Low Carb Biscuts & Gravy image

Soft, cheesy biscuits topped with Southern style creamy gravy for only 3 net carbs for 1 biscuit and 1/6th of the gravy, not bad at all!

BISCUITS
1/4 cup(s) melted butter
4 large eggs
1/3 cup(s) coconut flour
1/4 teaspoon(s) salt
1/4 teaspoon(s) baking powder
1 cup(s) shredded cheddar cheese
SAUSAGE GRAVY
1 pound(s) bulk breakfast sausage
1 cup(s) chicken broth
3/4 cup(s) heavy cream
1/2 teaspoon(s) xanthan gum
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper

Steps:

  • Preheat oven to 400. Liine a baking pan with parchment, silicone baking mat, or spray lightly with cooking spray. Set aside.
  • To make biscuits, combine all ingredients in a large bowl and stir to combine. Don't overwork dough. Scoop 3 T. dough onto prepared pan with an ice cream scoop or large spoon. Makes 9 biscuits.
  • Bake biscuits in oven for 15 minutes, or just until golden brown on top, while making gravy.
  • To make sausage gravy, in a large skillet, brown and crumble the sausage over medium-high heat until cooked through. Add the chicken broth, cream, xanthan gum and stir. Bring to a boil and reduce heat to low. Continue to cook until gravy is thick. Season with salt and pepper. Remove from heat. Serve over split biscuits. 1 biscuit and 1/6th of gravy is 3 net carbs each.
