Nice moist quick-bread, excellent for using up any papaya that is somewhat past it's prime for eating fresh. Like most quick-bread recipes, it's very adaptable. I've made equally yummy combinations of papaya-mango and papaya-banana breads when I didn't have the full amount of papaya available. Freezes well (cool completely, slice, then wrap loaf tightly in plastic wrap or foil.)

3 eggs
1 cup applesauce
1 tablespoon vanilla extract
2 cups white sugar
1/2 medium papaya, pureed to make 2 cups
1/4 teaspoon baking powder
2 teaspoons baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
2 1/2 cups all-purpose flour
1 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease two 8" loaf pans.
  • Beat eggs, applesauce, and vanilla in large bowl.
  • Add sugar, beating until well blended.
  • Blend in papaya puree.
  • In a smaller bowl, sift together all dry ingredients (baking powder to flour).
  • Add flour mixture to papaya mixture.
  • Blend only until moistened, preferably by hand (overmixing will produce a tough bread).
  • Fold in nuts (if using).
  • Pour evenly into prepared pans.
  • Bake at 350 degrees F for about 1 hour, or until toothpick inserted in center comes out clean (with moist crumbs attached).
  • Cool pans on wire rack for 5 minutes.
  • Remove bread from pans and continue cooling, or slice and serve warm with butter or cream cheese (apple cinnamon flavored Brummel& Brown spread is wonderful with this as well).

1 cup shredded firm papaya
1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 cup raisins
1/4 cup chopped walnuts

Steps:

  • Drain papaya very well on paper towels.
  • Cream butter in a mixing bowl, using an electric mixer on medium speed.
  • Gradually add sugar, beating well.
  • Add eggs, one at a time; beat well after each addition.
  • In another bowl, mix together the flour, and next 6 ingredients; add to creamed mixture, stirring well.
  • Stir in papaya, raisins, and chopped walnuts.
  • Spoon batter into a greased and floured 8 1/2x 4 1/2 inch loafpan.
  • Bake in a 350° oven for 1 hour and 10 minutes OR until done.
  • Let cool in pan for 10 minutes; remove bread from pan and let cool completely on a wire rack.

3 eggs
3/4 cup oil
1 cup sugar
1 cup carrot (shredded)
1/2 cup coconut
1 1/2 cups applesauce
1 1/2 cups papayas (peeled,mashed)
1 cup macadamia nuts (chopped)
1 teaspoon salt
4 cups flour
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg

Steps:

  • Preheat oven to 350, lightly grease 2 loaf pans.
  • Combine eggs,oil and sugar, mix on low for 30 seconds; add carrots, applesauce, papaya and coconut, mix on low another 30 sec.
  • Add flour,salt,bakingsoda,cinammon and nutmeg to wet mixture and mix until just combined; stir in macadamia nuts.
  • Spoon batter into loaf pans, bake 55-60 min,.
  • Let rest in pan of approximately 10 min., remove from pan and cool on rack.

1 cup flour, white
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 - 3/4 cup brown sugar (or vanilla)
1 large egg
1/4 + 1/8 cup coconut oil (or vegetable)
1 1/4 cup papaya, peel, seeded and chopped
1 tsp lemon juice
1/8 cup coarsely chopped macadamia nuts
1/8 cup shredded coconut

Steps:

  • 1. Preheat oven to 350 degrees . In a large bowl, combine the flour, cinnamon, soda, salt and sugar. Mix well.
  • 2. In a small bowl, add the eggs, and oil and mix well, then slowly add to the flour mixture.
  • 3. Next add the papaya, lemon and macadamia nuts, mixing lightly. Pour the bread batter into a greased 8 x 4 loaf pan and top with the shredded coconut.
  • 4. Bake at 350 degrees F for 50 - 60 minutes or until toothpick comes out clean. Let cool in the pan on a wire rack for 10 - 15 minutes before removing from pan.

2 large ripe papayas
2 ½ cups all-purpose flour
2 tablespoons poppy seeds
1 teaspoon baking soda
1 teaspoon salt
1 ¼ cups white sugar
½ cup unsalted butter, softened
2 large eggs
½ cup buttermilk
½ cup guava juice
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Slice papayas in half lengthwise. Scoop out black seeds and discard. Peel and discard skin. Place flesh in a bowl and mash. Transfer to a strainer and allow to sit for 10 minutes to drain any liquid.
  • Combine flour, poppy seeds, baking soda, and salt in a bowl. Cream sugar and butter together in a separate bowl. Mix in eggs, one at a time, until well blended. Mix in papaya flesh, buttermilk, guava juice, and vanilla. Slowly stir in dry ingredients until just moistened. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour 15 minutes. Cool in the pan for 10 minutes, then release loaf from the pan onto a wire rack. Let cool completely, about 30 minutes, before slicing.

1 cup carrot, peeled and shredded
1 1/2 cups applesauce
1 cup fresh ripe papaya, pureed (seeds removed)
1 teaspoon salt
4 cups flour
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1 cup chopped nuts (walnuts or macadamia nuts)
nonstick cooking spray

Steps:

  • Preheat oven to 325°F.
  • Spray 2 loaf pans with non-stick baking/shortening spray and set aside.
  • Place eggs, oil and sugar into a mixing bowl.
  • Mix on slow speed one or two minutes to combine ingredients.
  • Add carrots, fresh papaya puree, applesauce and nuts.
  • Mix one to two minutes until well-mixed.
  • Add flour, salt, cinnamon, nutmeg and baking soda to mixture.
  • Beat on medium speed one and a half to two minutes.
  • Do not overbeat or end-product will become cake-like.
  • Pour into 2 loaf pans, bake 55-60 minutes.
  • Bread will appear pulled away from sides of pan and will be light brown in color.
  • A crack will appear on the top of each loaf.
  • Remove from oven, place on cooling racks.
  • Let bread rest in pan for 10 minutes.
  • Turn in each loaf and place on end in pan to cool.
  • Cool thoroughly.
  • Wrap each loaf with plastic.
  • It's particularly pretty to use colored plastic wrap or other decorative wrap if giving Papaya Bread as a gift.
  • This bread freezes well.
