THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

Steps:
- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

PERFECT BLUE AGAVE MARGARITA
A very simple and refreshing margarita made with silver tequila, fresh limes and blue agave nectar. Blue agave nectar is a very light and natural sweetener made from the blue agave plant. You can find it at your supermarket (Whole Foods/Sprouts) or online (Amazon). No need for additional sweeteners, triple sec or anything else. Just pure and simple and very smooth. My wife, who hates margaritas on the rocks, loves this mix.

- To salt-rim the glasses, rub a cut lime around the rim of each of 4 stemmed goblets. Fill a saucer with salt. Dip goblet, upside down, into salt. Refrigerate goblets until ready to use.
- Fill blender three-quarters full of ice cubes. Pour lime juice, tequila, and Cointreau over ice. APPLEBEE'S PERFECT MARGARITA
After years of searching for the recipe, I think I finally found it. I found it at cdkitchen.com (Recipe # 75842). If you can't find simple syrup at the liquor store, you can eaily make it at home. If you have a BevMo near you, they sell it (acording to their website)but it is $5 for 12 ounces so making it at home is cheaper. Some recipes say to use equal parts sugar and water and others say to use 2 parts sugar / 1 part water. So feel free to experiment, or just use 1.5 parts sugar and 1 part water and that will probably work. To make: Pour water into saucepan. Add sugar. Bring to a boil, stirring occasionally. Reduce heat and continue stirring until the sugar is completely dissolved. It should be smooth; no clumps. Remove from heat and allow to cool to room temperature. Bottle it and store in fridge.

- Put into blender: 1 - 6 oz. can frozen limeade (Minutemaid®, we've found, has a lot of pulp) Using the same can the limeade came in as a measuring device, add a little over ½ of the can Triple Sec (60 proof). Vary as to your taste - more Triple Sec will make it sweeter; less than ½ can will make it more tart. Again, using the limeade can, fill the can slightly less than half full with gold tequila and pour into the blender. This measure can also be adjusted for your taste (or tolerance for alcohol). (If the 6 oz. can of limeade is not available, you can use the 12 oz. one and just pour up half of the blended limeade, tequila and Triple Sec mixture (before the ice is added) for use in a later batch. If that use is to be at a later date, just pour it up into an appropriate sized container and put it in the freezer.) Blend with enough ice to make 40 oz. If you like salt in your margaritas, but don't like the salt shower in your beard or upon your chest/bosom you can add the salt directly into the blender. The salt tempers the harshness of the tequila and the sourness of the lime. The 6 oz. can (or half the 12 oz. can) makes cocktails for 4 or servings for 2 if you have it with a lot of nachos - and don't plan on driving the rest of the evening!

- The night before, hull and cut up the strawberries into small pieces. Put them into a large pitcher with the tequila. At least a couple of hours before, in a small saucepan bring to a boil the sugar, one cup of water, and the lime zest. Once the sugar is dissolved (which it should be by the time the water boils), remove from heat and let cool for for a few minutes. The amount of sugar is a guideline, it depends on how sweet you like your limeade and how tart your particular limes are. Place a strainer over a bowl, or wide-mouthed serving container, and pour the sugar syrup through it, straining out the lime zest. Chill.
