16 thin slices pancetta
16 teaspoons soft fresh goat cheese (from 5-ounce log)
2 very ripe small pears, halved, cored, cut into 1/4-inch-thick slices
Fresh thyme leaves

Steps:

  • Preheat oven to 450°F. Place pancetta slices in single layer on large rimmed baking sheet. Sprinkle with pepper. Bake until golden, about 10 minutes. Using spatula, slide pancetta crisps onto platter. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme and serve.

12 slices pancetta, thin slices
1 bartlett pear
4 ounces goat cheese, crumbled
1 teaspoon pepper
2 tablespoons honey

Steps:

  • Preheat oven to 450°F.
  • Arrange pancetta slices on a foil-lined baking sheet. Bake 8 to 10 minutes or until golden. Transfer to a paper towel-lined wire rack to drain. Let stand 10 minutes or until crisp.
  • Core pear with an apple corer. Cut pear crosswise into 12 thin rings. Arrange on a serving platter. Top evenly with pancetta and goat cheese; sprinkle with pepper. Drizzle with honey just before serving.

1 sheet frozen puff pastry, thawed
6 ounces cream cheese, softened
2 tablespoons honey
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup (1 ounce) crumbled fresh goat cheese
3 tablespoons crumbled crisp pancetta or crumbled cooked bacon
3 tablespoons finely chopped peeled ripe pear
2 tablespoons finely chopped pecans, toasted

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold pastry dough. Using a 1-3/4-in. round cookie cutter, cut dough into 24 circles. Transfer to parchment-lined baking sheets. Bake until golden brown, 10-12 minutes. Cool completely on a wire rack. , Meanwhile, beat cream cheese, honey, salt and pepper until well blended. Fold in goat cheese, pancetta, pear and pecans., Halve each cooled pastry. Spoon cream cheese mixture over bottom pastry halves; cover with top halves. Serve at room temperature.
