OVERNIGHT BRUNCH EGG BAKE
Our easy, cheesy overnight egg bake means can you sleep in even when you're hosting brunch the next morning. Spend 30 minutes assembling the ingredients the night before including Colby-Monterey Jack cheese blend, green onion, ham, mushrooms, red pepper and parsley. Store this overnight ham and egg breakfast casserole in the fridge and pop it into the oven the next morning.

Steps:
- Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray. Sprinkle half of cheese evenly into sprayed baking dish.
- Melt butter in medium skillet over medium heat. Add onions, 1/2 medium bell pepper and mushrooms; cook until onions and bell pepper are tender. Arrange vegetables over cheese in baking dish. Top with ham strips. Sprinkle remaining cheese over ham.
- Beat eggs in large bowl. Lightly spoon flour into measuring cup; level off. Add flour, parsley and milk to eggs; blend well. Pour over mixture in baking dish. Cover; refrigerate 8 hours or overnight.
- To serve, heat oven to 350°F. Uncover baking dish; bake at 350°F. for 55 to 65 minutes or until mixture is set and top is lightly browned. Let stand 10 minutes before serving. To serve, cut into squares. Garnish with red bell pepper and fresh parsley.

CHEESY EGG CASSEROLE
This Cheesy Egg Casserole is an easy recipe to put together the night before and adding your favorite breakfast meat and vegetables can make it even better.

Steps:
- Butter bread slices and cut into cubes.
- In a 1 ½ quart buttered baking dish, alternate layers of bread cubes and grated cheese.
- Mix beaten eggs, milk, mustard, salt and pepper.
- Pour over bread and cheese mixture.
- Store in refrigerator overnight.
- Starting in a cold oven, bake at 350 degrees F for 1 hour. If not golden after an hour, bake a few minutes longer.

- Grease 9x13-inch pan.
- Cube bread and layer in pan.
- Brown and drain sausage.
- Layer sausage over bread.
- Sprinkle cheese over sausage.
- Beat together eggs, 2 1/4 cups milk, and salt.
- Pour over all layered ingredients.
- Mix 1/2 cup milk and soup.
- Pour over all.
- Cover and refrigerate overnight.
- Bake, uncovered at 300°F for 1.5 hours.
- Let stand for a few minutes until firm.

THREE CHEESE EGG FONDUE
I found this in Let's Talk Scents, an appetizer and hors d'oeuvres cookbook from the Queen of All Saints Altar and Rosary Society. Number of servings is a guess. Don't use that canned cheese in this! Half-and-half may be substituted for the wine.

- When eggs are beginning to set, add butter in small pieces.
- When butter is melted, add cheeses and wine.

- Heat a large skillet over medium-high heat; cook and stir the sausage in the hot skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Grease a 9x13 inch baking dish. Spread the bread cubes into the prepared dish; sprinkle the browned sausage and Cheddar cheese overtop.
- Beat the eggs in a mixing bowl until smooth; add the salt, mustard powder, and 2 cups of milk and whisk until evenly blended. Pour the egg mixture over the bread cubes. Cover and refrigerate overnight.
- Preheat an oven to 300 degrees F (150 degrees C). Whisk together the cream of mushroom soup and 1/2 cup milk; pour over the casserole.
- Bake in the preheated oven until firm and golden brown, about 1 1/2 hours.
