3 large egg whites, room temperature
Pinch salt
1 cup packed brown sugar
1/2 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • In a bowl, beat egg whites and salt until soft peaks form. Gradually add brown sugar, beating until stiff peaks form, 5-8 minutes. Fold in vanilla and pecans. Drop by well-rounded teaspoonfuls onto greased baking sheets. Bake at 225° for 50-55 minutes or until firm to the touch. Store in airtight container.

These Pecan Puffs are the perfect combination of crumbly and soft. A delicate pecan flavor that improves as they sit! They literally melt in your mouth!

1 cup butter (room temperature)
¼ cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon kosher salt
1 cup chopped pecans (toasted and cooled)
Confectioner's sugar (as needed for rolling)

Steps:

  • Preheat oven to 300°F. Line baking sheets with parchment.
  • In a large bowl with a hand mixer (or stand mixer fitted with the paddle attachment) cream the butter, sugar and vanilla until light and fluffy.
  • On low speed add the flour, salt and pecans; mix until combined.
  • Roll into 1-inch balls and place 1-inch apart on prepared baking sheets.
  • Bake in preheated oven for 45 minutes or until the bottoms are golden brown.
  • Cool 5 minutes then roll in sugar. Cool completely and roll in confectioners sugar again.
  • Store in an airtight container at room temperature for 5-6 days.

½ cup butter, softened
2 tablespoons white sugar
1 teaspoon vanilla extract
1 cup sifted cake flour
1 cup pecan halves
½ cup confectioners' sugar for rolling

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together butter and sugar until smooth. Beat in the vanilla. Grind pecans in a food processor or blender; toss with cake flour. Stir the pecan mixture into the creamed mixture until well blended. Roll the dough into tablespoon balls, then place them 1 inch apart onto the prepared cookie sheets.
  • Bake for 25 to 20 minutes in the preheated oven, or until lightly browned. Roll warm cookies in confectioners' sugar. When they are cooled, roll them again.

3 large egg whites, at room temperature
1/2 teaspoon vanilla extract
1/8 teaspoon cream of tartar
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 200 degrees F; line 2 baking sheets with parchment paper.
  • In a stand mixer fitted with a whisk attachment, add the egg whites, vanilla and cream of tartar. Beat until the mixture is frothy and soft peaks form. Gradually add the sugar 1 tablespoon at a time, waiting about 15 seconds between each addition. Once all of the sugar has been added, beat for an additional 5 minutes. The egg whites should be glossy and stiff but not dry.
  • Spoon the mixture into a large pastry bag fitted with a large star tip. Pipe 2-inch cookies onto the lined baking sheets, leaving 1 inch between each cookie.
  • Bake for 45 minutes, then turn off the oven and leave the cookies in the oven for an additional 30 minutes. Remove and cool completely before storing in an airtight container.

2 tablespoons sugar
1 teaspoon vanilla
3/4 cup finely chopped pecans
1 cup cake flour
1/4 teaspoon salt (or less)
powdered sugar, reserved

Steps:

  • Preheat oven to 300°.
  • Put on some Christmas music.
  • Chop pecan in a food processor or by knife.
  • Beat butter until soft with a mixer. Add sugar, vanilla, and pecans. Carefully add flour and blend well.
  • Coat hands with flour. Use a teaspoon scoop or a teaspoon and shape into cherry-size and place on a parchment-lined or greased cookie sheet.
  • Bake at 300° 15-20 minutes.

  • Place egg whites in a small bowl; let stand at room temperature 30 minutes., Preheat oven to 250°. Add vanilla, cream of tartar and salt to egg whites; beat on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition, until sugar is dissolved. Continue beating until stiff glossy peaks form, about 7 minutes., Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; insert a #32 star tip.   • First, mix both sugars, set aside. Whip whites on med. up to a soft peak. Add sugars one tablespoon at a time, while mixing. When all sugar is added, turn on high and whip to a stiff peak. 1 cup miniature chocolate chips
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add sugar, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks.
