Steps:
- In a large pot, brown lamb, onion and celery only until lamb is no longer pink.
- Drain off fat.
- Add tomatoes, garlic, bay leaf and broth.
- Bring to a boil.
- Add Quick barley, zucchini, frozen vegetables, thyme, oregano, and parsley.
- Then reduce to simmer for 30 minutes.
- Salt and pepper to taste.
- Serve with toasted pita bread triangles.
PEASANT BREAD SOUP
I got this recipe along time ago from a chef named Jeff Smith. Hes is gone now,but this is one of my favorite recipes from him. This soup is so good its like a drug it relaxes you and makes you feel so warm and good.So make for your family and enjoy.

Steps:
- put chicken stock in a pot.
- add oven roasted garilc and the rest of the spices (and mushrooms).
- bring to a boil on med heat then low and cover for 30 min.
- cut bread into 1/2 inch rounds and brush with olive oil.
- toast in a pan till brown (i like mine dark).
- warm soup bowls in the oven or microwave.
- pour soup into bowls.
- spilt bread into bit size pieces and put in soup top with cheese.
- let stand 5 minute.

SIMPLE BREADCRUMB SOUP
This simple and tasty soup is filling and so quick to make. My friend's Italian grandmother used to make this for anyone with a bit of tummy trouble. Whether it was the flu or a bit too much to drink the night before, this soup always settled the stomach, and it was always a hit with both young and old. I have it for lunch all of the time when I only have a few minutes to spare. Great on a chilly day.

- Bring chicken broth to a slow boil in a sauce pan.
- In a small bowl, beat egg and add the parmesean cheese.
- the mixture should still be runny, yet thickened.
- Add breadcrumbs and mix.
- the mixture should form a soft ball, but it should still be moist.
- Drop the mixture into the boiling broth, break up the ball with a fork and leave to boil for another 3-4 minutes.
- The breadcrumbs should begin floating to the top and binding together.
- Serve hot.

PASSATELLI DEI NONNI (BREAD AND PARMESAN CHEESE SOUP)
Try this soup! Passatelli are a classic specialty from Emila-Romagna (Italy) the region where my father comes from. My children love this soup!

Steps:
- Place the bread crumbs, Parmesan, nutmeg and the lemon zest in a large mixing bowl. Add the eggs and carefully mix together with your hands until it forms a soft dough-like consistency.
- The mixture should be like a wet dough, barely holding together.
- If it seems too stiff, add 1 tablespoon water or stock. If it's too soft, add more breadcrumbs and Parmesan.
- Allow the dough to rest for approximately 20 minutes in a cool place.
- Once ready, put the dough in a food mill or ricer. Press to create short noodles (like little worms).
- Bring the meat stock to a boil and add the pasta. Once the passatelli have risen to the surface, they are ready to eat.
- Serve immediately.
PEASANT BREAD CRUMB SOUP
I love the sharpness provided by the cheese in this soup. The added texture of the bread crumbs will really please the palate. I love this for dinner on a cold winter night. I am sure you will too. Please enjoy!

- 1. Place all ingredients, save the panko, in a heavy bottomed, lidded pot. Cook on low, covered, for 1 hour, stirring occasionally.
- 2. Remove from heat. Blend with an immersion blender. If not available, use blender or food processor.
- 3. When well blended and frothy, add the bread crumbs. Continue to immersion blend, until the crumbs thicken the soup. Serve immediately.
