OVEN-BAKED POTATO FRIES
This is a great recipe to get kids started learning how to cook. Take a day, take a week, teach them new things each day. We used this for our 'at-home' camp week. Taught the kids how to cook one new thing each day for an entire week.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
- Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

CRISPY OVEN-FRIED POTATOES
Baked in the oven, these crispy potatoes are golden perfection with some garlic and chunks of onion, and cleanup is a breeze.

Steps:
- Gather the ingredients. Position the rack in the lower part of the oven. Preheat the oven to 450 F.
- Combine the oil and butter in a large, rimmed baking pan . Place the pan in the oven until the butter has melted.
- Peel the potatoes and cut them into 1-inch cubes or small wedges.
- Peel the onion and cut it in half. Cut each half into 4 chunks.
- Mince the garlic.
- Arrange the potatoes, onion chunks, and garlic in the pan, and stir lightly to coat with the butter and oil.
- Roast the potatoes in the preheated oven for about 1 hour, or until golden brown and crispy. Stir occasionally.
- Sprinkle with salt and pepper as desired.
- Toss the potatoes with the minced parsley just before serving. Serve as a side with your choice of protein and enjoy.

- Heat oven to 425 degrees F.
- Cut the potatoes into nice thick "handcut fry slices," put in a large bowl and cover with cold water. You can do this in advance if you want - for up to 24 hours. It helps to remove the excess starch.
- Drain the potatoes and pat dry on paper towel.
- Arrange in a single layer on a baking sheet. Drizzle with oil, sprinkle with salt, pepper, and paprika.
- Bake until tender and golden crispy outside, about 40 minutes. When out of the oven, hit them with some dashes of steak spice.
