Delicious Oven-Baked Cranberry Barbecue Chicken (Or Turkey Legs) image

This is SOOOO good! You can double the complete recipe and bake in a roaster pan, throw in a chopped green bell pepper and/or a jalapeno pepper also if desired! Four small turkey legs can be used in place of the chicken, if using larger turkey legs then double the cranberry sauce and BBQ sauce, also the cooking time will need to be increased.

6 -8 chicken pieces
1 tablespoon vegetable oil
2 tablespoons butter
salt and black pepper
1 onion, chopped
1 -2 tablespoon minced fresh garlic (or to taste)
1 large celery rib, finely diced
1 pinch cayenne pepper (optional)
1 (16 ounce) can ocean spray whole berry cranberry sauce
1 cup favorite barbecue sauce

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Heat butter with oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add to the skillet; cook on both side until lightly browned, then place the chicken skin-side up into the baking dish (leave the drippings in the pan).
  • Add in the onion, celery, garlic and cayenne pepper (if using) adding in a little more oil if needed; sate for about 3 minutes; stir in the cranberry sauce and BBQ sauce; bring to a light simmer, stirring until completey combined, then pour over the chicken.
  • Bake uncovered for about 50 minutes or until chicken is tender and cooked through, basting with the sauce a couple times during baking.
  • Delicious!

1 cup Gold Medal™ all-purpose flour
1 teaspoon salt
1 teaspoon pepper
3- to 3 1/2-lb cut-up broiler-fryer chicken
Cooking spray
1/2 cup barbecue sauce
2 tablespoons honey

Steps:

  • Heat oven to 400°F. Pour buttermilk into large shallow dish. In large plastic food-storage bag, mix flour, salt and pepper. Dip each chicken piece in buttermilk, then place in bag with flour. Hold bag closed and shake until chicken is coated. Place skin side down in ungreased 15x10x1-inch pan. Spray chicken generously with cooking spray. Turn chicken; spray other sides generously with cooking spray.
  • Bake uncovered 45 to 50 minutes or until chicken is crisp and juice is no longer pink when centers of thickest pieces are cut.
  • Meanwhile, in small bowl, mix barbecue sauce and honey . Just before serving, brush chicken with sauce mixture.

BARBECUE LEMON CHICKEN IN THE OVEN

2 lemons, zest of
1 cup barbecue sauce (your favorite)
2 teaspoons italian seasoning (or Mrs Dash)
4 garlic cloves, peeled and mashed
1 sprig fresh rosemary
1 whole chicken

Steps:

  • Preheat oven to 350°F Cut zested lemons in half, squeeze out juice into a small bowl and set aside halves. Add zest, barbecue sauce, and seasonings to the lemon juice; mix well.
  • Place chicken in baking pan. Place 2 of the lemon halves along with the mashed cloves of garlic and roesmary sprig into the cavity of the chicken.
  • Rub skin of chicken all over with remaining 2 lemon halves and discard. Tie legs together with twine.
  • Bake 1 1/2 - 2 hours or until chicken is cooked through to 170F brushing with the barbecue sauce mixture every 5 min during the last 20 minutes of baking.
  • Remove chicken from oven, and discard lemon halves and garlic cloves from chicken cavity. Skim fat from drippings in pan, and serve with the chicken.

HOISIN OVEN BARBECUE CHICKEN

2/3 cup hoisin sauce
3 tablespoons rice wine vinegar
3 tablespoons soy sauce (low sodium can be used if desired)
3 tablespoons ketchup
2 tablespoons brown sugar
1 tablespoon minced garlic
8 chicken drumsticks (skin off if desired)
8 chicken thighs (skin off if desired)

Steps:

  • To prepare the barbecue sauce: combine the first 6 ingredients in a medium bowl.
  • Place 3/4 cup sauce in a large bowl; cover, and chill the remaining barbecue sauce.
  • Add the chicken legs and thighs to the sauce in the large bowl; toss to coat.
  • Cover, and marinate in the refrigerator for 8 hours, or overnight.
  • Set oven to 375 degrees.
  • Remove the chicken from the fridge.
  • Place the chicken on a broiler pan coated with cooking spray; reserving the marinade from the bowl.
  • Bake at 375 for 30 minutes.
  • Turn the chicken; baste with reserved marinade.
  • Bake an additional 20 minutes, or until the chicken is done, and discard the marinade On top of the stove, bring the 3/4 cup of the reserved marinade from the fridge to a boil in a small saucepan; reduce heat, and cook until slightly thickened to about 1/2 cup (this should take about 5 minutes).
  • Drizzle the hot chicken with the sauce before serving, or serve the sauce at the table.

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a small saucepan, melt butter or margarine. Add onion powder, sugar, Worcestershire sauce and mustard; mix well. Dilute ketchup with water and add to saucepan mixture. Let simmer for 15 minutes.
  • Place chicken wings in a 9x13 inch baking dish. Pour saucepan mixture over chicken. Bake, uncovered, in the preheated oven for about 45 minutes.

4 tablespoons olive oil
1 small onion, finely chopped
1 garlic clove, finely chopped
1 stick celery, finely chopped
3 tablespoons tomato paste
2 tablespoons honey
2 tablespoons light brown sugar
3 tablespoons soy sauce
4 tablespoons wine vinegar
1/2 lemon, juice of
1/2 teaspoon ground ginger
1 tablespoon mustard powder
2 teaspoons Tabasco sauce
8 skinless chicken thighs or 8 skinless chicken breasts
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 400F and line a roasting tray with foil.
  • Put 2 tbsp oil in a small pan over a medium-low heat. Add the onion, garlic and celery and fry until soft.
  • Meanwhile, mix together the tomato paste, honey, sugar, soy sauce, vinegar and lemon juice.
  • Once the vegetables are soft, add the ginger, fry for 2 minutes then stir in the tomato paste mix.
  • Bring to the boil, reduce the heat and simmer gently for 15-20 minutes. Add the mustard powder and Tabasco.
  • Rub the chicken in 2 tbsp oil. Season with pepper. Arrange in a single layer in the foil-lined dish.
  • Roast legs and thighs for 15 minutes and breasts for 10.
  • Remove from the oven, pour over the sauce. Mix well to coat the chicken, then return to the oven and cook for 25 minutes, turning once.

1 c ketchup
2 Tbsp worcestershire sauce
1 tsp hot sauce
1/4 c vinegar
2 Tbsp prepared mustard
2 Tbsp sugar
1 tsp seasoned salt
1 fryer, cut up into 8 pieces, or chicken parts

Steps:

  • 1. Wash the chicken and soak it in a bowl with 2 teaspoons of salt added to 2 cups of water. Drain. Preheat oven to 400 F. Mix together all of the ingredients except the chicken to make the sauce. Place the chicken pieces in a baking dish. Bake on the lowest rack of the oven for 25 minutes. Remove the liquid from th bottom of the pan, and brush the barbecue sauce over the chicken. Return the chicken to the oven and bake for 20 to 25 minutes longer or until tender (it will be done when the leg feels soft when mashed).

When I was grocery shopping yesterday at Wal-mart I noticed they had a 4.5 pound chicken legs for $5.98. Hmm - that's less expensive than the $7.00+ I'm spending on Tyson's chicken wings. I have good BBQ sauce at home and I'd get more "cluck for my buck." This isn't a standard recipe. It's one I made up on my own and it just happened it turned out GREAT! 1 large package of chicken legs - skin on
1 large bottle of your favorite barbecue sauce
- salt and pepper to taste

Steps:

  • Preheat oven to 300 degrees.
  • Spray a large baking sheet with PAM and place the chicken legs on it in 2 rows. Sprinkle the chicken with salt and pepper. Use whatever BBQ sauce you want and drizzle each leg with some of the sauce. Bake for 1 1/2 hours.
  • At 1 1/2 hours take the chicken out and turn each piece over, then drizzle more BBQ sauce on each piece (I actually COVERED the chicken in BBQ sauce). Put it back in the oven and continue baking for another 30 minutes.

1 small onion, chopped
1 cup ketchup
3/4 cup water
1/4 cup apple cider vinegar
2 tablespoons buffalo wing sauce (I use Ken's brand)
2 teaspoons Worcestershire sauce
2 teaspoons prepared yellow mustard, well rounded
2 teaspoons minced garlic
1 tablespoon brown sugar
1 tablespoon canola oil

Steps:

  • Pour canola oil into a large frying pan and heat over medium heat.
  • Add chicken pieces and brown well.
  • Remove chicken and place in a 9x13-inch baking pan.
  • Preheat oven to 350°F.
  • Add onion to the frying pan and stir well; scraping up and brown bits from the chicken.
  • Sauté about 2 minutes.
  • Meanwhile, in a mixing bowl combine remaining sauce ingredients and stir to mix well.
  • Pour sauce mixture into frying pan with onion and stir to combine.
  • Simmer sauce for 15-20 minutes to allow the flavors to blend.
  • Pour over chicken, then flip pieces so that both sides of the chicken get coated with sauce.
  • Bake chicken for 30 minutes or until juices run clear.
  • Note: If you double the sauce so you have enough for extra dipping, make sure you only pour 1/2 over the chicken before baking. The remainder of the sauce can simmer gently while the chicken bakes.

2 cups tomatoes, fresh (or if using canned tomatoes, drain slightly)
1/4 cup chili sauce
1/4 cup A.1. Original Sauce
1/4-1/3 cup white vinegar
2 tablespoons brown sugar
2 onions, chopped finely
1 tablespoon paprika
1 teaspoon salt, to taste
1 tablespoon Worcestershire sauce
fresh minced garlic, if desired

Steps:

  • Set oven to 325 degrees.
  • Grease a med-large casserole dish.
  • Brown chicken pieces on both sides.
  • Layer chicken pieces evenly in prepared baking dish.
  • In a med-size frying pan, break tomatoes into small pieces.
  • Add all other ingredients to tomatoes and simmer for 2-3 mins to combine flavours.
  • Pour tomato mixture over chicken pieces.
  • Bake covered, approximately 50 mins, or until chicken is done.
  • If sauce becomes too thick before meat is done, add a little water.
