6 cups chicken stock
4 large garlic cloves, thinly sliced

1 cup tortellini (24 to 36)
4 cups loosely packed baby spinach leaves (3 ounces), cut into 1/2-inch-wide strips

Steps:

  • Cut rind off cheese. Combine rind, stock, garlic, parsley, and oil in a 3-quart pot, then simmer gently, partially covered, 30 minutes. Discard parsley and rind and season broth with salt.
  • Add tortellini and simmer, partially covered, until al dente, about 10 minutes. Add spinach and simmer, uncovered, 1 minute. Divide among 4 soup plates, then shave cheese over soup to taste.

More robust than meat- or vegetable-based stocks, this kitchen staple summons the complex essence of aged cheese to serve as a liquid foundation for simmered beans, brothy soups and braised vegetables. This recipe relies on leftover Parmesan rinds, which can be collected over time and stored in the freezer, or bought at some supermarket cheese counters and most specialty cheese shops. If refrigerating the broth for later use, break up the solidified fats with the back of a spoon, or warm to redistribute before using.

1 large (skin-on) yellow onion, quartered from tip to tip
1 whole head garlic, cut in half crosswise
3/4 pound Parmesan rinds (about 5 large rinds)
15 fresh parsley sprigs
8 fresh thyme sprigs
2 teaspoons whole black peppercorns
2 dried bay leaves

Steps:

  • In a large Dutch oven or heavy pot, heat the oil over medium. Add onion quarters and halved garlic, and cook, flat-side down, until the onion and garlic are lightly brown, about 3 minutes. Add Parmesan rinds, parsley, thyme, peppercorns, bay leaves and 12 cups water; bring to a boil.
  • Once the water comes to a boil, reduce to a simmer. Partly cover and cook, stirring occasionally to prevent the cheese from sticking to the bottom of the pot, until broth is cloudy and tastes strongly like Parmesan, 2 1/2 hours.
  • Strain the broth through a fine-mesh sieve, pressing the vegetables and cheese rinds to extract as much liquid as possible. Let cool, then store the broth in the refrigerator up to 1 week or the freezer up to 3 months.

2 cups all-purpose flour, plus more for dusting
2 large eggs
3 tablespoons extra-virgin olive oil
10 ounces mixed wild mushrooms
2 tablespoons extra-virgin olive oil
Kosher salt
3/4 cup fresh ricotta cheese
1/3 cup chopped fresh chives
1/3 cup chopped fresh parsley
1/4 cup grated parmesan cheese
1 large egg yolk
Pinch of freshly grated nutmeg
3/4 cup dried porcini mushrooms (about 3/4 ounce), rinsed
1 onion, quartered
1 carrot, roughly chopped
2 stalks celery, roughly chopped
1 large piece parmesan cheese rind
5 sprigs parsley, plus chopped leaves for topping
3 sprigs thyme
1 teaspoon black peppercorns
Kosher salt
1 wide strip of lemon zest
Chopped fresh chives, for topping

Steps:

  • Make the pasta dough: Pulse the flour once or twice in a food processor. Add the eggs and olive oil and pulse untilthe dough gathers around the blade, 40 to 60 seconds. Turn the dough out onto the counter and knead a few times, then shape it into a smooth ball. Wrap the dough in plastic wrap and let rest at room temperature, 30 minutes. (The dough can be made a day ahead and refrigerated; bring it to room temperature before rolling.)
  • Prepare the filling: Remove the mushroom stems and set aside for the broth; finely chop the caps. Heat the olive oil in a large skillet over medium heat. Add the chopped mushroom caps and season lightly with salt; cook until they release their liquid, about 2 minutes. Increase the heat to medium high and cook until the pan is dry and the mushrooms are golden brown, about 3 minutes. Transfer to a bowl and let cool completely, then stir in the ricotta, chives, parsley, parmesan, egg yolk and nutmeg.
  • Make the broth: Combine the reserved mushroom stems in a large Dutch oven with the porcini, onion, carrot, celery, parmesan rind, parsley and thyme sprigs, peppercorns, 1 teaspoon salt and the lemon zest. Add 10 cups cold water and bring to a boil, then reduce the heat to low and simmer until the broth is dark and reduced by half, about 1 1/2 hours. Strain through a fine-mesh sieve into a clean pot and season with salt; set aside.
  • Meanwhile, fill and shape the pasta: Cut the dough into 4 pieces. Working with 1 piece at a time (and keeping the other pieces wrapped), flatten and shape the dough into a 3-inch square with your hands. Dust a clean work surface with flour; using a floured rolling pin, roll out the dough into a 10-inch square, about 1/8 inch thick. Trim the edges so they are straight, then cut the dough into sixteen 2-to-2 1/2-inch squares. Place a heaping teaspoonful of filling in the center of each square. With damp fingers, lightly moisten the edges of the dough; fold the square diagonally to form a triangle, pressing out any air pockets around the filling. Bring the 2 opposite points of the triangle together around your finger to form a ring; lightly moisten and pinch the points together to seal. Transfer to a well-floured baking sheet as you go. Repeat to form the remaining tortelloni.
  • Bring a large pot of salted water to a boil. Bring the prepared mushroom broth to a simmer. Add the tortelloni to the boiling water. After they float to the top, cook until al dente, 3 to 4 more minutes. Divide the mushroom broth among 6 bowls. Drain the tortelloni in a colander, then divide among the bowls. Top with chopped chives and parsley.

1 pound Parmigiano-Reggiano cheese rinds (see note)
1 small, hard Italian sausage (5 to 7 ounces) such as Creminelli's Sopressata, Casalingo, Barolo, or Wild Boar, sliced into 1-inch pieces (vegetarians: omit)
2 yellow onions, peeled and coarsely chopped
2 russet potatoes, coarsely chopped
2 carrots, coarsely chopped
1 garlic head, halved crosswise
13 bay leaves
11 fresh thyme sprigs
1 tablespoon whole black peppercorns
1 tablespoon kosher salt
1 teaspoon juniper berries
1 bunch fresh parsley

Steps:

  • Add everything but the parsley to a large stockpot with 3 quarts water. Bring to a boil, then reduce the heat to a simmer so low you see only a bubble every 10 seconds or so. Maintain this simmer for 4 hours, stirring occasionally.
  • Add the parsley and simmer for 1 more hour. Strain all of the solids out of the stock with a sieve over a bowl and use the broth immediately, or store in the refrigerator for up to 5 days, or the freezer for up to 1 month.
  • Variations:
  • To make a soup-like pasta dish, boil the pasta directly in the broth along with greens such as kale, bok choy, or broccoli.
  • To make a thicker sauce to coat noodles, simmer to reduce the brodo by half, then toss it with pasta just before serving.

Steps:

  • Make parmesan broth:
  • Melt butter in heavy large saucepan over medium heat. Add leek, fennel, onion, and garlic. Stir until vegetables are soft, about 5 minutes. Add tomato paste and cook until beginning to brown on bottom of pan, about 2 minutes. Add cheese rinds, thyme, and parsley. Add enough water just to cover. Bring to boil; reduce heat to medium-low, cover, and simmer 2 hours, stirring occasionally. Strain, discarding solids in strainer. Return broth to saucepan. Boil over medium-high heat until reduced to 1 1/2 cups, about 15 minutes. Season with salt and pepper. DO AHEAD: Can be made 2 days ahead. Cover and chill. Rewarm before using, whisking to blend.
  • Make risotto:
  • Place first 5 ingredients in double layer of cheesecloth; gather ends. Tie tightly with kitchen string; trim excess cloth.
  • Bring chicken and beef broths to simmer in medium saucepan. Cover and keep warm. Melt butter in large saucepan over medium heat. Add herb bundle, onion, and garlic. Cook until onion is soft, stirring occasionally, about 5 minutes. Add rice and stir to coat. Add wine; increase heat to high. Boil until almost dry, about 6 minutes. Add warm broth mixture 1 cup at a time, allowing each addition to be absorbed before adding next and stirring often until rice is tender but still firm to bite, about 20 minutes. Add truffle butter, verjus, parsley, and chives. Stir until butter is melted. Season to taste with salt and pepper. Divide risotto among bowls. Pour 1/4 cup warm parmesan broth around risotto in each bowl and serve.

1 halved head of garlic
1 quartered onion
olive oil, enough to sauté garlic and onion
1 handful of thyme
Sprigs of parsley
1 bay leaf
1 shake of black peppercorns
1 cup of dry white wine
1 pound Parmesan rinds
8 cups of water

Steps:

  • I start by sautéing a halved head of garlic and a quartered onion in some olive oil, along with a handful of thyme, a few sprigs of parsley, a bay leaf, and a shake of black peppercorns. Once the garlic is browned, I add a cup of dry white wine and simmer, scraping the pot to get the brown bits loosened up, until reduced by half. In goes 1 pound Parmesan rinds and 8 cups of water.
  • The whole thing simmers until it tastes robust and has reduced by half, about 2 hours. (I stir every now and then-the rinds will stick to the bottom of the pot if you let them.) I strain, and then use the broth in vegetable soups, instant-supper pastas, and beans in need of a boost. Then I start hoarding all over again.

WALNUT AND PANCETTA PANSOTI WITH ASPARAGUS IN PARMESAN BROTH

1 large onion, finely chopped
3/4 teaspoon dried marjoram, crumbled
1/2 cup walnuts (2 ounces), finely chopped
2 tablespoons finely chopped fresh flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups water
1/8 teaspoon dried hot red pepper flakes
1 (3- by 2-inch) rind from a wedge of Parmigiano-Reggiano
24 (3 1/2-inch) fresh pasta squares
For asparagus
1 1/2 cups asparagus tips (from 2 lb asparagus), halved lengthwise
1 teaspoon extra-virgin olive oil
Accompaniment: grated Parmigiano-Reggiano

Steps:

  • Make pansoti filling:
  • Cook pancetta in oil in a large heavy skillet over moderately low heat, stirring frequently, until golden and fat is rendered, 10 to 12 minutes. Add onion and marjoram and cook, stirring occasionally, until onion is well browned, 10 to 15 minutes. Remove from heat and transfer half of mixture to a 2-quart saucepan and remaining half to a bowl. Stir walnuts, parsley, 1/8 teaspoon salt, and pepper into mixture in bowl. Cool filling.
  • Make sauce:
  • Add water, red pepper flakes, and cheese rind to pancetta mixture in saucepan and simmer briskly, uncovered, until reduced to about 1 cup, about 12 minutes. Pour through a fine sieve into a bowl and stir in remaining 1/8 teaspoon salt.
  • Form pansoti:
  • Place 1 level teaspoon filling in center of 1 pasta square, keeping remaining squares covered tightly with plastic wrap. Moisten edges of pasta square with water and fold in half to form a triangle, pressing around filling to force out air (air pockets increase the chance of pansoti breaking during cooking) and then pressing edges to seal. Transfer to a dry kitchen towel. Make more pansoti in same manner.
  • Cook asparagus and pansoti:
  • Cook asparagus tips in a small saucepan of salted boiling water until crisp-tender, about 2 minutes. Drain in a sieve and plunge into a bowl of ice and cold water to stop cooking. Drain and pat dry.
  • Bring a 6-quart pot of salted water to a boil, then add pansoti and cook at a strong simmer, gently stirring once or twice, until tender, 3 to 5 minutes.
  • While pansoti are boiling, cook asparagus tips in oil in a small skillet over low heat until heated through, 1 to 2 minutes.
  • Heat sauce in a 12-inch skillet over moderate heat until hot. Transfer pansoti with a slotted spoon to sauce and cook over moderate heat, stirring gently, 1 minute. Transfer pansoti to plates with slotted spoon, then top with some sauce and sprinkle with asparagus tips.

ENDIVES BRAISED IN BROTH WITH PARMESAN

Grown indoors in the dark, endives are among the perfect winter vegetables, usually used in salads but also lovely when cooked. This simple gratin benefits from good, dark stock, but the addition of Parmigiano-Reggiano will cover you if you resort to canned stock.

4 whole Belgian endives
1 cup good-quality stock
Salt and freshly ground black pepper
1/4 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Remove just a couple of the outer leaves from each of the endives; rinse them and put them in a skillet in one layer. Add the stock and sprinkle with salt and pepper. Cover and cook over medium heat until tender, 20 to 30 minutes. Preheat the broiler.
  • Cover the endives with the cheese and run under the broiler, just long enough to slightly brown the cheese. Serve with a slotted spoon.

POTATO GRATIN WITH BROTH AND PARMESAN

This is a simple and delicious Potato Gratin. I usually add some fresh minced herbs such as sage, thyme or parsley. I also never peel my potatoes no matter what potato dish I am making. (Except for gnocchi lol) Prep time is approximate. This is adapted from Cooks Illustrated, Nov. 1995 issue. I hope you enjoy as much as we do!

2 large garlic cloves, peeled and smashed
2 tablespoons unsalted butter, softened
2 1/4 cups low sodium chicken broth
1/2 teaspoon table salt
1/8 teaspoon ground black pepper
1 bay leaf
1 pinch cayenne pepper (optional)
2 lbs russet potatoes, peeled and sliced 1/8-inch thick or less
1/4 cup parmigiano-reggiano cheese, grated

Steps:

  • Adjust oven rack to center position and heat oven to 350 degrees.
  • Rub bottom and sides of 5- to 6-cup gratin dish or shallow baking dish with garlic. Mince remaining garlic and set aside. Once garlic in dish has dried, about 2 minutes,spread dish with half the butter.
  • Bring broth, salt, pepper, bay leaf, cayenne (if desired), potatoes, other herbs if you are using and reserved garlic to boil in medium saucepan over medium-high heat, stirring occasionally with wooden spoon (liquid will just barely cover potatoes). Reduce heat and simmer until liquid thickens, about 2 minutes.
  • Pour potato mixture into prepared dish; shake dish or use fork to distribute potatoes evenly. Gently press down potatoes until submerged in liquid; dot with remaining butter.
  • Bake for about 1 hour 15 minutes until golden brown, basting once or twice during first 45 minutes and topping with grated parmesan cheese after 45 minutes. Let rest 5 minutes and serve.

RICOTTA GNUDI IN PARMESAN BROTH

Gnudi translates literally as "nude," a reference to the fact that these little dumplings are basically "naked" raviolis-the fillings without their pasta wrappers. Served in a savory broth, this is a comforting winter meal.

6 cups low-sodium chicken broth
1 teaspoon freshly ground black pepper
1/4 cup freshly grated Parmesan cheese
2 1/2 cups whole-milk ricotta cheese
1/2 cup freshly grated Parmesan cheese
1 egg
1 egg white
2 ounces prosciutto, chopped
2 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon freshly grated nutmeg
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup plus 2 tablespoons all-purpose flour, plus 1 cup for dredging

Steps:

  • Bring the chicken broth to a boil in a medium saucepan over high heat. Reduce the heat to medium-low and simmer until the broth has reduced to 4 cups, about 20 minutes.
  • Meanwhile, make the gnudi. Bring a large pot of salted water to a simmer over high heat. In a large bowl, combine the ricotta, Parmesan, egg, egg white, prosciutto, parsley, nutmeg, salt, and pepper and mix thoroughly. When the water is simmering and ready, stir the flour into the ricotta mixture. (It is important not to add the flour too soon; otherwise they will become dense and gummy, not light.) Shape the gnudi using two large soup spoons: scoop up a large spoonful of ricotta mixture into one spoon, then scoop the mixture onto the other spoon and back again, forming a three-sided oval. Drop the gnudi into the dredging flour. Form another 8 or 9 gnudi at a time, dredge in flour on all sides, and tap off the excess.
  • Slide the formed gnudi into the simmering water, being careful not to overcrowd the pot. Remove the gnudi using a slotted spoon after they have floated to the top and have cooked for about 4 minutes total. While the gnudi cook, create another batch of gnudi and dredge them in flour. Continue cooking and forming gnudi, transferring the cooked gnudi to a platter in a single layer, until you have used all the ricotta mixture.
  • Divide the gnudi among the serving bowls. Pour the reduced broth over the gnudi. Sprinkle with a pinch of the pepper and a spoonful of grated Parmesan and serve.

2 tablespoons extra-virgin olive oil
1 quart low-sodium chicken broth
One 3-by-1-inch piece of Parmigiano-Reggiano cheese
1 cup thawed frozen peas
2 cups baby spinach
Egg noodles, for serving

Steps:

  • In a large bowl, stir the ricotta and 1/4 cup of grated Parmigiano with the egg, breadcrumbs, nutmeg, 1 teaspoon salt, 1/2 teaspoon pepper and 1/4 cup of water. Add the pork and combine. Form into 12 meatballs. In a large enameled cast-iron casserole, heat the olive oil. Add the meatballs and cook over moderate heat, turning, until golden all over, about 10 minutes. Stir in the broth and the piece of cheese. Cover and simmer gently over moderate heat, stirring occasionally, until the meatballs are cooked through and the broth is slightly reduced, about 20 minutes. Stir in the peas and spinach, season with salt and pepper and simmer until the peas are warmed through. In shallow bowls, spoon the meatballs and broth over egg noodles. Garnish with grated Parmigiano and serve. MAKE AHEAD The uncooked meatballs can be refrigerated overnight.

About 6 oz.(180g) Parmesan rinds
Rice:
2 fresh black truffles (about 1oz, 30g each) cleaned
2 T xvoo
2 plump moist garlic cloves, peeled, halved, green germ removed and minced
2 shallots trimmed, peeled & finely minced
Fine Sea Salt
2 cups (390g) Italian Abborio Rice
1 cup (100g) grated parmesan + more for serving

Steps:

  • 1. In a large sauce pan combine the parmesan rinds and 6 cups (1.5l) water. Simmer stirring regularly to prevent cheese fro sticking to the pan, until the rinds are soft and the broth is fragrant, about 30 min. Strain discarding rind and keep at a bare simmer. 2. With a veg. peeler, peel the truffles. Mince the peel & put in a jar with a tight lid. Finely slice the truffle with a mandoline and put slices in another jar. 3. In another large saucepan, sweat the garlic, shallots & salt in xvoo, covered till translucent. Add rice and cook till translucent. 4. When rice glistens begin adding broth a ladle at a time stirring till absorbed. Till rice is ready. Stir in the minced truffles and half the cheese. 5. Spoon into warmed bowls and top with truffle slices and more cheese.

MUSHROOM-FARRO SOUP WITH PARMESAN BROTH

2/3 cup finely grated Parmesan (about 1 ounce), plus more for garnish
1 pound mixed fresh mushrooms (such as beech mushrooms, hen of the woods or oyster mushrooms), roughly torn
2 teaspoons sherry vinegar

Steps:

  • Heat oven to 300 degrees and bring a small saucepan of water to a boil. Spread farro out on a baking sheet in a single layer and toast for 20 minutes, stirring once or twice to toast the grains evenly.
  • While farro toasts, place dried mushrooms in a small bowl and cover completely with 1 1/2 cups hot water from the saucepan. Cover the bowl and set aside to hydrate.
  • Place a large Dutch oven over medium-high heat and add the butter and 1 tablespoon olive oil. Once the butter has melted, add the shallots and 1/2 teaspoon salt and sauté until translucent, 3 to 5 minutes. Add the garlic and sauté for 2 minutes, adding a splash of water if necessary to prevent it from scorching.
  • Stir in the toasted farro. Carefully scoop the dried mushrooms from their soaking liquid and add them to the pot. Strain their soaking liquid through a fine-mesh sieve into the pot as well, discarding any grit left in the sieve. Add Parmesan broth, white wine and thyme to the pot and bring to a boil over high.
  • Once liquid boils, lower to a simmer and cook, covered, for 25 minutes. Uncover the pot and continue to cook at an active simmer until the farro is al dente, swimming in a lightly creamy broth, another 25 minutes. Remove from the heat, discard thyme stems and stir in the grated Parmesan. Season with black pepper to taste.
  • When the farro is almost done, cook the fresh mushrooms: Heat 1 1/2 tablespoons olive oil in a large (12-inch) skillet over medium-high. Add half the torn fresh mushrooms, stir to coat, then cook, undisturbed, for 2 minutes. Season with salt and pepper, then cook until the mushrooms are golden and caramelized, 1 to 2 minutes. Transfer the mushrooms to a medium bowl. Repeat with remaining 1 1/2 tablespoons oil and remaining fresh mushrooms, transferring cooked mushrooms to bowl. Stir 2 teaspoons vinegar into cooked mushrooms; season to taste.
  • To serve, ladle soup into shallow bowls. Top with seared mushrooms and extra Parmesan, to taste.

6 cup(s) chicken stock
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper
1/4 cup(s) fresh grated parmesan cheese
RICOTTA GNUDI
2 cup(s) ricotta cheese
1 cup(s) freshly grated parmesan cheese
1 large egg
2 tablespoon(s) fresh parsley chopped
3/4 cup(s) flour plus more for dredging

Steps:

  • Place the chicken broth, salt, and pepper in a large pot. bring to a boil. Reduce to a simmer and simmer 15 minutes.
  • Meanwhile make the Gnudi. Bring a pot of water to a simmer. In a bowl combine the ricotta, Parmesan, egg, and parsley. Add the flour and stir until well combined. Place more flour in a shallow dish.
  • Scoop the ricotta mixture into one large spoon then scoop it into another large spoon then back again to make an oval shape. Dredge it in the flour and set aside. When you do about 10 drop them into the simmering water. You will know they are done when they float to the top. While they cook make the next batch of Gnudi. Scoop each batch out of the water with a slotted spoon and set aside.
  • When all the Gnudi are done place them in serving bowl then pour the chicken broth over top and sprinkle with shredded Parmesan cheese.

Meanwhile, saute rosemary and chopped red pepper (or sliced small peppers) in olive oil till just tender; add cauliflower and asparagus and saute till heated through; Mix all; top with shaved parmesan and cracked pepper.

1 tablespoon olive oil
1 medium onion, quartered
½ medium head garlic, cloves peeled and minced
½ cup fresh thyme sprigs
10 sprigs fresh parsley, or to taste
1 large bay leaf
½ teaspoon whole black peppercorns
1 cup dry white wine
8 cups water
1 pound Parmesan cheese rinds

Steps:

  • Heat oil in a skillet over medium heat. Add onion, garlic, thyme, parsley, bay leaf, and peppercorns and saute until garlic is browned, about 3 minutes.
  • Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until liquid has reduced by half, 2 to 3 minutes.
  • Add water and Parmesan rinds. Simmer until reduced by half, about 2 hours. Remove any solids before using.
