Number Of Ingredients 14

1/4 cup rice
1 1/2 cups boiling water
1/2 teaspoon salt
1/4 cup olive oil
1 large eggplant, peeled
3/4 cup minced onion
1/2 cup minced green pepper
1 clove garlic minced
1/2 cup chopped parsley
1/4 cup fresh mint or 1 tsp dried
1/2 cup raisins
1/2 cup slivered almonds
1 1/2 cups tinned tomatoes or 2 cups fresh
salt/pepper

Steps:

  • Preheat oven to 375. Boil rice in boiling salted water about 15 minutes. Heat olive oil and add eggplant, onion, green pepper and garlic. Saute until tender. Add parsley, mint, raisins, almonds and tomatoes. Combine with rice, salt and pepper. Place in oiled casserole. Bake for 40 to 60 minutes.
