By cooking in the cast iron, the potatoes are tender and sweet with little crispy edges. If you want to get real fancy, sprinkle with some chopped pecans.

4 to 6 sweet potatoes, peeled and sliced
2 c sugar
1 stick butter (1/2 cup)
1/2 to 1 tsp nutmeg (nutmeg is strong and you don't really need a lot)
1 tsp cinnamon
pinch salt

Steps:

  • 1. In a large (cast iron) skillet, melt butter over medium heat.
  • 2. Add sliced potatoes to butter and toss to coat.
  • 3. Mix sugar, nutmeg, cinnamon, and salt in a bowl.
  • 4. Add to potatoes. Toss to coat.
  • 5. Reduce heat to low and simmer for about 1 hour (covered), stirring occasionally until potatoes are fork-tender.

6 large sweet potatoes
½ cup butter
2 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon vanilla extract
salt to taste

Steps:

  • Peel the sweet potatoes and cut them into slices.
  • Melt the butter in a heavy skillet and add the sliced sweet potatoes.
  • Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve hot.

This is the classic sweet potato recipe that my grandmother serves each year for Thanksgiving and Christmas. It's very simple, yet each time I make it people rave and ask for the recipe. Embarrassingly simple & quite delicious!

6 yellow-fleshed sweet potatoes
½ cup butter
1 cup packed brown sugar
½ cup water
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place whole sweet potatoes in a steamer over a couple of inches of boiling water, and cover. Cook until tender, about 30 minutes. Drain and cool.
  • Peel, and slice sweet potatoes lengthwise into 1/2 inch slices. Place in a 9x13 inch baking dish.
  • In a small saucepan over medium heat, melt butter, brown sugar, water and salt. When the sauce is bubbly and sugar is dissolved, pour over potatoes.
  • Bake in preheated oven for 1 hour, occasionally basting the sweet potatoes with the brown sugar sauce.

2 1/2 cups water
1 1/3 cups packed dark brown sugar
4 tablespoons butter

  • Combine all ingredients except sweet potatoes in 2 quart saucepan.
  • Bring to a boil stirring occasionally.
