3 cups heavy cream
1 bay leaf
2 cloves garlic, smashed
1 cup grated Parmesan
2 tablespoons chopped fresh thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons olive oil
1 cup small-diced onions
1 cup small-diced celery
3 cloves garlic, minced
1 tablespoon chopped fresh thyme
2 cups whole milk
6 large eggs, beaten
2 teaspoons salt
1 teaspoon ground black pepper
4 cups cubed day-old white bread
2 tablespoons unsalted butter
4 sausage patties, cooked
1 cup spinach
8 eggs, poached

Steps:

  • For the Parmesan-thyme cream: In a heavy-bottomed saucepot over medium-low heat, add the cream, bay leaf and garlic. Simmer until reduced by two-thirds, about 20 minutes, being careful not boil the liquid or scorch the bottom of the pot. With a slotted spoon, remove the garlic and bay leaf. Whisk in the Parmesan. When the Parmesan has melted the sauce is smooth, add the thyme, salt and pepper. Cook for another 2 minutes. Serve warm. (Make 1 quart.)
  • For the savory bread pudding: Preheat the oven to 350 degrees F.
  • Heat the olive oil in a saute pan over medium heat. Add the onions and saute until beginning to soften, 4 minutes. Add the celery, garlic and thyme; cook for another 3 minutes. Set aside and let cool.
  • In a large mixing bowl, whisk together the milk and eggs, and sprinkle with the salt and pepper. In another mixing bowl place the cubed bread. Pour the milk-egg mixture over the bread and mix. Let sit for 10 minutes, until the bread has soaked up liquid. Fold in onion mixture.
  • Grease an 8-by-10-inch baking dish with the butter. Add the bread mixture and cover with foil. Bake for 30 minutes. Remove the foil and cook until the top is toasted and golden brown, another 10 to 15 minutes.
  • To serve, cut into 4-by-4-inch portions and place on a plate. Add a sausage patty, 1/4 cup of the spinach and two poached eggs. Pour one-quarter of the Parmesan-thyme cream over the top.

This is a wonderful bread. I love to eat it with fresh egg salad, tomato and lettuce. Very good with a bowl of hearty soup. My family favorite!

1 tablespoon olive oil
1 onion, chopped
4 ounces fresh spinach leaves
1/2 cup water, generous
1 egg
4 cups white bread flour
2/3 cup freshly grated parmesan cheese
1 1/2 teaspoons salt
1 teaspoon granulated sugar
1 1/2 teaspoons fast-rising active dry yeast

Steps:

  • Heat the olive oil in a frying pan; add the chopped onion and sauté until a light golden color. Add the spinach, stir well to combine and cover tightly.
  • Remove from the heat and let stand for 5 minutes. Then stir again and let the pan, uncovered, to cool.
  • Place the spinach mixture in the bread machine pan. Add the water and egg.
  • Sprinkle the bread flour, ensuring that it completely covers the liquid mixture.
  • Now sprinkle the cheese inside.
  • Place the salt and sugar in separate corners of the bread pan.
  • Make a shallow indention in the center of the flour, add the yeast.
  • Set the bread machine to the dough setting. Press start.
  • Lightly flour 2 baking sheets.
  • When the dough cycle has finished, remove the dough from the machine and place on a lightly floured surface, gently punch the dough down, then carefully roll it out to a rectangle about 1 inch thick.
  • Roll up the dough from one long side to form a thick baton shape with a square end.
  • Place the baton on the prepared baking sheet, seam side up, cover it with lightly oiled plastic wrap; set aside to rest 15 minutes.
  • Turn the bread over and place on the second baking sheet. Plump up the dough by tucking the ends and sides under.
  • Cover with the oiled wrap and let rest in a warm place for 30 minutes.
  • Preheat the oven to 425°F.
  • Using a sharp knife, slash the top of the bread with 5 diagonal slashes.
  • Bake for 28 minutes, or until it is golden.
  • Turn unto a wire rack to cool.

2 cups fresh breadcrumbs, made from crustless french bread
7 tablespoons extra virgin olive oil, divided
12 ounces linguine
4 cloves garlic, thinkly sliced
3 tablespoons fresh lemon juice
1/4 teaspoon dry crushed red pepper
1 (6 ounce) bag baby spinach leaves
grated parmesan cheese (to garnish)

Steps:

  • Preheat oven to 375*F.
  • Toss bread crumbs with 1 TBS oil in large bowl to coat.
  • Spread evenly on rimmed baking sheet.
  • Bake until breadcrumbs are golden, about 5 minutes.
  • Cool.
  • Sprinkle with salt.
  • Cook pasta in large pot of boiling salted water until tender, but still firm to the bite, stirring occasionally.
  • Drain, reserving 1/2 cup cooking liquid.
  • Meanwhile, heat remaining 6 TBS oil, thinly sliced garlic, lemon juice, and dried crushed red pepper in heavy small saucepan over medium heat.
  • Cook oil mixture until garlic turns golden, about 5 minutes.
  • Toss pasta, oil mixture and spinach in large bowl until spinach wilts, adding reserved cooking liquid as needed to moisten.
  • Sprinkle breadcrumbs over.
  • Serve pasta, passing grated Parmesan cheese seperately.

1/2 cup(s) fresh bread crumbs, coarse
1 tbsp grated Parmesan cheese
1/2 tsp minced garlic
18 oz spinach, baby leaves, washed and well-drained (about 24 cups)
1/2 tsp table salt

Steps:

  • Heat 1 teaspoon of oil in a large nonstick skillet over medium heat; add bread crumbs and cook, stirring often, until golden, about 3 minutes. Remove from heat; stir in Parmesan cheese. Spoon bread crumbs into a small bowl; set aside. Heat remaining 1/4 teaspoon of oil in same skillet. Add garlic, cook, stirring, until fragrant, about 30 seconds. Gradually add half of spinach to skillet, tossing mixture and adding more spinach as some of it cooks down. Continue cooking and tossing, until spinach is wilted and tender, about 2 to 3 minutes. Remove from skillet and repeat with remaining spinach. Return cooked spinach to skillet; add salt and toss over low heat. Transfer to a serving bowl and sprinkle with crumbs. Or toss with half of crumbs and sprinkle remaining crumbs over each serving. Yields about 3/4 cup of spinach and 2 tablespoons of crumbs per serving.

2 tablespoons active dry yeast
3 cups lukewarm water
2 teaspoons sugar
4 1/2 cups bread flour, plus more for kneading
1 envelope cream of spinach soup mix
1/2 cup freshly grated parmesan cheese
2 tablespoons olive oil, plus 1 tsp for the bowl

Steps:

  • In a small bowl, sprinkle the yeast over the water and stir in the sugar.
  • Allow the mixture to sit until it begins to bubble, about 10 minutes.
  • If the yeast doesn't begin to bubble, discard the mixture and begin again with new yeast Place the flour, soup mix, and cheese in a large mixing bowl or in a food processor.
  • Gradually stir in the proofed yeast mixture and oil, stirring until the dough begins to form a ball If mixing by hand, turn the dough out onto a floured board and knead it until it is elastic, about 5 minutes Oil a medium mixing bowl, transfer the dough to the bowl, and turn it a few times to coat it with oil.
  • Cover the bowl with plastic wrap and let the dough rise in a warm dry spot until doubled in bulk, about 1 hour Punch down the dough.
  • Coat a 9 X 5 X 3 loaf pan with nonstick cooking spray.
  • Form the dough into a loaf and place it in the prepared pan.
  • Cover the dough and let it rise again in a warm, dry spot for 45 minutes Meanwhile, preheat the oven to 375 degrees F.
  • Bake the loaf until it is golden brown and it sounds hollow when tapped about 45-50 minutes.
  • Let the bread cool in the pan for 20 minutes before removing and slicing.
