1 slice white bread
1/4 cup parmigiano-reggiano cheese, grated
1 tablespoon fresh sage, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
1 tablespoon prepared mustard
2 large egg whites
4 thin boneless pork loin chops
1 1/2 tablespoons canola oil

Steps:

  • Tear bread into large pieces and pulse 10 times in a food processor until you have coarse crumbs.
  • Combine 1 cup breadcrumbs. cheese, sage, salt, and pepper in a shallow dish. In a second dish, place the flour, and in a third dish whisk the mustard and egg whites.
  • One pork chop at a time: dredge chop in flour, then dip into the egg mixture, and lastly in the breadcrumbs.
  • Heat a large nonstick skillet over medium heat. Add oil. Add pork chops and cook for 3 minutes on each side or until done.

4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)

Lemon wedges, for serving

  • Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. 1 teaspoon garlic powder

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil and spray with cooking spray.
  • Combine Parmesan cheese, bread crumbs, pepper, and garlic powder in a bowl.

Savory, crunchy and so juicy! These are a favorite around our house. My husband loves them with parmesan garlic mashed potatos. This recipe is based on one from Feb. 2001 bon appetit, although I simplified it for busy moms. I also usually use 1/2 grated Ramano and 1/2 grated parmesan.

1 1/2 cups plain breadcrumbs
1 cup grated parmesan cheese
3 tablespoons sage
1 teaspoon grated lemon peel (optional, but really good)
2 large eggs
1/4 cup flour
1 dash salt & pepper
4 bone-in center-cut pork chops
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Preheat oven to 425. Mix breadcrumbs, cheese, sage and lemon peel in a pie plate or shallow bowl and set aside. Beat eggs in a medium bowl and set aside. Place flour on a plate and season with salt and pepper. Coat pork chops on both sides with flour. Dip pork chops into eggs, then coat on both sides with breadcrumb mixture.

1 cup grated parmesan cheese
1 tablespoon dried rubbed sage
1 teaspoon grated lemon rind
2 large eggs, whisked
1/4 cup flour, seasoned with

4 pork chops, about 1 inch thick (can use bone in or out ones)
1/8-1/4 cup butter
2 tablespoons olive oil
