A wonderful looking, delicious and so simple way of using Halloumi cheese, that miracle greek cheese that can be cooked in slices

2 tablespoons chopped de-seeded fresh red chili (about 2 medium chillies)
60 ml extra virgin olive oil
2 (250 g) packets halloumi cheese, sliced medium-thin (i.e., just under half a centrimetre)
juice of quarter lemon

Steps:

  • Mix the chopped chilli and olive oil in a small bowl or cup and leave the flavours to deepen while you cook the cheese.
  • Put the slices in a non-stick frying pan for this, without any oil, and just give the cheese slices about 2 minutes a side until they're golden-brown in parts.
  • When all the slices of halloumi are cooked, transfer them to a couple of small plates. Give the chilli oil a stir, spoon it over the cheese, then give a spritz of lemon.

Growing up in a Cypriot family Hellim (also known as Haloumi) was a staple in our family. Mum either would fry or grill the cheese then served with lemon juice and crust bread for breakfast. Yes breakfast! She would never coat it with flour as I see many recipes on Zaar however you could coat this recipe in flour if you wish. You could easily slightly alter the olive oil, lemon juice, spring onion or chilli to suit your palate

1 -2 tablespoon olive oil
1/2-1 tablespoon fresh lemon juice
1/2-1 tablespoon fresh oregano, finely chopped
1 small green shallots or 1 small green onion, ends trimmed, thinly sliced
1/2 large red chili pepper, fresh & finely chopped (or more depending on your taste bugs)
fresh ground black pepper
1 tablespoon olive oil or 1 tablespoon olive oil flavored cooking spray
250 g halloumi cheese, drained, thickly sliced
fresh oregano leaves (optional)
1/2 fresh lemon, sliced in wedges (optional)

Steps:

  • Whisk all dressing ingredients together (Olive oil, lemon juice, oregano, green shallot and chilli) in a small bowl. Taste and season with pepper. Set aside until Haloumi is cooked.
  • To cook the Haloumi, heat a large non-stick frying pan over a high heat, with one tablespoon of olive oil or spray the pan with olive oil cooking spray. Once the pan was hot add haloumi and cook for one minute each side or until brown and heated through.
  • Place the haloumi on a serving platter. Spoon over the dressing and sprinkle with oregano leaves and sliced lemon wedges. Serve immediately with crusty bread.
  • Enjoy.

This affordable dish featuring slightly salty, herby halloumi is a great meat free meal. Any leftovers make a great take-to-work lunch for the next day

350g orzo
15g pack oregano , leaves picked, larges ones roughly chopped
3 tbsp olive oil
250g halloumi , sliced
200g plum cherry tomatoes , halved
handful pitted black olives , chopped
140g tub fresh pesto

Steps:

  • Bring a large pan of salted water to the boil and cook the orzo following pack instructions. Meanwhile, mix the chopped oregano in a small bowl with the oil and brush some over the halloumi. Heat a large, non-stick frying pan and cook the halloumi for a few mins each side until golden and soft.
  • Drain the cooked orzo and mix with the tomatoes, olives and pesto. Season to taste. Spoon onto a serving plate and top with the halloumi. Drizzle over any remaining oregano oil and scatter over the leaves.

This oregano seasoning is based on a Brazilian recipe using 'queijo de coalho' and works really well with halloumi. Serve with a selection of dipping sauces

2 x 250g blocks halloumi cheese
2 tbsp extra virgin olive oil
1 tbsp dried wild oregano

Steps:

  • To remove excess saltiness, soak the halloumi in cold water for 2 hrs, or overnight. Cut the halloumi into 4 long pieces and thread onto metal skewers, or wooden ones that have been soaked for 10 mins. Drizzle with the oil, then sprinkle with the oregano and a good grind of cracked black pepper.
  • Heat an outdoor barbecue, or use a hot griddle pan. Grill for 2-3 mins each side, then serve with the sauces (see 'goes well with', below right).
