This creamy chip dip is different from any I've ever had. Mix sour cream with tomatoes and green chilies, black olives and Cheddar cheese. Always a hit at parties. Great texture and taste! Serve with tortilla chips or crackers.

1 (16 ounce) container sour cream
1 (10 ounce) can diced tomatoes with green chile peppers, with liquid
½ (1 ounce) package dry ranch salad dressing mix
1 (6 ounce) can sliced black olives, drained
1 cup shredded Cheddar cheese

Steps:

  • Mix together sour cream, canned tomatoes, dry ranch dressing mix, black olives, and shredded cheese. Chill for 2 hours before serving.

This is an easy way to modify salsa into something just a bit better and it's a different dish to put on the coffee table during the Superbowl too. It's from a newspaper clipping.

Number Of Ingredients 8

2 avocados, pulp scooped out
1 1/2 tablespoons fresh lemon juice
12 ounces chunky salsa
8 ounces sour cream
2 cups monterey jack cheese, shredded
1/3 cup black olives, sliced
3 scallions, trimmed and chopped
1 cup fresh tomato, chopped (I use Romas)

Steps:

  • Pour the lemon juice into a bowl and mash up the avocado pulp into it.
  • Spread this in the bottom of a 7x11-inch casserole dish.
  • Drain the salsa in a colander and then mix it with the sour cream. Spread this over the avocado layer.
  • Sprinkle the top with the tomatoes, cheese, scallions and olives.
  • Refrigerate for up to a day in advance (covered with cling wrap) and serve cold with tortilla chips.

I got this recipe off the back of a ritz cracker box, since then I have served it at all my parties and it is a big hit, people are always asking for the recipe.

1 3/4 cups salsa
3/4 cup black beans, drained
1/3 cup corn, drained
1 1/2 tablespoons cilantro
3/4 teaspoon lime juice
1/4 teaspoon cumin

Steps:

  • Mix all ingredients together.
  • chill.
  • serve (works good with tortillas, but i like ritz crackers the best).
