ORANGE COLADA FROM THE VIRGIN ISLANDS
Rum combined with pineapple,orange juice and pina colada mix takes you back to the salty seas of the caribbean. If Cruzan orange rum is not in your budget (like mine), use dark rum with 1 tsp. orange zest. A bit sweet, so some of us would like to add another 2 oz. of rum, your call. Steps:
- 1. In a small saucepan, heat sugar and water to boiling, stirring until dissolved. Stir in marmalade and juice. Continue to boil for 1-2 minutes then remove from heat. Place in a serving container.
- 2. Heat skillet. Spray with nonstick or melt butter.
- 3. In a bowl, whisk eggs and pina colada mix together.
- 4. Dip bread slices in the mixture coating both sides.
- 5. Place coated bread in prepared skillet.
- 6. Cook to golden brown on both sides. Then remove to a plate.
- 7. Serve toast with banana slices, orange syrup, and shredded coconut if desired.
