This is really just scrambled eggs with a whole bunch of stuff in it. Easy, delicious and comforting!

Number Of Ingredients 8

4 eggs
2 tablespoons milk
salt and pepper (to taste)
1/4 cup shredded cheese (we like Colby Jack)
3 slices cooked bacon, crumbled
1/2 cup mushroom, sliced
extra cheese (to garnish) (optional)
parsley (to garnish) (optional)

Steps:

  • Crack all 4 eggs into a bowl.
  • Add the milk, salt and pepper to the eggs and whisk. Set aside.
  • Sauté mushrooms in a bit of butter for 2 or 3 minutes.
  • Add the shredded cheese, bacon crumbles and sauteed mushrooms to the egg mixture and mix.
  • Pour egg mixture into a pan at medium-high heat and cook eggs, scrambling constantly, until no liquid is visible.
  • Top with additional cheese and parsley if desired.

Number Of Ingredients 8

1 cup sliced peeled uncooked potatoes
1/2 cup diced fully cooked ham
1/2 cup each chopped onion, green pepper and sweet red pepper
1 can (4 ounces) mushroom stems and pieces, drained
1 tablespoon butter
1 teaspoon salt
4 eggs, lightly beaten
1/2 cup shredded cheddar cheese

Steps:

  • Place potato slices in a saucepan; cover with water. Bring to a boil. Cook until tender; drain. In a skillet, saute the potato, ham, onion, peppers and mushrooms in butter for 6-8 minutes or until vegetables are tender. Sprinkle with salt. Pour eggs over top. Cook and stir until the eggs are completely set. Sprinkle with cheese.

Ingredients:
2 T olive oil
2 garlic cloves, minced
2 C chopped fresh greens (such as kale, Swiss chard, spinach, beet greens or a mix)
2 T crumbled feta or goat cheese
3 - 4 eggs, lightly beaten
3 T chopped Kalamata olive
1 lemon, cut into wedges (optional)

Steps:

  • Heat oil over med heat, add garlic & stir until fot. Add greens & stir until soft. Evenly distribute your greens on the bottom of the skillet & then sprinkle w/ feta. Pour eggs over top & cook until eggs are just as you like them. (You can cover with a lid to hasten the cooking time) Top w/olive & sprinkle with a tiny bit of salt. Serve w/lemon wedges.
