2 eggs
2 tablespoons milk
1 tablespoon butter
1/4 cup pizza sauce
10 slices pepperoni
1/4 cup shredded part-skim mozzarella cheese
1 tablespoon shredded Parmesan cheese

Steps:

  • In a bowl, beat eggs and milk. In a skillet over medium heat, melt butter. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely set, remove from the heat., Spread pizza sauce over half of the eggs; top with pepperoni and mozzarella cheese. Fold in half; sprinkle with Parmesan cheese. Serve immediately.

1 (2 ounce) package sliced pepperoni, or to taste
½ tomato, diced
¼ cup diced onion
¼ cup diced mushrooms
2 tablespoons diced olives
1 pinch dried oregano, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
4 eggs, beaten

Steps:

  • Mix pizza sauce, pepperoni, tomato, onion, mushrooms, olives, oregano, salt, and pepper together in a bowl.
  • Heat oil in a skillet over medium heat. Pour eggs into the hot oil and cook until set, about 5 minutes. Pour pizza sauce mixture over eggs and cook until firm enough to fold 1 side of eggs over the filling creating an omelet, 5 to 10 minutes more.

3/4 cup sliced fresh mushrooms
2 tablespoons chopped onion
2 teaspoons olive oil
1 tablespoon butter
3 eggs
3 tablespoons water
1/8 teaspoon salt

1/4 cup marinara sauce or spaghetti sauce, warmed

Steps:

  • In a small nonstick skillet, saute mushrooms and onion in oil until tender. Remove from skillet and set aside., In the same skillet, melt butter over medium-high heat. Whisk the eggs, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges)., As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, spoon mushroom mixture on one side and sprinkle with cheese; fold other side over filling. Slide omelet onto a plate. Serve with marinara sauce.

2 tablespoons milk
1/4 teaspoon italian seasoning
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
3 tablespoons pizza sauce (I used Papa John's Pizza Sauce)
1/4 cup shredded mozzarella cheese
8 pepperoni slices

Steps:

  • In a small bowl beat together eggs, milk, and Italian seasonings until well blended.
  • In a skillet over medium heat, melt butter.
  • Add eggs; as the eggs set lift edges so the rest of the eggs can cook.
  • When eggs are partially set, spread pizza sauce on half of the eggs.
  • Cover sauce with mozzarella cheese; cover cheese with pepperoni.
  • Place other half of omelet over pepperoni.
  • Remove from heat and let sit for a couple of minutes or until cheese is slightly melted.

2 eggs, beaten
2 tablespoons water
1/4 cup bell pepper, any color, finely chopped
1/4 cup onion, finely chopped
1/2 teaspoon italian seasoning
1/2 cup mushroom, sliced
1/2 cup pizza sauce
5 slices pepperoni
1/4 cup mozzarella cheese, shredded
1 tablespoon parmesan cheese (optional)
1/4 cup sausage (optional)

Steps:

  • Beat eggs with water; season with salt and pepper. Set aside. Spray an 8-inch omelet pan or nonstick skillet with cooking spray. Heat skillet over medium heat.
  • In small saucepan, heat pizza sauce.
  • Add sausage to skillet. Cook until browned. Set aside.
  • Add pepper, onion, mushrooms, and seasoning to skillet. Cook, covered, over medium heat until peppers are soft, about 2 to 3 minutes.
  • Add cooked sausage to pepper mixture. Pour eggs over pepper mixture. (Eggs should set immediately at edges). With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. Reserving some sauce for topping, when top of omelet is thickened and no visible liquid egg remains, spoon hot sauce over half of the omelet. Top with pepperoni and mozzarella cheese. Slide from pan onto plate. Spoon on remaining sauce. Sprinkle with Parmesan.

2 tablespoons extra-virgin olive oil
1 medium onion, chopped (1 cup)
1 tomato chopped
1 large bunch Swiss chard, ends trimmed, stems thinly sliced, leaves cut into 1-inchs strips
Coarse salt
1/4 teaspoon black pepper
1 dozen eggs
1 teaspoon Sriracha
3-4 ounces cheddar, shredded (about 3/4 cup)

Steps:

  • Preheat the oven broiler.
  • Heat a 12-inch nonstick (oven-safe) over medium-high heat. Add 1 tablespoon olive oil.
  • Add onion to pan and season with salt. Saute onion for 2 minutes and add chopped tomato. Stir and cook 1 minute. Add Swiss chard and season with salt and pepper. Cook for 5 minutes. Remove to plate and return the pan to medium-high heat.
  • Add 1 tablespoon olive oil. Crack 1 dozen eggs into a bowl and add 1 teaspoon Sriracha. Whisk eggs together and pour into pan. Allow eggs to set a bit. Using a spatula, pull eggs away from sides of pan and allow raw egg to flow underneath. Cook until the eggs are almost fully set. Spread the chard over top. Sprinkle cheese on top and broil for minute, until cheese is melted and eggs are cooked through.

2 Tbsp pizza sauce or tomato sauce
1/4 c grated mozzarella cheese
1/4 c your favorite pizza toppings (such as pepperni, mushrooms, diced green peppers, etc)
1/2 tsp italian seasoning
1/2 tsp vegetable oil
salt and freshly ground black pepper, to taste

Steps:

  • 1. In bowl, beat together eggs, water, Italian seasoning, salt and pepper.
  • 2. In a medium-sized skillet, heat oil. Add egg mixture. As egg begins to set, use a spatula to gently lift edges to allow uncooked egg to flow onto skillet.
  • 3. When egg is almost set on the surface, spread pizza sauce over the top. Sprinkle with cheese; add toppings. Place lid on skillet and cook for 1 to 2 minutes -- until cheese melts.
  • 4. Slide onto serving plate.

Ideal for brunch or lunch or supper! It's diabetic friendly and gluten-free. It's not my recipe: I am saving it from a local S A Sunday Times supplement, Foodweekly (May 6, 2012). I tweaked the recipe a little. Prep and cooking times are a guess. I'd serve this with a cool, fresh green salad with a vinaigrette dressing, and maybe ciabatta ... (I added approx. American measurements where necessary).

12 eggs, extra-large
1 teaspoon dried herbs, Italian mix
3 tablespoons water
salt and pepper
1 tablespoon butter
1 tablespoon oil
100 ml tomato sauce, ready-made (the type used for pizzas and pasta, 1/3 cup)
125 ml bacon bits, crisply fried (4 oz, can use chopped bacon)
1/3 cup olive, black, pitted (more or less, to your taste)
1 cup mushroom, sliced
1/2 cup cheddar cheese, grated
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat your oven grill element.
  • Whisk the eggs with the herbs, water, salt and pepper. Do not over-mix.
  • Heat the butter and oil in a large nonstick pan, pour in the egg mixture, and cook until just set on the bottom. (Watch your hob heat).
  • Place the pan under the heated grill element, only until the eggs are lightly set on top. Remove the pan from the oven.
  • Spread with the tomato sauce, and sprinkle with the fried bacon, olives, mushrooms, cheddar and mozzarella.
  • Grill until the cheese melts. Cut into 6 wedges to serve.
  • PS: It might be a better idea to lightly fry the mushrooms with the bacon, instead of using them raw, as the recipe says. And please add seasonings to your taste. I haven't tried this recipe yet, but it looks like a very practical solution for a light, meat-free meal.

  • Line 15x10x1-inch pan with parchment paper, with ends extending over shortest sides of pan. Spray with cooking spray.
