The festive colors in this salad make it a delightful addition to the holiday spread. Quick and easy, this recipe tastes good and is also good for you.

4 medium firm bananas, sliced
1 medium green apple, chopped
1 medium red apple, chopped
1/2 cup miniature marshmallows
1/2 cup dried cranberries
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup dry roasted peanuts, coarsely chopped, divided

Steps:

  • In a large bowl, gently stir the bananas, apples, marshmallows, cranberries and whipped topping. Fold in 1/4 cup peanuts. Refrigerate until serving. Sprinkle with remaining peanuts just before serving.

This is one of my favorite recipes because it is light and very tasty. I had one of my family members try it and she thought it was so good that it was a recipe from a published cookbook. It is the best sweet sandwich you will ever taste! Perfect for all ages.

½ apple, cored and diced
½ banana, sliced
¼ cup apple juice
1 tablespoon strawberry jam
2 tablespoons peanut butter
2 slices whole-wheat bread, toasted

Steps:

  • Mix apple, banana, apple juice, and strawberry jam together in a bowl.
  • Spread peanut butter on both slices of bread. Top one piece of bread with fruit mixture. Place second slice of bread over the fruit mixture.
