2 tablespoons cornstarch
2 cups cold water
4 tablespoons soy sauce, divided
1 bunch broccoli, chopped
3 medium carrots, julienned
2 tablespoons canola oil, divided
1 pound beef top sirloin steak, cut into thin strips
3 garlic cloves, minced
1/2 teaspoon pepper
2 medium green peppers, cut into strips
2 medium sweet red peppers, cut into strips
2 medium onions, halved and sliced
1 yellow summer squash, sliced
1-1/2 cups salted cashews
Hot cooked rice

Steps:

  • In a small bowl, combine the cornstarch, water and 2 tablespoons soy sauce until smooth; set aside. In a very large skillet or a wok, stir-fry broccoli and carrots in 1 tablespoon oil until vegetables are crisp-tender. Add the beef, garlic, pepper and remaining soy sauce; stir-fry until meat is no longer pink. Remove and keep warm. , In the same pan, stir-fry the green and red peppers, onions and squash in remaining oil until crisp-tender. Return beef to the pan. , Stir cornstarch mixture and gradually add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cashews. Serve with rice.

2 pounds stewing beef, cut into 1-inch pieces
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup all-purpose flour
2 tablespoons oil
1 tablespoon butter
2 large red bell peppers, seeded and cut into chunks
2 large yellow bell peppers, seeded and cut into chunks
1 large green bell pepper, seeded and cut into chunks
1 large potato, cut into chunks (optional)
1 large yellow onion, cut into chunks
3 cloves garlic, minced
5 cups beef broth
½ cup dry red wine
⅓ cup tomato paste
1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
1 teaspoon sweet paprika powder
1 teaspoon crushed whole peppercorns
1 bay leaf

Steps:

  • Sprinkle the cubes of beef with the salt, pepper and flour, toss briefly to thoroughly coat the beef.
  • Heat the oil and butter in a Dutch oven over medium-high heat. Once hot, add the beef, a few cubes at a time so as to not overcrowd. Brown the beef on all sides and transfer to a plate.
  • Add the bell peppers, onions and garlic to the Dutch oven and cook for 5 minutes until softened, scraping up the browned bits from the bottom of the pan. Add the red wine and bring to a rapid boil for 2 minutes.
  • Return the beef to the Dutch oven with the remaining ingredients. Bring the stew to a boil, reduce the heat to low and simmer, covered for 90 minutes until the beef is fork tender.
  • Note: This stew is even better the next day.

2 tablespoons cornstarch, divided
4 tablespoons dry sherry or beef broth, divided
4 tablespoons soy sauce, divided
1 garlic clove, minced
1/2 to 1 teaspoon crushed red pepper flakes
1 pound beef top sirloin steak, thinly sliced
1/2 cup cold water
3 tablespoons canola oil, divided
1 green pepper, sliced
1 sweet red pepper, sliced
Cooked rice or chow mein noodles

Steps:

  • In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoons sherry, 2 tablespoons soy sauce, garlic and pepper flakes. Add beef and toss to coat. Set aside. , In another bowl, combine water with remaining cornstarch, sherry and soy sauce. Set aside. , In a wok or skillet, heat 1 tablespoon oil on medium-high. Add green and red peppers; stir-fry 3 minutes. Remove peppers to a platter., Add remaining oil and half of the beef; stir-fry until no longer pink. Remove and stir-fry remaining beef., Return peppers and beef to pan. Stir cornstarch mixture and add to pan; bring to a boil, stirring constantly. Cook 1 minute or until thickened. Serve with rice.

Beef and pepper stir-fry, seared over super high heat, is an easy, delicious weeknight dish. Add this beef and pepper stir fry to your weeknight rotation!

12 ounces flank steak ((sliced into thin strips))
¼ teaspoon baking soda ((optional tenderizer))
2 teaspoons soy sauce
½ teaspoon sesame oil
1 tablespoon cornstarch
1 teaspoon vegetable oil
2 tablespoons oil
3 cloves garlic ((sliced))
8 long hot green peppers ((de-seeded and julienned into 3-inch/8cm strips))
1 long hot red pepper ((de-seeded and julienned into 3-inch/8cm strips))
1 tablespoon Shaoxing wine
½ teaspoon salt
½ teaspoon sugar
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1/8 teaspoon white pepper
¼ cup chicken stock ((optional))

Steps:

  • Add all the marinade ingredients to the beef in a bowl, mix well, and set aside for 30 minutes at room temperature.
  • When you're ready to cook, place a wok over high heat until it's almost smoking, then add the oil. Sear the beef until it's just browned but still a little rare. Turn off the heat while you transfer the beef to a separate bowl. Leave any oil/fat in the wok.
  • Heat the wok back up over medium-high heat and add the garlic and peppers. Stir-fry for 20 seconds, then spread the Shaoxing wine around the wok to de-glaze it.
  • Stir-fry for another 20 seconds and add the beef back to the wok along with any juices from the bowl. Add salt, sugar, light soy sauce, dark soy sauce, and white pepper. Turn the heat back up to high and stir-fry for another 1 to 2 minutes, or until the peppers turn darker.
  • If you like more sauce, add the chicken stock to further de-glaze the wok and reduce the liquid slightly. The cornstarch from the marinade will help thicken the sauce. Plate and serve immediately with rice.

Stuffed Bell Peppers With a Savoury Cashew Sauce image

Oh, this is just delcious! A vegetarian delight! I have found out that the Africans cook alot with peppers and frequently stuff them with rice and/or grains.

4 medium red peppers
3 tablespoons olive oil
1 medium onion, peeled and chopped
3 garlic cloves, peeled and crushed
6 ounces long grain brown rice (1 cup)
2 cups vegetable stock (or chicken)
1 pinch turmeric
1/2 lemon, juice of
2 ounces frozen peas, defrosted
3 medium tomatoes, chopped
2 tablespoons black olives, sliced and pitted
2 tablespoons fresh basil leaves, chopped (or 2 tsp. dried)
salt & freshly ground black pepper
1 small onion, peeled and roughly chopped
2 teaspoons olive oil
3 ounces cashew nuts, ground
1 vegetable bouillon cube
1/2 cup water

Steps:

  • Pre-heat the oven to 400* F. Cut-the tops off the peppers and save. Remove the seeds. Simmer the pepper bases in water for 5 minutes to soften, then drain and refresh in cold water. Use 1 tbls. of olive oil to oil an ovenproof dish and brush the pepper bases and tops.
  • Heat the remaining oil in a medium saucepan. Saute the onion and garlic for 4 minutes until softened. Add the rice and stir for 1 minute to coat with oil.
  • Add the stock to the turmeric and lemon juice, cover, bring to the boil, and simmer, covered, for 20 minutes until the rice is tender. Remove from the heat. Add the peas, tomatoes, olives and basil leaves. Stir to combine all the ingredients and season to taste.
  • Spoon the mixture into the pepper bases and cover with the tops. Bake for 15-20 minutes, until the tops of the peppers are tender and golden.
  • For the sauce:.
  • Saute the onion in the olive oil until soft. Meanwhile blend well the ground cashew nuts, stock cube and water in a blender. Add the contents of the blender to the onions and heat gently for 2-3 minutes stirring all the time. Return the mixture to the blender and blend until smooth. Re-heat the sauce gently, adding more water if a thinner consistency is desired.
  • This is good served with an Italian tomato salad and garlic bread.
