2 bags (16 ounces each) frozen sliced peaches, thawed
1/2 cup sugar
3 tablespoons fresh lemon juice
2 tablespoons all-purpose flour
4 slices sandwich bread
2 tablespoons unsalted butter
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 375 degrees. In a large bowl, toss peaches, sugar, lemon juice, and flour to combine. Transfer to an 8-inch square (or other shallow 2-quart) baking dish.
  • In a food processor, pulse bread until coarse crumbs form; sprinkle over fruit mixture, and dot with butter. Cover tightly with aluminum foil.
  • Bake until fruit mixture is bubbling, 25 to 30 minutes. Remove foil, and continue baking until topping is golden, 10 to 15 minutes more. Let sit at least 10 minutes. Serve with whipped cream, if desired.

4 ripe peaches, halved, pitted and cut into 4 wedges each
4 tablespoons (1/2 stick) unsalted butter, melted
4 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
4 slices walnut-raisin bread
Pinch kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the peaches, 2 tablespoons of the butter, 2 tablespoons of the maple syrup and the vanilla in a 2-quart oval baking dish. Toss with a spatula to combine, then arrange the peaches cut side up.
  • Put the bread and salt in the bowl of a food processor. Pulse until you have small crumbs (take care not to over-process or the crumbs can get gummy).
