Make it the night before and it is cold, creamy, delicious, and healthy for your breakfast the next morning. Like the Kashi® bowls, but much cheaper and simpler.

1 tablespoon ground flax seeds
1 tablespoon oat bran
1 tablespoon quick-cooking oats
1 tablespoon cooked brown rice
12 raisins, or more to taste
¼ teaspoon ground cinnamon
½ cup soy milk, or more as needed

Steps:

  • Mix ground flax seeds, oat bran, quick-cooking oats, brown rice, raisins, and cinnamon together in a container with a lid. Pour in soy milk; stir to make sure flaxseed mixture is suspended in milk.
  • Cover and refrigerate until oats soften, at least 6 hours. Uncover and stir before serving.

The flavors in this sweet breakfast really stand out. I adapted this to 1/4 the original recipe but if you want it to make more than one serving, just multiply ingredient amounts accordingly. You can really enjoy playing with this recipe.

1/2 cup old fashioned oats
3/4 cup soymilk (vanilla is esp. good) or 3/4 cup other non-dairy milk substitute (vanilla is esp. good)
1 -2 tablespoon raisins (more or less, according to your preference)
1/2 teaspoon orange zest, finely grated
1/4 teaspoon ground cinnamon
2 -3 tablespoons raw sunflower seeds (if you like them, adds a delicious crunch) or 2 -3 tablespoons roasted sunflower seeds (if you like them, adds a delicious crunch)
1 small granny smith apples or 1/2 large granny smith apple, chopped
other dried fruit or nuts, of your choice

Steps:

  • Combine all ingredients EXCEPT SUNFLOWER SEEDS AND APPLE in a bowl.
  • Cover bowl and refrigerate overnight.
  • In the morning, chop the apple and stir it in with the seeds (or any others you prefer). Enjoy!
  • Notes: You can play a bit with the amount of soymilk in this recipe, since some like it super-thick. If you want it slightly moister, use the 3/4 cup. Or you might want even more.
  • I know, getting out the grater for 1/2 tsp orange zest -- but it is so worth it!

Posted for ZWT-6; from the Usborne Children's World Cookbook Gramma gave my son when he first started learning to cook. Muesli is a healthy breakfast cereal made up of grains, fruit and nuts. It was originally created by a Swiss doctor. This recipe calls for raisins or sultanas, but I love to use dried cherries or cranberries as well as dried cranberries flavored with orange or pomegranate. Fresh fruit is nice with it as well. Cook time includes overnight softening of the oats, as there is no actual cooking for this recipe.

3 tablespoons rolled oats (bulk section of supermarket)
6 tablespoons water
1 apple
2 tablespoons lemon juice
1 tablespoon raisins (or sultanas)
1 tablespoon mixed nuts, chopped
7 tablespoons milk
1 tablespoon clear honey

Steps:

  • Before you go to bed, put the oats into a large bowl and pour the water on top.
  • In the morning, peel the apple, cut it in half, then grate it. Put it into a bowl, then stir the lemon juice into it.
  • Gently stir the apple, raisins or sultanas and nuts into the softened oats.
  • Divide the muesli into four bowls and pour a little of the milk into each one.
  • Drizzle some honey on top of each serving.

The original inspiration for this was my recipe #423395 from the Usborne Children's World Cookbook that Gramma gave my son when he first started learning to cook. This version was created when I was soaking the oats one night when DS mentioned that he'd eaten the last apple. He didn't know I had plans for it in the morning. The next morning I used strawberries instead and whatever else was on hand & this recipe was born. :) Muesli is a healthy breakfast cereal, originally created by a Swiss doctor, made up of grains, fruit and nuts.
