Bread pudding is a delicious treat and an even better way to reduce food waste! For this bread pudding recipe, collect the heels and any extra slices of bread you have and freeze them. When you have enough to measure six cups (this is about six slices of bread), thaw the slices and start baking this warm and comforting bread pudding.

2 cups milk
1/4 cup butter
2 eggs, slightly beaten
1/2 cup sugar
1 teaspoon ground cinnamon or nutmeg
1/4 teaspoon salt
6 cups soft bread cubes (about 6 slices bread)
1/2 cup raisins, if desired
Whipping (heavy) cream, if desired

Steps:

  • Heat oven to 350°F. In 2-quart saucepan, heat milk and butter over medium heat until butter is melted and milk is hot.
  • In large bowl, mix eggs, sugar, cinnamon and salt. Stir in bread cubes and raisins. Stir in milk mixture. Pour into ungreased deep round pan.
  • Bake uncovered 40 to 45 minutes or until knife inserted 1 inch from edge comes out clean. Serve warm with whipping cream.

2 cups half-and-half
8 large eggs
1 ¼ cups white sugar
1 cup heavy cream
2 tablespoons raisins
½ teaspoon ground cinnamon
¼ teaspoon vanilla extract
1 loaf white bread, torn into large chunks
1 stick butter
½ cup confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 10x12-inch baking pan.
  • Combine half-and-half, eggs, sugar, heavy cream, raisins, cinnamon, and vanilla extract in a bowl; mix well.
  • Arrange bread pieces on the bottom of the prepared pan. Pour cream mixture over bread. Allow to soak 10 to 15 minutes.
  • Place the baking pan into a larger pan; fill the larger pan with water halfway up the sides of the smaller pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, 60 to 75 minutes.
  • Meanwhile, melt butter in a small skillet over low heat. Pour into a small bowl; add confectioners' sugar and mix well.
  • Remove bread pudding from the oven. Poke holes throughout using a butter knife. Pour butter sauce over the top.

6 c bread cubes (soft)
3/4 c raisins
1 tsp cinnamon
1 tsp nutmeg
3 large eggs
3/4 c sugar
3 c milk
1/4 c butter

Steps:

  • 1. Spray a 9 x 9 inch pan with Pam.
  • 2. Place soft bread cubes in pan. Sprinkle with raisins.
  • 3. Sprinkle cinnamon and nutmeg over bread and raisins in pan.
  • 4. Meanwhile, scald milk and butter.
  • 5. Blend sugar and eggs with whisk. Pour over bread.
  • 6. When milk mixture is done, carefully pour over bread. Gently mix.
  • 7. Bake in 350° oven for 35 - 45 minutes.

2 cups boiling water
¼ cup butter
8 cups cubed day-old bread
5 eggs
½ cup white sugar
1 teaspoon ground cinnamon

2 cups chopped rhubarb

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Stir together the condensed milk, boiling water, and butter in a saucepan over medium heat, and heat until the butter has melted. Place the bread cubes in a large bowl, and pour the milk mixture over the bread cubes. Let the bread sit to soak up the liquid; do not stir.

2 cups milk
1/4 cup butter
4 cups white bread
1/2 cup sugar
2 eggs
1/4 teaspoon salt

1/2 cup seedless raisin (optional)
1 cup butter, soft (not margarine)
2 cups powdered sugar
1 teaspoon vanilla or 1 teaspoon rum flavoring

Steps:

  • Heat oven to 350°F.
  • Scald milk with butter; set aside to cool.
  • In a large bowl place torn bread pieces, sprinkle with as much cinnamon as you like. Sprinkle 1/2 cup sugar, 1/4 tsp salt and 2 eggs (slightly beaten) over cinnamon sugar bread pieces. Mix gently.
  • Pour cooled scalded milk and butter over the bread mixture and add any optional items before pouring into greased loaf pan. Mixture should fill the bread pan.
  • Place the loaf pan in a large baking pan and fill with 1" of water (called a water bath).
  • Bread pudding is done when a knife inserted in center comes out clean. Oven temps may vary and so would the baking time.

2 cups whole milk
2 cups heavy cream
6 ounces fine quality bittersweet chocolate, roughly chopped

Steps:

  • Preheat oven to 375°F
  • Begin by buttering 12 small ramekins and dusting with granulated sugar.
  • Bread Pudding:
  • Heat the milk and cream in a saucepan over medium heat until steamy (DO NOT BOIL).
  • Turn off the heat and add the chocolate, salt, vanilla, nutmeg, cinnamon, walnuts and Kahlùa. Stir to mix.
  • Whisk the egg yolks in a bowl with the 1/2 cup sugar. Pour into the chocolate mixture. Gently fold in the bread cubes.
  • Transfer the pudding mixture to the ramekins (DO NOT OVER FILL - Fill just to the top) and place on a baking sheet.

4-5 c stale bread, cut in cubes
3 c warm milk
1/4 tsp salt
3 eggs
1/2 c sugar
1 tsp rum, brandy, or vanilla flavoring
1/2 tsp ground nutmeg
1 Tbsp lemon juice
1/4 c raisins
1/4 c chopped nuts
HARD SAUCE
4 Tbsp butter, softened
1 1/4 c confectioners' sugar
1/8 tsp salt
1 tsp rum, brandy, or vanilla flavoring
1/4 c (or more) light cream

Steps:

  • 1. In a large bowl, soak the diced bread in the warm milk and 1/4 tsp. salt for 10-15 minutes. Preheat oven to 350°. Place a large pan of hot water on the middle rack while preheating.
  • 2. Beat together the eggs, sugar, rum or brandy, nutmeg, lemon juice, raisins, and nuts. Pour this mixture over the soaked bread and stir lightly to combine. Turn the mixture into a greased 2-3 quart casserole dish. Place the dish into the pan of hot water and bake about 45 minutes. When done, remove from the hot water and allow to cool slightly before serving.
  • 3. TO MAKE HARD SAUCE: Beat the confectioners' sugar gradually into the softened butter until blended and fluffy. Beat in the salt and the rum or brandy. Add cream 2 tablespoons at a time and blend well until very smooth. Chill while pudding is baking. Serve over the warm bread pudding.

8 ounces crushed pineapple
1 large apple, grated
1 cup raisins
1 1/2 cups sugar

1 loaf stale po' boy bread or 5 cups cubed stale white bread

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, break bread and moisten with evaporated milk and water. Pour eggs over mixture and mix well. Add pineapple, apple, raisins, sugar, and vanilla and mix well. 2/3 c granulated sugar
2 tsp flour
4 large eggs
1 tsp vanilla extract
4 c whole milk
5 c bread cubes (or equivalent amount of apple fritters)
2 Tbsp raisins (optional) (or 1 cup chopped apple if using apple fritters instead of bread)
3 Tbsp butter (or margarine)
1 tsp cinnamon, ground

Steps:

  • 1. Heat oven to 350 degrees F. Spray a 3-4 quart glass baking dish with cooking spray. Set aside. Have at the ready: a 9X13-inch baking pan with about 2" on water in it. You will need this to bake the bread pudding in a water bath.
  • 2. In a large bowl, mix the sugar and flour. Add the eggs and beat well (by hand).
  • 3. Add the vanilla and milk and mix well. Add the bread cubes and raisins Mix well. Let set for about 10-15 minutes until bread has absorbed some of the liquid.
  • 4. Pour into prepared baking dish. Dot with butter and sprinkle evenly with cinnamon.
  • 5. Place in baking pan (with water on the bottom) and place in heated oven.
  • 6. Bake for 60-70 minutes or until bread pudding is browned and firm.
  • 7. Cool slightly before serving. Serve garnished with whipped cream if desired. Store leftovers in refrigerator.
  • 8. BE VERY CAREFUL WHEN TAKING OUT OF THE OVEN AS THE WATER IN THE BAKING PAN IS EXTREMELY HOT!!!!
  • 9. HINT: you can use as much bread cubes as you want with this recipe. If you like your bread pudding dense, just add more bread cubes. But you may have to bake it longer so it sets up. If you do this, just keep and eye on it.... check every 5-10 minutes. I've already baked it for WELL over an hour.

1 c half and half
2 eggs
1 c suguar
1 Tbsp vanilla extract
1/2 c raisins
2 Tbsp unsalted butter, melted
1/2 lb loaf of french bread (1 whole medium or 3/4ths an extra long loaf)

Steps:

  • 1. Preheat oven to 350 degrees. Whisk together the milk and half and half. Tear the French bread into small pieces and put into a large container for soaking. Pour the milk mixture all over the top. Let sit for about 10 minutes. Stir.
  • 2. In a separate bowl, whisk the eggs with the sugar and vanilla until well blended. Add the raisins. Pour over the bread and gently mix. Put the melted butter into a 9 x 9 inch baking dish and coat the dish all along the sides and bottom. Spoon the bread pudding mixture into the dish.
  • 3. Bake at 350 degrees for 1 hour, or until bubbly on the sides, golden brown and set in the middle. Let cool for about 5 minutes before cutting into squares. Drizzle each serving with Whiskey Sauce.
  • 4. WHISKEY SAUCE: 1 stick of unsalted butter, 1/4 c. of suguare, 1/2 c. of milk, 1 tbsp of flour, 1/2 teaspoon of vanilla and a tablespoon of rum or rum flavoring or to taste (can omit). Melt butter in a saucepan and whisk all other ingredients in except the vanila and whiskey; bring to a boil. Reduce heat and simmer until thickened. Remove from heat, add vanilla and whiskey, whisk and drizzle over individual servings of the warm bread pudding.

1/4 cup milk

Steps:

  • 1. Preheat the oven to 350. Tear the crustless bread into bits and add to a large mixing bowl. Pour the water over the bread and let sit for 30 minutes. 2. Squeeze the excess water out of the bread and place in a large buttered baking dish. In a small saucepan, melt the butter, add the sugar, cinnamon, orange peel and raisins and stir for one minute. Let cool. 3. Meanwhile, combine the egg and milk and pour over the bread. Pour the butter mixture on top. Stir to combine. Bake in the oven for about 45 minutes, until the mixture is set and the bread is a golden brown. Serve with vanilla custard (Bird's), vanilla ice cream, or heavy cream.

1/2 c water
2 Tbsp butter
1/2 c cream
1 tsp vanilla

Steps:

  • 1. MIX SUGAR AND FLOUR IN SAUCE PAN.ADD WATER AND BLEND WELL;THEN ADD BUTTER.
  • 2. COOK OVER LOW HEAT UNTIL THICK, STIRRING FREQUENTLY.ADD ENOUGH CREAM TO THIN TO DESIRED CONSISTENCY, STIR IN VANILLA
  • 3. SERVE WARM OVER BREAD PUDDING.

This recipe is for terrific "old fashioned bread pudding" - I use "Tender Touch" brand soft bread stuffing cubes (in fact, I think this is the recipe off the back of their bag), but it can also be made with any type of bread, cinnamon buns, raisin bread, French bread, etc... this goes great on any Holiday table.. enjoy!

4 cups bread cubes (Tender Touch Brand bread stuffing cubes)
1/4 cup butter, melted
1/2 cup sugar
2 eggs, slightly beaten
1/4 teaspoon salt

Steps:

  • Heat milk to scalding (bubbles form around edge of pan).
  • Pour milk over bread cubes in large bowl. Cool and add remaining ingredients. Pour into buttered 1 ½ quart casserole dish.
  • Bake at 350º for 40-45 minute.

1/2 cup raisins
2 cups milk
1/4 cup butter
1/2 cup sugar
2 eggs, slightly beaten
1 tablespoon vanilla
1/2 teaspoon ground nutmeg
SAUCE:
1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup heavy whipping cream
1 tablespoon vanilla

Steps:

  • PUDDING: Heat oven to 350°F. Combine bread and raisins in large bowl. Combine milk and 1/4 cup butter in 1-quart saucepan. Cook over medium heat until butter is melted, about 4 to 7 minutes. Pour milk mixture over bread; let stand 10 minutes. Stir in all remaining pudding ingredients. Pour into greased 1 1/2-quart casserole. Bake for 40 to 50 minutes or until set in center. SAUCE: Combine all sauce ingredients except vanilla in 1-quart saucepan. Cook over medium heat, stirring occasionally until mixture thickens and comes to a full boil, about 5 to 8 minutes. Stir in vanilla. To serve, spoon warm pudding into individual dessert dishes; serve with sauce. Store any leftovers in the refrigerator.
