TEQUILA LIME SEARED SCALLOPS PASTA

Zesty, buttery tequila lime pasta with seared scallops is a quick and easy dinner for weeknights and beyond. Perfectly seared scallops are easier than you may ever think!

6 sea scallops (if frozen, thawed)
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoons unsalted butter (divided)
1 tablespoon olive oil
1/4 cup lime juice
1/4 cup tequila
2 garlic cloves (pressed)
1/4 cup loosely packed cilantro (chopped)
4 oz 115gr angel hair pasta

Steps:

  • Wash the scallops under cold water. Thoroughly dry the scallops with paper towel and season with salt and pepper on both sides.
  • Bring a large pot of salted water to a boil for pasta.
  • In a large cast iron, or stainless steel skillet, melt 1 tablespoon of butter and olive oil over medium high heat. (I suggest using 12-inch skillet to give plenty of room for scallops.)
  • Add the scallops to sizzling hot skillet making sure the scallops don't touch each other.
  • Sear the scallops for about 2 minutes without disruption until golden crust forms. If the scallops are stuck to the pan, that means they are not ready. Don't force it.
  • Using tongs, flip the scallops and cook the other side for another 2 minutes. The center of the scallops should be slightly translucent. Overcooking will result in chewy, rubbery scallops that no one would care for. Remove the scallops onto a plate.
  • Cook pasta al dante, according to package directions.
  • Remove the skillet in which you cooked the scallops from heat and carefully add tequila and lime juice.
  • Over medium heat, add garlic and cook the sauce until it reduced by half, scraping up the browned bits from the scallops.
  • Stir in the remaining butter and cilantro.
  • Add drained pasta and toss to combine. Add scallops and serve immediately.

1/2 cup lime juice
1/2 cup tequila
1/4 cup white wine vinegar
1 1/2 cups cream, plus 2 tablespoons (or can use half-and-half cream or evaporated milk)
1 shallot, finely minced
3 garlic cloves, minced
3 tablespoons butter
1 teaspoon cornstarch
12 ounces fettuccine pasta
4 green onions, finely chopped
4 roma tomatoes, diced
grilled chicken, shrimp or salmon

Steps:

  • Combine garlic and shallot with tequila, lime juice and vinegar. Cook until reduced to about 1/4 cup.
  • Add cream and cook until reduced by half. Strain out garlic and shallot if desired. Return sauce to heat and whisk in butter.
  • Mix cornstarch with 1 tablespoon water until smooth. Whisk into sauce to thicken.
  • Cook pasta according to package directions. Drain pasta. Add green onions and tomatoes to hot pasta pot and stir. Add drained pasta and sauce and mix well.
  • Serve garnished with fresh cilantro, if desired. You can also top the pasta with grilled chicken, shrimp or salmon for a heartier meal.

1/2 cup white tequila
2 tablespoons freshly squeezed lime juice
2 tablespoons minced shallots
1 teaspoon minced garlic
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
3 turns freshly ground black pepper
1/4 cup heavy cream
8 tablespoons unsalted butter, cut up, at room temperature (1 stick)
Essence, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately.
  • Remove the rellenos from the oven. Spoon 1/4 cup of the sauce on each plate and place the rellenos directly on top. Garnish with the tortilla strips and the cilantro sprigs. Sprinkle Essence on the rim.
  • Combine all ingredients thoroughly.

Chicken and veggies in a tomato tequila lime sauce over pasta. My husband LOVES this one, it's great in the summer with margarita's, and can easily be doubled for parties. I recently retried this recipe as I wrote it the first time and noticed something was a little off, so I edited it, I think this works better! Thanks for the feedback!

2 (8 ounce) boneless skinless chicken breasts, cut into small chunks
1 green bell pepper, sliced
1/2 small white onions or 1/2 small brown onion, sliced
4 ounces tomato sauce
1 teaspoon chicken bouillon granule
1 teaspoon fresh lime juice
1/2 cup tequila (2-3 healthy splashes)
4 tablespoons oil (for cooking)
3 fresh garlic cloves (minced or pressed)
1 teaspoon pepper
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/2 cup hot water

Steps:

  • Heat oil in large skillet.
  • Cook chicken halfway, about 5-7 minutes om med-high heat.
  • Add pepper, garlic and onion to pan, cook an additional 3-4 minutes or until they begin to soften Season with pepper, onion powder, and cayenne.
  • cook additional 2-3 min on medium heat.
  • At this stage add the lime juice and tequila, distributing evenly. Turn flame to low.
  • Add tomato sauce and stir to coat. At this point add the bouillon to the hot water and dissolve. Add the water 1 tbsp at a time and stir, until the desired consistency is reached.
  • Serve tossed with your favorite pasta, (12-16 oz.).
