APRICOT BRANDY AND PEACH SCHNAPPS POUND CAKE

Steps:
- Butter and flour one angle food tube cake pan. Preheat oven to 325 degrees F (175 degrees C).
- In a mixing bowl, cream together butter and sugar for 5 minutes. Add eggs one at a time. Beat well. Sift flour with soda and salt; add sour cream and brandy ending with flour. Bake for 1 hour 15 minutes.
- Prepare the syrup in a sauce pan by combining the sugar, peach flavored liqueur, water and lemon zest. Boil for 1 minute.
- Turn cake out onto plate and punch holes in bottom of cake with ice pick or something similar. Slowly pour all of syrup into holes until cake is penetrated and syrup is absorbed. Immediately turn cake right side up onto serving plate.
- Prepare the topping/glaze by combining the apricot preserves, apricot brandy and lemon zest in a sauce pan and boiling for 1 minute. Drizzle over top of cake. Place sliced almonds on top of glaze along with a little lemon zest if desired.
- Serve the cake with sliced fresh peaches and coat with 1/2 cup citrus juice. Add one basket blueberries and mix together. Pour 1/2 cup peach flavored liqueur and 1/2 cup simple syrup over fruit. (simple syrup made from 1/2 cup sugar boiled in 1 cup water for 1 minute and cooled)

- Place in a plastic container or large glass bottle.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, cream together the butter and sugar until light. Beat in the eggs, one at a time. Stir in the lemon zest and sour cream. Sift together the flour, baking soda and salt, stir into the creamed mixture alternately with the brandy. Put the batter into the prepared tube pan.
- Bake for 1 hour and 15 minutes in the preheated oven. Cake will spring back to the touch when done. To make the syrup, use the second set of ingredients. Combine the sugar, water, peach schnapps, and lemon zest in a small saucepan over medium high heat. Bring to a boil for 1 minute. Turn the cake out onto a wire rack. Place cake in the upside down position, and place a cookie sheet under the wire rack. Poke holes in the bottom of the cake with a fork. Pour the syrup over the entire cake, until all of the syrup is absorbed. Let cake stand for a few minutes.
- To make the topping for the cake, use the third set of ingredients. In a small saucepan, combine the apricot or peach preserves, apricot brandy and lemon zest. Bring to a boil over medium heat. Let the mixture boil for 1 minute. Turn the cake over onto a serving plate, drizzle the warm glaze over the top. Serve warm or cooled.

DRUNKEN BRANDY-PEACH BREAD PUDDING

- TO MAKE THE BREAD PUDDING: Preheat the oven to 350°F. Grease a 9 by 13-inch baking pan with butter or cooking spray. Mix the granulated sugar, half-and-half, and cinnamon in a large saucepan over medium heat. Stir occasionally until the sugar dissolves. (No need to boil the mixture.) Remove the saucepan from the heat.
- Whisk the 3 eggs in a bowl until the whites and yolks are combined. Pour about 1/4 cup of the hot cream mixture into the eggs, whisking as you pour. (This tempers the eggs, which keeps them from curdling when they are mixed into the hot cream mixture.) Pour the tempered egg mixture into the cream mixture left in the saucepan and whisk until the sauce is smooth.
- Gently combine the bread cubes and peaches in a large bowl. Spoon into the prepared pan. Pour the sauce over the peach-bread mixture and let sit for about 30 minutes to let the sauce soak into the bread. Sprinkle the pecans on top.
- Bake until the pudding is firm and lightly browned on top, about 1 hour. Cut into squares and serve warm or at room temperature with warm Peach Brandy Sauce.
- TO MAKE THE PEACH BRANDY SAUCE: Melt the butter and brown sugar together in a saucepan set over medium heat. Remove the mixture from the heat. In a bowl, whisk the 1 egg with a fork. Temper the egg by adding about 2 tablespoons of the butter-sugar mixture to the egg and whisk constantly until the egg is incorporated. Pour the tempered egg mixture into the saucepan with the remaining sugar-butter mixture and whisk until the sauce is smooth. Add the salt and whisk in the brandy. Keep the sauce warm until ready to serve. Pour it over the bread putting as soon as it comes out of the oven.

- 1. DO NOT pre-heat oven. Grease and flour bundt cake pan. NOTE 1: I used a 15 cup bundt pan. NOTE 2: If using canned peached, drain well. Once mashed, drain again. I used a food processor, plusing 4 or 5 times.
- 2. Combine flour, sugar, melted butter, milk, eggs, vanilla and almond extracts in a mixing bowl. Beat at medium for 20 minutes; fold in mashed peaches. NOTE: Yes you read it right, put in all (except peaches) in a mixing bowl and beat 20 minutes.
- 3. Pour into prepared pan. Place in cold oven. Bake at 300 degrees for 70 to 75 minutes or until cake test done.
- 4. Cool on wire rack in pan about 20 minutes. Invert onto plate and glaze.
- 5. GLAZE Combine peach puree, sugar and peach brandy (or peach juice) in a small saucepan. Cook over medium heat until sugar is dissolved (about 3 to 5 minutes).
- 6. Remove pan from heat and drizzle syrup on top of warm cake, allowing it to soak into the cake. Repeat process until all syrup has been absorbed into the cake.
- 7. Serve with a scoop of peach ice cream or some sliced peaches or with both. Enjoy!

LADY ROSE'S BRANDY PEACH COBBLER WITH DUMPLINGS
This is a cobbler I made for the CHRISTMAS Holiday, and thought by adding a bit of Peach Brandy would elevate the flavors, & I was right. I love Peach Cobbler, but there never seem to be enough crust or juice, so I figured if I added just a bit more dumplings, you could have crust in every bite. I made PUCKER LICIOUS PEACH PIE...

- 1. I would prefer using fresh or frozen peaches but during the off season I used canned variety. I used the gallon size to make both the pie and the cobbler. Preheat oven to 375 degrees F. These are the canned peaches that I used. I did not use the lemon juice in this recipe because of the Brandy.
- 2. Separate peaches from liquid, cut into thirds and reserve liquid.
- 3. Add enough water to peach liquid to make about 6 cups.
- 4. Combine the dry ingredients together, sugar, salt, nutmeg, flour, & cinnamon
- 5. Break one of the refrigerated dough shells into small pieces to be used as dumplings. Set aside till needed to add to peach liquid.
- 6. Add the dry blend ingredients to the liquid, and stir just until it begins to thicken. Simmer over medium high heat.
- 7. Stir in the dumplings and cook over medium high heat just long enough to prevent them from sticking together about 2 to 3 minutes. Add the peaches. Then remove from heat. Add the butter and stir till it melts.
- 8. Then add the vanilla bean paste or extract, butter extract, and Peach brandy in a small cup, stir into liquid mixture.
- 9. Add about a HALF of peach mixture to bottom of a 9 X 13 size baking pan, & top with a pie crust. Place in 375 degrees F. oven and bake for about 15 minutes. THEN REMOVE FROM OVEN. IF YOU WANT TO ADD 4 CRUSTS TO COBBLER, ADD ONE TO BOTTOM OF PAN BEFORE ADDING THE PEACH MIXTURE.
- 10. REMOVE FROM OVEN, and add remaining peach mixture. TOP WITH ADDITIONAL CRUST. Brush top of cobbler with egg wash and then add sparkling sugar crystals. Place cobbler on a larger shallow pan lined with foil to catch any potential drips before adding the last of the cobbler liquid for the oven.
- 11. Return to oven and continue to bake for about 45 to 50 minutes or until crust is golden brown. Remove from oven and serve as desired. PLEASE NOTE IF THERE IS TOO MUCH LIQUID OVER THE TOP OF THE CRUST BEFORE BAKING THAT PART WILL NOT GET AS GOLDEN BROWN ON TOP AS THE PART THAT IS NOT COVERED IN LIQUID. So you may want to remove some of the excess liquid BEFORE baking.

AUNT GINGER'S HOMEMADE PEACH BRANDY

- Use a clean one gallon open mouth jar. Pour sugar in bottom to a depth of one and a half inches. Wash some small, very ripe peaches (in season). Fill the jug with the peaches. Pour enough gin in the jar to completely cover the peaches. Screw on the top and store in a cool dark place (away from any sources of ignition). Each day, gently agitate the jar until the sugar completely dissolves into the gin. Leave in the cool dark place until Thanksgiving. Enjoy in small servings.

- 1. Place peaches in a wide mouth gallon glass jar with a lid; pour in sugar and gin. Put top on top of jar.
- 2. Every day for for swirl jar to help dissolve sugar. After about a week when all the sugar has dissolved, add more gin to cover peaches (peaches will shrink).
- 3. Store in a secure place (I use the bottom of my linen closet). Taste after two months; you may add more sugar or gin to taste.
- 4. When ready to bottle, remove peaches (they are great on ice cream or pound cake). Strain liquid through several layers of cheese cloth so that it will be beautifully clear. Bottle and enjoy. Makes 3/4 gallon.

- Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
- Peel, pit and finely chop peaches. Measure exactly 4-1/2 cups prepared fruit into 6- or 8-qt. stockpot. Stir in almonds, raisins, lemon peel, lemon juice and cinnamon.
- Stir pectin into prepared fruit in stockpot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Stir in brandy. Skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

PEACH BRANDY CHICKEN RECIPE

- Heat butter in saute pan; dip chicken in flour and saute skin-side down, over medium to high heat, until brown (about 4 to 5 minutes). Turn breasts and cook another 4 to 5 minutes, thinner breasts might require less time. Remove breasts from pan and deglaze pan with chicken stock, add peaches, brandy and tarragon, reduce heat and cook approximately 2 minutes. Return chicken, along with any accumulated juices, to pan. Add heavy cream and cook until chicken is hot and cooked through. Place chicken on platter or plates and top with peaches and sauce. - Heat oven to 400°F. In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball; reserve one-third of the pastry. Shape remaining pastry into flattened round on lightly floured surface. With floured rolling pin, roll into 14-inch square; cut into 4 squares. Roll reserved pastry into 14x7-inch rectangle; cut into 2 squares.
- Place 1 peach half, flat side up, on each square. In small bowl, mix raisins and nuts; spoon into center of each peach half. Top with remaining peach halves. Moisten corners of square; bring 2 opposite corners of pastry up over peach and press corners together. Fold in sides of remaining corners; bring corners up over peach and press together. Place dumplings in ungreased 13x9-inch pan.
- In 2-quart saucepan, heat brown sugar and 1 1/3 cups water to boiling, stirring occasionally, until sugar is dissolved. Carefully pour around dumplings.
- Bake about 40 minutes, spooning syrup in pan over dumplings about 5 minutes before dumplings are done, until pastry is brown and peaches are tender.
- In 2-quart saucepan, beat egg with wire whisk until foamy. Add whipping cream and granulated sugar; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in brandy. Serve warm over dumplings.
