2 cups almond flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
2 eggs
½ cup water
1 teaspoon almond extract
¼ cup agave syrup
2 ripe bananas, mashed
½ teaspoon vanilla bean paste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray loaf pan with cooking spray.
  • Mix together almond flour, ground cinnamon, and baking soda in a bowl.
  • Beat two eggs in a bowl. Mix in water, almond extract, agave syrup, mashed bananas, and vanilla bean paste. Add banana mixture to almond flour mixture; mix until no dry areas are visible. Pour batter into the prepared loaf pan.
  • Bake banana bread in the preheated oven until brown and crisp around the edges, about 45 minutes.

I have been baking with chocolate all week and this morning decided to make this banana bread. I wasn't sure how it was going to turn out but I have to say ... Amazing! You really need to try this recipe! I'd better get down stairs to hide some before it is all gone.

1 cup semi-sweet chocolate chunks
1 tablespoon unsalted butter
1 teaspoon coconut oil, or more as needed
2 tablespoons ground cinnamon
1 cup mashed ripe bananas
½ cup coconut flour
1 teaspoon baking soda
⅛ teaspoon sea salt
½ cup almond butter
4 eggs
1 teaspoon coconut oil

Steps:

  • Melt the chocolate, butter, and 1 teaspoon coconut oil in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove from heat and stir in cinnamon.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan with 1 teaspoon coconut oil.
  • Sift coconut flour, baking soda, and salt together in a bowl. Place mashed bananas in a large bowl; fold flour mixture into bananas with a rubber spatula.
  • Beat almond butter and eggs together in a bowl until creamy; add to banana mixture and mix well.
  • Pour 1/2 banana mixture into prepared loaf pan; top with 2 tablespoons chocolate mixture. Use a fork to spread and swirl the chocolate mixture through the banana batter. Repeat with remaining banana batter and chocolate mixture.
  • Bake in the preheated oven until top is golden brown and loaf is cooked through, 50 minutes.

This banana bread is paleo friendly and made with almond flour, almond butter, and shredded coconut.

2 medium bananas, mashed
3 large eggs
¼ cup almond butter, softened
3 tablespoons agave nectar
2 cups blanched almond flour
½ cup unsweetened shredded coconut
3 teaspoons baking powder
½ teaspoon sea salt
1 cup mini dark chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a bread pan with parchment paper, tucking the paper around the sides to keep it in place.
  • Combine mashed bananas, eggs, almond butter, and agave nectar in a large bowl.
  • Mix together almond flour, coconut, baking powder, and sea salt in a second bowl. Whisk almond flour mixture into egg mixture until just combined.
  • Fold the majority of chocolate chips into the batter, reserving 1 to 2 tablespoons for the top. Pour batter into the prepared pan, spreading it out evenly. Press reserved chocolate chips into the top.
  • Bake in the preheated oven until the top is golden brown, 30 to 35 minutes.
  • Remove from the oven and pull on the edges of the parchment paper to remove the loaf from the pan. Transfer to a wire rack and cool for at least 10 minutes before slicing.

3 eggs
1 tablespoon vanilla
1 tablespoon honey
1/4 cup vegan palm oil shortening
2 cups blanched almond flour

1 cup chocolate chips (optional)

Steps:

  • Pulse bananas, eggs, vanilla, honey and shortening in a food processor.
  • Pulse in almond flour, salt and baking soda.

1/2 cup almond butter (140 grams)(or coconut, sunflower seed, macadamia nut, etc butter)
4 tablespoons grass-fed butter, melted (can substitute coconut oil)
1/2 cup coconut flour (75 grams)(or almond flour/meal, macadamia nut meal, etc)
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder (gluten free or homemade)
1 teaspoon vanilla
pinch of sea salt

Steps:

  • Instructions Preheat your oven to 350 degrees fahrenheit Combine your bananas, eggs, and nut butter, and grass-fed butter in a blendtec, blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer) Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well Grease a 9×5 glass (see notes) loaf pan with a fat of your choice (I used grass-fed butter).
