a medium saute pan and add the onions with a pinch of salt. Sweat the onions until translucent, 5 to 7 minutes, then add the cherry peppers and broccoli rabe. Toss everything together and add a splash of the pickled pepper brine. Season to taste with salt. Remove to a bowl and wipe out the saute pan.
- Heat 1 tablespoon of olive oil in the same pan over medium heat and brown sausages on both sides, 3 to 4 minutes per side. Lower the heat if they start to burst.
- Open the hoagie rolls and use your fingers to scoop out some of the bread from the top part of the roll. Brush the cut sides of each roll with olive oil and place open faced on a baking sheet. Toast in the oven until warmed through until lightly golden, about 5 minutes.
- Lay provolone slices on the toasted rolls and melt in the oven, 3 to 4 minutes. Cut the sausage links apart, remove the strings and slice on a bias. Lay the slices over the melted provolone and top with the broccoli rabe-pepper mix and more provolone. Transfer back to the oven to heat through and continue melting cheese, 3 to 5 minutes.
PICK-A-PEPPER PASTA (BUCATINI WITH HOT AND SWEET AND PICKLED PEPPERS SAUCE)

- Heat a deep skillet or Dutch oven with the EVOO, 2 turns of the pan, over medium-high heat. Add the guanciale and brown until lightly crisp. Add the garlic, bell pepper, cubanelles, onions and fresno peppers, and cook until tender, 7 to 8 minutes. Add the pickled peppers and a big splash of their juice, about 2 tablespoons, and deglaze the pan - hold your head back or you'll really clean out your sinuses. Add the tomatoes and crush up a bit, then stir in the passata and basil. Simmer to thicken 30 minutes or so. Add the parsley, season with salt and pepper. Cool and store for a make-ahead meal. Reheat over medium flame.
- To serve: While the sauce heats, bring a large pot of water to a boil. Salt the water and cook the pasta to al dente. Reserve a ladle of the starchy cooking water and drain. Toss the pasta with the butter and half the sauce. Add a little starchy water if too thick. Serve the pasta in shallow bowls, topped with the remaining sauce and pecorino cheese.
HOT ITALIAN SAUSAGE PANINI WITH PICKLED PEPPERS

- In a large pot, combine the white vinegar, water, red pepper flakes, salt, sugar, and garlic and bring to a boil over medium heat. Once boiling, remove the pot from the heat and add the sliced peppers and onions. Let the ingredients pickle at room temperature for about 30 minutes. The peppers will last up to 1 month in a re-sealable container that has been stored in fridge.
- Preheat an outdoor grill or grill pan over medium-high heat. Arrange the butterflied sausages on the grill, cut side down. Cover the sausages with a sheet pan and weigh it down with a tea kettle filled with water or a heavy pan. Grill for 4 to 5 minutes per side.
- Slice the rolls in half and brush them, inside and out, with the olive oil. Layer a slice of provolone over the bottom half of each roll. Add the cooked sausages to the cheese, top with some of the pickled peppers and onions, then finish with 3 pieces of shaved Parmesan and, finally, cover with the top half of each roll. Put the sandwiches in a panini press, 2 or 3 at a time, and cook until the bread is crisp and cheese is melted, about 4 to 5 minutes. If you do not have a panini press, grill the sandwiches in a large skillet over medium heat and put a cast iron or heavy-bottomed pan on the sandwiches to flatten. Cook for 3 minutes per side. Transfer the sandwiches to a serving platter and serve.
REFRIGERATOR PICKLED BANANA OR HOT PEPPERS
When we're having a good pepper season in the garden there's way more than we can eat. Pickling them not only extends their life, it's a whole different flavor than fresh. The brine from the hot ones is great sprinkled over vegetables. I use this for both hot peppers and mild ones like banana peppers.

- 1. This is my all purpose pepper brine. I pickle peppers as I see enough in the garden. I may do a qt of banana and a pint each of jalapeno and serrano. How far this brine will go depends on how tightly you've packed the peppers. It's easy enough to make more if you need more for what you have. 2 qts is just a general guideline.
- 2. Wash peppers, remove stems, and make 3 or 4 slits in each one. Pack into jars. Add one whole garlic clove to each jar.
- 3. Place vinegar, water, sugar and salt in a saucepan and bring to a good boil. We like our peppers a little soft, sort of like the pepperoncini peppers you buy. To get them soft, pour the boiling mixture over them. If you want more crispy peppers, cool it first.
- 4. Your peppers will release air and the level of the brine may go down. Top off with more brine and put on the tops.
- 5. Once jars are cool store in the refrigerator. Try to wait at least 10 days before eating.

- Seed, stem and slice peppers, or leave whole if small.
- If you're leaving whole, cut 2 small slits in each pepper or you're going to have exploded peppers.
- Combine vinegar and water and heat to a simmer-do not boil.
- Pack peppers tightly into jars, pour hot vinegar/water over peppers leaving 1/2 inch head space.
- Add salt-to taste. Process in a boiling water bath for 15 minutes.
- You can add 1 clove of garlic to each jar if you like.

PRESERVED PICKLED HOT JALAPENO PEPPERS
Great for sandwiches, nachos, or just as a relish to pass on the side. PLEASE wear rubber gloves when working with hot peppers. If you don't you will be very sorry :( I put 1/4 teaspoon of Ball Pickle Crisp in each jar. This helps to keep the peppers from becoming mushy even though you'll be processing them in a boiling water bath canner. The Food.com "brain" doesn't know what Pickle Crisp is, so it won't let me put it in the ingredient list. You can still make the peppers without the Pickle Crisp, but they won't be as firm as they would be with it. If you want the peppers to be crisp/crunchy, see Recipe #459676 . Pickling lime is the only way to keep the peppers really crunchy if you are going to process them in a boiling water bath. This recipe makes about 4 pint jars.

- Rinse the jalapeno peppers in cool water.
- Trim the stems to 1/2" and cut 2 small slits in each pepper, OR cut into 1/4" slices.
- Divide the habanero slices, onion slices, garlic, oregano, bay leaves and peppercorns evenly between your 4 sterilized pint jars. Add 1/4 teaspoon Pickle Crisp to each jar.
- Pack the peppers on top of these seasonings in the jars, leaving 1 inch headspace.
- In a 2 to 3 quart stainless steel saucepan, combine the vinegar, water, sugar and salt and bring to a boil. Stir until the sugar and salt are completely dissolved.
- Ladle this brine into the jars, covering the peppers and leaving 1/2 inch headspace.
- Using a bubble freeer or plastic knife, remove any air bubbles.
- Wipe the jar rims and threads with a clean, damp cloth. Cover with hot lids and apply screw rings.
- Process pint jars in a water bath for 10 minutes.

PICKLED WHOLE HOT PEPPERS

- Rinse the peppers and trim stems to about 1/4 inch. Divide garlic and spices among 4 pint mason jars. Add the peppers. Bring to boil in saucepan all remaining ingredients except olive oil. Pour hot liquid over peppers, leaving slightly more than 1/2 inch headspace, then pour 1 tablespoon olive oil into each jar. Close with two piece caps. Process for 10 minutes in boiling water bath. Store in cool, dry, dark place for three weeks or more before eating.

- Preheat oven to 500 degrees.
- Using a sharp knife, split peppers lengthwise, but do not cut all the way through peppers, leaving them whole. Place in a large bowl and drizzle with olive oil; toss to combine. Transfer to a baking sheet and roast until slightly softened, about 10 minutes. Transfer to a large bowl; set aside.
- Combine vinegar, 1 cup water, salt, sugar, garlic, peppercorns, thyme, and bay leaf in a medium saucepan. Bring to a boil over medium-high heat. Pour vinegar mixture over roasted peppers and let stand at room temperature until cool. Cover and refrigerate at least 3 days and up to 4 months before using. Bring to room temperature before eating.
PICKLED HOT CHERRY PEPPERS OVER CHEESE
We used burrata cheese, which is a solid piece of mozzarella filled with creamy mozzarella curds. It can be found at specialty-food stores and some supermarkets. Sliced fresh mozzarella also works well.

PICKLED HOT PEPPERS
My mother and my mother in law used to make Hot Pepper Pickled. It is great on turnip greens and dry beans with corn bread on a cold winter day. My husband LOVES Pickled Hot Peppers, he calls it "pepper saltz". They would put banana pepper, small green tomatoes, and other peppers in theirs. Kind of like the end of the season left...

- 1. Wear plastic gloves to handle hot peppers. Wash Peppers and green cherry tomatoes, leave green tomatoes whole. Leave small peppers whole with two slits in each pepper. Core large peppers, removing seeds and cut into strips. If using Jalapeno pepper core and remove seeds, cut into two pieces.
- 2. It's easier for me if I turn the jars side ways to begin packing, turn right side up when enough peppers are placed in jars. Pack tightly into clean, hot, sterilized jars. (I place clean jars on a large cookie sheet inside a preheated oven set on 200 degrees. Remove one at a time with a pot holder.)You will need to leave 1/2 inch headspace in each jar.
- 3. Have vinegar, water, salt, and (sugar if you desire) ready on stove. You will bring it to a boil and turn down to simmer. Pour hot pickling solution over peppers, leaving 1/4 inch headspace.
- 4. Remove air bubbles by inserting a knife and gently turn in each jar. Readjust headspache to 1/4 inch. Wipe off jar rims with a clean, damp cloth.
- 5. Have Jar lids and rings in hot, simmer water in a pot on stove. Use a canning tool that has a little round magnet in the end to pick up flats and rings. Adjust to firm tightness on each jar. A popping noise will mean they have sealed. I usually place a towel over hot jars to hold in the heat, they will seal easier. I always make mine in quart jars. Store 5-6 weeks before opening.
