Steps:
- Preheat oven to 375. Boil rice in boiling salted water about 15 minutes. Heat olive oil and add eggplant, onion, green pepper and garlic. Saute until tender. Add parsley, mint, raisins, almonds and tomatoes. Combine with rice, salt and pepper. Place in oiled casserole. Bake for 40 to 60 minutes.
