THICK AND CHEWY PEANUT BUTTER CHOCOLATE CHIP BARS



Thick and Chewy Peanut Butter Chocolate Chip Bars image

A blondie lover's dream, these bars are moist, dense and chewy. Perfect for a bake sale or as a take-a-long. They can also be cut into 1-inch bites for a large party.

Cooking spray
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2/3 cup creamy peanut butter
2 teaspoons pure vanilla extract
2 cups bittersweet chocolate chips (about 12 1/2 ounces)
1/2 cup chopped salted peanuts (about 2 ounces)

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. Fold in the flour mixture until just combined (be careful not to over mix the dough or the bars will be tough). Fold in the chocolate chips and the peanuts.
  • Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
  • Lift up on the foil overhang to remove the bar from the pan, and transfer it to a cutting board. Use a ruler to cut it into 2-inch squares.

This recipe I found on page 150 of paula's cook book entitled "Lady and Sons Savannah Country Cookbook" Then I added a frosting of my own. PEANUT BUTTER BARS
1 stick butter
1/2 c peanut butter
1 1/2 c sugar (i used dark brown)
2 eggs
1 tsp vanilla extract
1 c self rising flour (i did 1 cup plus 1 tsp baking powder and 1/4 tsp salt)
CHOCOLATE FROSTING
2 Tbsp butter
1 tsp vanilla
1 c powdered sugar
1 Tbsp (rounded) hersleys baking cocoa
water

Steps:

  • 1. For the bars: Preheat oven to 350 Degrees, Grease and flour a 9x13 pan (I only had a 9x11 so I used that). Melt butter and peanut butter together over hot water. (I put it in a pan and on simmer it was fast and easy)
  • 2. Pour into remaining ingredients and stir well. Pour into greased and floured pan and bake 25-30 minutes. (I did 35 as mine was in a smaller pan.) Cook and cut into squares.
  • 3. NOTE: Besides the things I stated above at the 30 minute mark I took them out of the oven and topped with the frosting and returned it to the oven 5-10 minutes more. For the frosting just mix all together adding enough water to make a regular icing and frost the hot bars. The frosting will be thin and melty at this point. Return to oven 5-10 minutes until it bubbles or looks really hot and remove and cool. cut and serve

1 cup peanut butter (creamy or crunchy)
1 cup sugar substitute (Splenda)
1/3 cup sugar substitute (Splenda) (optional)
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a large baking sheet.
  • In a mixing bowl, combine the peanut butter, 1 cup of Splenda, the egg, and vanilla. Stir well with a spoon.
  • Roll the dough into balls the size of walnuts. Place the balls on the prepared cookie sheet.
  • With a fork dipped in optional 1/3 cup of Splenda to prevent sticking, press a criss-cross design on each cookie.
  • Bake for 12 minutes, remove from the oven, and sprinkle the cookies with the optional 1/3 cup of Splenda.
  • Cool slightly before removing from the pan.

1 -21 1/2 ounce Duncan Hines chewy fudge brownie mix
1 1/3 cups water
1/2 cup vegetable oil
3 large eggs
1 (12 ounce) package peanut butter chips or 24 miniature peanut butter cups

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 24 regular muffin cups with paper cupcake liners.
  • Combine the brownie mix, water, vegetable oil and eggs in a large bowl blending at low speed in your mixer for about 30 seconds.
  • Beat at medium speed for 2 minutes.
  • Fill the cups half full with brownie batter.
  • Place about 1 tablespoon peanut butter chips in the center of the batter, or press 1 peanut butter cup into the batter in each muffin cup until the batter meets the top edge of the peanut butter cup.
  • Bake for 18 to 20 minutes, until the cupcakes are set.
  • When they can be handled safely, remove them from the muffin tins and let cool completely on wire racks.
  • Store in an airtight container.

1 cup confectioners' sugar
1/2 cup peanut butter
1/4 cup evaporated milk
1 1/2 cups Cool Whip
8 inches graham cracker crust
1/3 cup peanuts, chopped

Steps:

  • Whip the cream cheese until fluffy, then beat in the sugar and peanut butter.
  • Slowly add the milk, blending well.
  • Fold the Cool Whip into the cream cheese mixture and spoon this into the pie crust.
  • Sprinkle with peanuts.
