This wonderful recipe was featured during Paula's recent television appearance on Oprah's show --- I made it recently but added in 2 scant teaspoons fresh minced garlic and Tabasco, I also increased the nuts for the outside of the ball, this may be made up to 24 hours in advance, try this, you will love it! :)

1 (8 ounce) package cream cheese, softened
1/2 cup milk
2 1/4 cups shredded sharp cheddar cheese
1/4 cup crumbled blue cheese (1 ounce)
1/4 cup green onion (white parts only)
1 (2 ounce) jar pimientos, drained
1 cup chopped pecans (Paula uses Fisher pecans)
10 slices bacon, cooked and finely crumbled
salt & fresh ground pepper (to taste)
1/4 cup chopped fresh parsley
1 tablespoon poppy seed

Steps:

  • Place the cream cheese and milk in a bowl; beat until well combined.
  • Add in shredded cheese, onions, pimento and HALF of each, crumbled bacon and chopped pecans; mix to combine.
  • Season with salt and black pepper.
  • Transfer the mixture to a large piece of plastic wrap, then form into a ball; cover tightly and chill a minimum of 2 hours.
  • In a pie plate mix together the remaining chopped pecans and bacon, then mix in the parsley and poppy seeds.
  • Unwrap the cheese ball then gently roll into the nut mixture.
  • Wrap again in a clean piece of plastic wrap and chill up to 24 hours.

2 C shredded sharp cheddar cheese
8 oz softened cream cheese
4 oz diced pimentos
1/4 C real mayonnaise
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp coarse ground pepper
splash Worcestershire sauce
3 oz bacon pieces
1 C chopped pecans
2 Tbsp chopped chives
1 tsp paprika

Steps:

  • Take your cream cheese out of the fridge to soften about 15-20 minutes before making your cheese ball.
  • Put all of the ingredients for the cheese ball in a large bowl and mix with hand or stand mixer.
  • When the ingredients are well mixed, turn out the cheese mixture onto a large piece of plastic wrap. Pull up the edges of the plastic wrap up and twist so that all of the cheese is inside and begins to form a ball. Use a combo of twisting the plastic wrap and your hands to form the cheese into a ball. When the ball becomes the shape you like, place it in the refrigerator for at least 1 hour before serving so that it becomes firm.
  • Mix the chopped pecans, bacon pieces, chives and paprika in a bowl, using a fork. When mixed, spread them out in a solid layer on a piece wax paper. Remove chilled cheese ball from fridge. Unwrap the plastic wrap from the cheese ball and roll ball over the toppings mix. You might also have to pull toppings up onto the sides or top and press in a bit to get the covering you like.
  • Serve with crackers, celery, crostini, more pecans, even fruit.

¾ cup pecans
1 (8 ounce) package cream cheese, at room temperature
1 clove garlic, minced
1 small dill pickle, minced
1 cup shredded Cheddar cheese
½ cup shredded Monterey Jack cheese
1 (4 ounce) jar pimientos, drained and diced
Fresh ground black pepper to taste
2 teaspoons hot sauce
¼ teaspoon ground cayenne pepper

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with Reynolds Wrap® Aluminum Foil. Spread the pecans on the foil-lined sheet and toast in the oven for 7-10 minutes. Remove and allow to cool completely. When cooled, give the pecans a rough chop and return to the foil-lined baking sheet.
  • In a stand mixer fitted with a paddle attachment, mix the cream cheese, garlic, pickle, cheddar cheese, Monterey Jack, pimentos, black pepper, hot sauce and pinch of cayenne pepper. Turn the mixer to medium speed and mix for about a minute. Transfer to a small bowl, cover with plastic wrap and chill for at least 2 hours or up to 3 days.
