PASSOVER ROLLS I
This is a recipe for rolls to serve during Passover instead of always serving matzo. My family enjoys them during the entire holiday.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
- In a large mixing bowl, combine matzo meal, salt, and sugar. Mix well.
- Bring water and oil to a boil. Pour the boiling water over the matzo meal mixture, and stir until blended. Beat one egg at a time into the mixture. Let stand 15 minutes.
- Shape the dough into rolls with oiled hands. Arrange rolls on the prepared cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 50 minutes.

These rolls are great for either sandwiches or as a fluffy popover-like roll with dinner My mom would make a couple of batches of these every Passover so we could have sandwiches for lunch and rolls with dinner.

Steps:
- Preheat oven to 425 degrees.
- In a 2 quart pot, bring water, oil and salt to a boil.
- Remove from heat and add matzo meal and stir until it forms a ball.
- Add eggs, one at a time, beating until each egg is incorporated before adding another.
- Drop in oval shape on greased cookie sheet for sandwich style rolls (makes 10 rolls) or fill a greased muffin tin (makes 12 muffins).
- Bake for 30 minutes.

These are eggy, fluffy, and very much like popovers. Passover popovers! A big hit at any Seder!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Bring water, oil, sugar, and salt to a boil in a saucepan. Remove from heat and quickly stir in matzo meal. Beat eggs one at a time into matzo mixture until blended. With wet hands, roll dough into 18 rolls and arrange on a baking sheet. Cut an 'X' into each roll.
- Bake in the preheated oven until golden brown, 30 to 45 minutes.

I have made these rolls in the past and I can say that they are wonderful! Taken from "Second Helpings Please!" by Jewish Women International of Canada (editor my good friend Norene Gilletz) --- plan ahead the batter needs to be refrigerated for 1 hour before shaping. Also see recipe#137491

Steps:
- In a small bowl combine the matzo meal, salt and sugar.
- In a medium saucepan bring the water and oil to a boil; add in the matzo meal mixture, mix to combine with a wooden spoon.
- Beat in eggs vigorously with wooden spoon.
- Cover and refrigerate for 1 hour.
- Using oiled hands shape into 12 oval balls, then place on a well-greased baking sheet.
- Bake 400 degrees for about 50 minutes or until golden brown.

- (1) Combine matzo meal with salt and sugar. (2) In a medium saucepan, bring oil and water to a boil. (3) Remove the saucepan from the heat and add the matzo meal, mixing well. (4) Beat in the eggs thoroughly, one at a time. Let the mixture stand for about 15 minutes (can be refri- gerated). (5) Measure out with large-size scoop, then shape it into rolls or balls and place on a Silpat. (6) Bake in a preheated 350 deg. F degree oven for 45-50 minutes or until golden brown.

This recipe comes from my mother-in-law. These rolls are easy to make, and similar to popovers. You can fill them with tuna or salmon salad or eat them plain! They are delicious!

- Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet.

PASSOVER POPOVER ROLLS
Steps:
- Preheat oven to 375. Heat water, oil, salt, and sugar in saucepan and bring to boil. Immediately shut off heat. Add matzo meal and stir with wooden spoon until well incorporated. Add eggs one at a time and beat after each addition. Place a bowl of water next to saucepan. Wet hands and scoop up 1/4 cup of dough. Form dough in hands into a slightly oval shape and place on foil. then transfer rolls to baking sheet. Bake for 40 - 50 minutes. Rolls will be golden brown. Do not take them out too soon as they will collapse. These rolls are crisp on outside and soft inside.
PASSOVER ROLLS
Steps:
- Preheat oven to 380 degrees. Line a baking sheet with parchment paper. Bring to boil the mineral water, and add the canola oil that is seasoned with lemon zest, salt and pepper. Remove from heat, stir in matzo meal. One at a time, add the eggs while stirring until the mixture is smooth. Wet hands slightly and form 6 cm diameter balls. Place on the baking sheet at least 4 cm from each other and sprinkle with coarse sea salt. Bake 40-50 minutes, until rolls are puffed and golden.
PASSOVER ROLLS
These rolls are the absolute best. When done they are crusty on the outside and light on the inside. I have a convection oven and bake them at 375 degrees for 30 minutes. Very easily doubled.

- Boil oil and water together.
- Add sugar, salt and matza.
- Mix well and allow to cool for 5 minutes.
- Add the eggs one-at-a-time.
- Mix well.
- Let mixture stand for 15 minutes.
- Drop by teaspoonful onto a greased cookie sheet-or- into Pam-sprayed cupcake tin.
- Bake at 375 degrees for 40 minutes or till golden brown.
