4-1/2 teaspoons red wine vinegar
4-1/2 teaspoons reduced-sodium soy sauce
1 tablespoon sugar
1 tablespoon creamy peanut butter
1/4 teaspoon ground ginger
1/2 pound turkey breast tenderloins

Steps:

  • In a small bowl, whisk the first 5 ingredients; set aside 1 tablespoon for basting. Cut turkey into long strips (about 1-1/2 in. wide by 1/4 in. thick). Add to soy sauce mixture in bowl; toss to coat., Weave turkey strips accordion-style onto 2 metal or soaked wooden skewers. Broil 3-4 in. from the heat until turkey is no longer pink, 2-3 minutes on each side, basting with reserved soy sauce mixture.

Faster than take-out, serve up veggie-packed fried rice that starts with healthy brown rice.

2 cups uncooked instant brown rice
Water
2 eggs, beaten
1/2 lb lean (at least 90%) ground turkey
1/2 cup sliced green onions (8 medium)
2 teaspoons finely chopped garlic in water (from a jar) or 2 cloves garlic, finely chopped
2 cups frozen mixed vegetables
1/4 cup soy sauce
2 teaspoons light sesame or vegetable oil
1/4 teaspoon ground red pepper (cayenne)

Steps:

  • Cook rice in water as directed on package.
  • Meanwhile, spray wok or 12-inch nonstick skillet with cooking spray; heat over medium heat until hot. Add eggs to wok; cook 1 minute, stirring occasionally, until firm but still moist. Remove eggs from wok; place on plate. Cut egg into pieces; cover to keep warm.
  • In same wok, cook ground turkey, onions and garlic over medium heat 6 to 8 minutes, stirring frequently, until turkey is no longer pink. Add frozen vegetables; cook and stir 4 to 5 minutes longer or until vegetables are thawed.
  • In 1-cup glass measuring cup, mix soy sauce, oil and red pepper. Stir into turkey mixture. Add cooked rice and eggs to wok; cook and stir 2 to 3 minutes longer or until thoroughly heated.

nonstick cooking spray
1 medium onion, diced
½ cup frozen peas and carrots
2 tablespoons salted butter
3 cups cold cooked rice
2 cups diced cooked turkey
2 tablespoons soy sauce, or more to taste
1 tablespoon sesame oil, or as needed
2 large eggs

Steps:

  • Coat a large pan with cooking spray. Add onion and saute over medium heat until translucent, about 5 minutes. Add frozen vegetables and butter; cook and stir, allowing butter to melt and veggies to thaw, 3 to 5 minutes.
  • Increase heat to medium-high and stir in rice and turkey. Add soy sauce, 2 tablespoons at a time, and stir until rice takes on color. Push everything to the sides of the pan. Add sesame oil to the center of the pan and stir rice mixture until coated. Push everything to the sides of the pan again. Break eggs in the center of the pan. Scramble in the center until set, 2 to 3 minutes; then stir into rice mixture until well combined.

This turkey fried rice recipe reinvents Thanksgiving leftovers. Made with simple ingredients, this fried rice is full of Asian flavor that can be put together in minutes. A great dinner recipe for leftover turkey.

2 Tbsp peanut oil
2 Tbsp butter
1 c cooked turkey, large dice cut (leftover)
1/2 c cooked peas (leftover)
1/2 c onion, raw, large dice cut
1 clove garlic, chopped
1/2 c fresh mushrooms, sliced, cut in half
3 eggs, scramble with a fork
3 green onions, chopped
4 c jasmine rice, cooked, cold or cooled
soy sauce, low-sodium
sea salt & pepper
garlic powder
onion powder

Steps:

  • 1. Leftover cold rice is always best. But if none, make 4 cups (prepared) of jasmine rice according to package directions.
  • 2. In a very large skillet or Wok, add peanut oil, butter, and garlic.
  • 3. Add mushrooms first (since they will absorb the flavors as they cook). Cook for 2 min.
  • 4. Add onions. Salt & pepper mixture.
  • 5. Separate mixture to one side of the pan. On the other side add eggs and cook them like scramble eggs.
  • 6. Once eggs are cooked combine them with rest of mixture in pan.
  • 7. Add turkey and season with garlic & onion powder. Then add peas. Stir mixture.
  • 8. Add cooked rice to pan.
  • 9. Give a few good shakes of soy sauce on rice.
  • 10. Combine rice with rest of ingredients in pan. Taste and season as needed.
  • 11. Add green onions and stir once or twice and serve.
  • 12. Variations: You can add or replace these suggestions. Swap out peas for carrots. Swap out mushrooms for bean sprouts. The trick is to not overload on the items and keep it simple.

8 dried shiitake mushrooms
3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of kosher salt
4 scallions (white and green), thinly sliced
1/4 cup minced carrot
1 large clove garlic, minced
Pinch red chile flakes
1 teaspoon minced peeled fresh ginger
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat cut in 1/2-inch cubes, such as pork, ham, beef, or chicken
1/2 cup frozen peas, defrosted in a strainer at room temperature

Steps:

  • Put the mushrooms in a small bowl and cover with boiling water and soak until re-hydrated, about 20 minutes. Drain, squeeze dry, and cut mushrooms in quarters. Set aside.
  • Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool, cut into 1 inch pieces.
  • Wipe out the pan with a paper towel and heat the remaining peanut oil over high heat. Add the scallions and carrots and stir-fry for 1 1/2 minutes. Add the mushrooms, garlic, chile, and ginger, stir-fry for 1 minute more. Add the soy sauce, sesame oil and rice and stir-fry for 2 to 3 minutes. Add the meat, peas, and reserved egg, cook, stirring until heated through, about 2 to 3 minutes. Serve immediately.

2 tsp sesame oil
2 eggs , beaten
1 red chilli , sliced (optional)
small bunch spring onions , chopped
300g cold cooked rice (or use a pouch of straight-to-wok rice)
2 tbsp each soy sauce and sweet chilli sauce, plus extra to serve
85g frozen peas
2 thick slices ham , chopped
100g/4oz shredded leftover turkey

Steps:

  • Heat half the oil in a wok or frying pan. Add the eggs, swirl to coat the base of the pan and allow to set to an omelette, flip and cook for 1-2 mins. Once cooked, remove, shred and set aside. Add the remaining oil to the pan, then stir-fry the chilli, if using, and spring onions for 1 min.
  • Add the remaining ingredients and the egg, and heat through, stirring, until piping hot. Serve immediately with some extra soy and sweet chilli sauce, if you like.

4 ounces broccoli florets, broken up into smaller pieces
1 medium carrot, sliced thinly
1/2 leek, sliced thinly
1/2 cup yellow bell pepper, chopped
1/4 cup shelled peas
1 cup mustard greens, shredded
1 cup rice, day-old
1/4 cup sunflower seeds
1/4 cup peanuts, shelled
1 teaspoon tahini
1 1/2 tablespoons low-sodium peanut butter
1 teaspoon light coconut milk
1 1/2 tablespoons low sodium soy sauce
1/4 cup rice wine vinegar
1 teaspoon minced garlic
1/2 teaspoon red curry paste

Steps:

  • Mix sauce (last 7 ingredients) together in a blender so it's ready to go.
  • Saute broccoli and carrots in 2 tbsp of water for 3-4 minutes.
  • Add leek and pepper and cook 1-2 minutes.
  • Add peas and greens and cook 1-2 minutes.
  • Add rice, seeds, and nuts, and cook 1-2 minutes, stirring constantly.
  • Add sauce. Cook 1-2 minutes, stirring constantly, then serve.
